Fresh Tuna BLT

Steps:
- Preheat a large skillet over medium-high heat with 1 turn of the pan EVOO, about 1 tablespoon
- Add the bacon and cook until crisp on both sides
- Remove from the skillet to a paper towel-lined plate to drain
- Break the bacon slices in half and reserve
- Let the skillet cool a bit and wipe it out with a paper towel for the tuna
- Place the avocados in a bowl along with the lime juice and some salt and pepper, smash until some what smooth with a fork, reserve
- Toast the bread slices under the broiler but keep an eye on it so it doesn't burn! Preheat the skillet over medium-high heat
- Sprinkle the thin tuna steaks with the chipotle powder, drizzle a little EVOO over them and transfer to the skillet
- Cook on each side for 2-3 minutes or until it reaches desired doneness
- To assemble the sandwich, spread the avocado mash on a slice of bread
- Top with a slice of tuna, 2 half-pieces of crispy bacon in an X, some lettuce, a slice of tomato, another piece of tuna, 2 more half-pieces of bacon, more lettuce and another slice of tomato
- Slather the last piece of bread with a little more of the avocado mixture and place it on top of the sandwich
- Place a toothpick in each of the 4 corners of the sandwich then cut the bread into 4 triangles -- the toothpicks will help hold it together
- Serve with chips alongside

- Preheat the oven to 350°F (180°C).
- Cut the English muffins in half and place on a baking sheet.
- Arrange the bacon strips on a separate baking sheet.
- Bake the bacon until browned and crispy, 12-15 minutes. Add the English muffins to the oven for the last 5 minutes of cooking, or until toasted. Remove from the oven.
- Grease 6 cups of a muffin tin with nonstick spray. One at a time, crack the eggs into each greased cup. Season the eggs with a pinch of salt and pepper. Gently spoon 1 tablespoon of water over each egg.
- Bake until the egg whites are set and the yolks are still runny, 7-9 minutes. Remove from the oven and let sit for 1-2 minutes, then scoop out the eggs with a slotted spoon and gently pat dry with a paper towel.
- Arrange the English muffins on a serving platter and brush with the melted butter. Top each muffin half with mixed greens and a slice of tomato. Break each bacon strip in half and lay over the tomatoes, then top with a poached egg.
- Make the hollandaise: Add the eggs yolks and lemon juice to a blender. Blend until pale yellow in color, about 1 minute.
- Once the yolks have lightened in color, turn the blender to the lowest speed and slowly drizzle in the melted butter. 10. Add the salt and continue blending until the butter is well incorporated.
- Drizzle the hollandaise over the benedicts. Garnish with black pepper.
- Serve immediately.

- Preheat the oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper.

- Preheat the oven to 475 degrees F.
- Place the bacon in a cold medium skillet over a burner, then turn the heat to medium. Cook, stirring occasionally, until the bacon is golden brown and crispy, 6 to 8 minutes. Remove with a slotted spoon to a paper towel-lined plate.
- Spread 1/2 cup of the mayo on both sides of all the bread slices. Season with a pinch of salt. Place the sliced bread on a sheet tray and bake for 3 minutes. Flip the bread. Bake until light golden brown, 2 to 4 minutes. Remove from the oven and keep the oven on.
- Mix the remaining 1/2 cup mayo with the Dijon mustard, dill, tuna, 3/4 teaspoon salt and a few cracks of pepper in a medium bowl with a fork until creamy. Add the apple and bacon bits and stir until well combined.
- To assemble the sandwiches, keep 4 of the toasted bread slices on the sheet tray. Divide the tuna salad among them and spread into an even layer. Top each with 1 of the lettuce pieces, 2 of the tomato slices and 1 slice of the provolone. Bake until the cheese has melted, 1 to 2 minutes. Top each tuna melt with 1 of the remaining toasted bread slices and serve.
TASTY TUNA MELT, NO MAYO
This tuna melt tastes incredibly rich and uses no mayo. It's a versatile recipe too. You can change the type of bread or cheese, spice it up or down, or even switch it to salmon instead of tuna, and it always comes out great. The lime juice "pre cooks" the tuna and makes it seem creamier, so you don't need any mayonnaise. It makes 4 sandwiches if your bread slices are small, but only 2 or 3 larger sandwiches if you use big slices of bread.

- Lightly toast the bread slices in a toaster.
- Combine the onions, parsley, and tuna in mixing bowl. You can add hot sauce or other spices if you want to jazz it up.
- Add the lime juice to the bowl and mix it all up with a fork. You can substitute lemon juice for lime juice if needed.
- Place the bread on a baking sheet. Cover each slice with the tuna mixture.
- Cut the cheese into slices and then cover each sandwich with a thin layer of cheese.
- Place the sandwiches under the broiler for 3 to 4 minutes, or until the cheese is melted and bubbling a bit.
- (Optional) You can also add a fresh slice of tomato or avocado to each sandwich and then broil for 1 or 2 more minutes. (If you broil much longer than that the tomato or avocado can get mushy).
- (Optional) If you like a firmer sandwich, melt a tablespoon of butter in a skillet and then transfer the cooked sandwiches to the skillet. Cook on medium heat for about 2 minutes, until the bottom of the bread is buttery and firm.
- Serve them while they're hot.
