A warming winter treat, this spicy turkey soup is a great use of Christmas leftovers - happy Boxing Day!

1 tbsp olive oil
1 large onion, halved and sliced into thin strips
1 red pepper, seeded and sliced into thin strips
2 tsp ground coriander
¼ - ½ tsp chilli flakes
3 tbsp basmati rice or long grain rice
1½ l hot turkey or chicken stock
250g/9oz turkey meat, cut into thin strips (leg meat will have the most flavour)
410g can chickpea, drained and rinsed
a handful of fresh coriander or flatleaf parsley, roughly chopped (optional)

Steps:

  • Heat the oil in a large pan, add the onion and fry for 5 minutes or so, stirring every now and then until it starts to soften.
  • To make the soup, add the red pepper, ground coriander, chilli and rice and stir round the pan for about a minute. Pour in the hot stock, stir in the turkey and chickpeas and season well. Bring to the boil, cover and simmer for 8-10 minutes, until the vegetables and rice are tender. Stir in the coriander or parsley and it's ready. (The soup may now be cooled and frozen for up to 1 month.)

Turn the day after the big meal into a turkey soup-making day, when you can spend a few hours gently simmering a meaty broth and savory vegetables. The result will be a homemade creation that might soon become your black Friday tradition.

Carcass from cooked 10- to 12-lb turkey
3 quarts (12 cups) water
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon poultry seasoning or dried sage leaves
1 dried bay leaf
1/2 cup uncooked pearl barley
3 medium carrots, sliced (1 1/2 cups)
1 cup chopped onions
2 medium stalks celery, sliced (1 cup)
3 cups cut-up cooked turkey
2 tablespoons chopped fresh parsley leaves, if desired

Steps:

  • Break up turkey carcass to fit 6-quart Dutch oven. Add water, salt, pepper, poultry seasoning and bay leaf. Heat to boiling over high heat; reduce heat to low. Cover; simmer 1 hour 30 minutes.
  • Skim off any residue that rises to the surface. Remove bones, meat and bay leaf from broth; cool. When cool enough to handle, remove meat from bones, and cut into bite-size pieces; reserve. Discard bones and bay leaf.
  • Skim fat from broth; discard. Stir in barley. Heat to boiling; reduce heat to low. Cover; simmer 30 minutes, stirring occasionally.
  • Stir in carrots, onions, celery, 3 cups cooked turkey and reserved turkey cut from bones. Simmer uncovered 20 to 25 minutes, stirring occasionally, until vegetables and barley are tender. Stir in parsley.

2 onions, chopped
1 stalk celery, cut into 1 inch pieces
2 carrots, peeled and sliced into 1 inch pieces
2 potatoes, peeled and cubed
3 tablespoons all-purpose flour

¼ teaspoon dried marjoram
2 skinless, boneless turkey breast halves, cubed
1 green bell pepper, diced

Steps:

  • Melt the butter in a pot over medium heat. Place onions in the pot and cook until tender. Stir in celery and carrots, and cook until tender. Stir in the potatoes and flour. Pour in the chicken stock, and season soup with marjoram. Place turkey in the pot, and bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.
  • Mix the green bell pepper into the soup, and continue cooking 10 minutes, until pepper is tender.

1 leftover turkey carcass (from a 14-pound turkey)
3 quarts water
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1/2 cup uncooked long grain rice
1 medium onion, finely chopped
4 celery ribs, finely chopped
2 medium carrots, grated
1 bay leaf
Dash poultry seasoning
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon pepper
Salt, optional

Steps:

  • In a stockpot, place turkey carcass, water and broth. Bring to a boil. Reduce heat; cover and simmer 4-5 hours. , Remove carcass from stock. Remove any meat; dice. Return to stock along with rice, onion, celery, carrots, bay leaf and poultry seasoning. Add remaining seasonings to taste. Cover; simmer over medium-low heat until rice is cooked. Discard bay leaf.

