TATER TOT AND BRATWURST CASSEROLE
Tater Tot and Bratwurst Casserole is the combination of sauerkraut, bratwurst, and crispy tater tots fused together with a creamy cheese sauce, then piled high with more melted cheese on top. recipe adapted from Taste of Home Magazine {Tailgating edition (2013)}

- In a large saucepan combine the chicken broth and bratwursts, bring to a boil. Reduce heat, cover, and simmer for 10-12 minutes, or until the bratwursts are cooked through. Drain and discard chicken broth. Place brats on a cutting board and cut into 1/4 inch pieces.
- Pre-heat oven to 450 degrees F.
- Place the saucepan back on the stove and brown the bratwursts in the butter over medium-high heat. Drain on paper towels.
- Spoon the drained sauerkraut into a greased 9x13" casserole dish. Top with the bratwursts.
- In a bowl, whisk together the cheddar cheese soup and milk until smooth. Pour over the brats.
- Top with the tater tots. Bake for 20-25 minutes or until the potatoes are lightly browned and crisp.
- Sprinkle with the cheese and onions, bake for an additional 5 minutes or until the cheese is melted. Enjoy!

- Line up the tater tots in a buttered 9-by-13-inch baking dish.
- Add the olive oil to a large skillet over medium heat. Add the sausage and onion and cook, breaking the sausage up with a wooden spoon, until browned and cooked through, 8 to 10 minutes. Set aside to cool slightly, then sprinkle it over the tater tots.
- In a large bowl, mix the milk, half-and-half, seasoned salt, cayenne, eggs, bell peppers, half of both cheeses and some salt and pepper. Pour over the tots and sausage mixture, then top with the rest of the cheese. Cover with foil and refrigerate overnight.
- Preheat the oven to 350 degrees F.
- Bake, covered, for about 25 minutes. Remove the foil and continue to bake until the cheese is brown and bubbly and the casserole is cooked through, another 20 to 35 minutes. Cut into squares and serve.

- Spread the sausage, bacon, or ham evenly in the bottom of a 9x13 inch pan. Spread cheese over meat. I use 4 cups of cheese, but you can use less if you prefer to reduce the calories.
- In large bowl, beat together milk and eggs. Pour over cheese. (May be refrigerated overnight at this point).
- Top with frozen tater tots.
- Bake in preheated oven for 45 minutes. Some ovens may take more or less time. Cool for 5 to 10 minutes before serving.

I came up with this rendition of tater tot casserole one day when I didn't have any ground beef. My kids request this one a LOT! I've also used Recipe #278160 for the soup as well. :)

- Add soup and stir.
- Put soup mixture on bottom of 9x9 pan.
- Place tater tots on top. I like to cover it fairly well.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a 2-quart baking dish with cooking spray.
- Heat a large skillet over medium-high heat. Cook and stir sausage and onion in the hot skillet until sausage is browned and crumbly, 5 to 7 minutes. Drain and cool.
- Meanwhile, whisk milk, eggs, onion powder, salt, garlic powder, and pepper together in a bowl.
- Spread sausage mixture over the bottom of the prepared baking dish. Pour egg mixture over the top. Layer with 1/2 of the Cheddar cheese and all of the potato nuggets. Cover with aluminum foil.