  • In a large saucepan, saute celery and onion in butter until tender. Discard seasoning packet from ramen noodles or save for another use. , Stir the noodles, water, soup, broth, turkey and pepper into celery mixture. Cook for 3 minutes or until noodles are tender and heated through.

I created this bean soup using part of another recipe but I added a few spices in varying amounts with smoked turkey wings for an awesome flavor enhancer. It is a bit spicy but it is really high in fiber and protein, while being low in fat and sodium. I prepared this recipe in a crockpot but it could be cooked on the stovetop as well. Cook times may vary but I let mine cook for a total of 10 hours, which is why I recommend the crockpot.

1 (16 ounce) package 15 bean soup mix (discard the flavor packet)
4 cups chicken stock or 4 cups vegetable stock
2 smoked turkey legs
3 tablespoons extra virgin olive oil
2 large onions, chopped (I used yellow)
10 garlic cloves, peeled and smashed
2 large carrots, chopped
2 celery ribs, chopped
1/2 teaspoon clove
15 peppercorns
3 bay leaves
1/2 teaspoon coriander
1/2 teaspoon ground cumin
1/4 teaspoon red pepper flakes (or more to taste)
1/4 teaspoon cayenne (or more to taste)
1/2 teaspoon paprika

Steps:

  • Soak beans overnight in about 3 quarts of water. Drain and either set aside or if you are using a crockpot put on the lowest setting and add chicken stock with the beans.
  • Heat olive oil in a large pan. Score smoked turkey legs or thighs and place in hot pan. Allow the turkey to heat and release flavor into the oil while prepping the other ingredients.
  • Remove turkey from the pan and place into crockpot or set aside.
  • Put onions, garlic, carrots, and celery in pan and cook until just tender.
  • Add all spices and allow to cook for 3-5 minutes to allow dry spices to open up.
  • Add vegetable mixture into crockpot or put the turkey, beans, and stock into the large pan. If you are using a pan bring to a boil then reduce to a simmer and allow to cook for as long you can stand! (The smell is so good you will not be able to resist tasting) I recommend at least 4-6 hours.

I found the base of this recipe from AllRecipes but have made this so many times and tweaked it so many times that it's not truly the original anymore. This is my absolutely FAVORITE way to use up some leftover turkey meat. Don't throw away that turkey carcass! It's imperative here. I don't think I would bother making this soup without the turkey carcass step because I feel it adds an incredible amount of flavor. I also like to add a few diced potatoes sometimes. I hope you like this as much as we do! My 2 and 4 year old LOVE it!

1 turkey carcass
2 bay leaves
3 medium onions, chopped
2 large carrots, diced
2 celery ribs, diced

  • In a soup kettle or Dutch oven, saute the onions, carrots, garlic, and celery in butter until tender. Reduce heat; stir in flour until blended. Gradually add 1 quart of reserved broth. Bring to a boil; cook and stir for 2 minutes or until thickened.
  • Add cream, rice, salt, bouillon, pepper, potatoes (if using), remaining broth and reserved turkey. Reduce heat; cover and simmer for 30-35 minutes or until rice is tender.

1 teaspoon dried, crushed rosemary
2 tablespoons apple cider vinegar
4 sticks celery
1 yellow onion
5 garlic cloves
2 large potatoes
1-2 cups cubed squash or sweet potato
4 large carrots, grated
1 cup frozen green peas

Steps:

  • Place turkey carcass in a stock pot, crock pot, insta-pot, or large stew pot. Add enough water to cover the turkey, and add the rosemary, sage, and apple cider vinegar. Cook on low for 2 hours.
  • Let cool to handling temperature.
  • Remove carcass from the stock pot and strip off remaining meat. Return meat to stock pot, and discard bones.
  • Add celery, garlic, and onions. Return soup to a simmer.
  • Optional: Add leftover gravy to add flavor to the broth.
  • Add potato and sweet potato and cook until they start to soften.
  • Add grated carrots and frozen green peas.
  • Bring soup back to a simmer. Add salt and pepper to taste, serve hot.
