Moist Apple Carrot Muffins with Oatmeal. An easy and healthy recipe with no sugar! Wonderful flavor and texture. Perfect for toddlers and adults too!

1/2 cup golden raisins (, walnuts, pecans, dried cranberries, or mix-ins of choice)
1/4 cup coconut oil
1 1/4 cups white whole wheat flour
1 cup old-fashioned oats
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon kosher salt
3/4 cup grated carrot (about 1 large carrot)
3/4 cup grated apple (1 small apple will be more than enough; no need to peel it first)
2 large eggs (at room temperature)
1/2 cup plain nonfat Greek yogurt (at room temperature)
1/3 cup honey or maple syrup (honey is my favorite)
2 teaspoons pure vanilla extract
3/4 cup powdered sugar
1 tablespoon honey (my favorite or maple syrup (also yummy))
1/2 tablespoon unsweetened almondmilk (nonfat milk, or milk of choice)

Steps:

  • Heat your oven to 350 degrees F. Line 12 baking cups with paper liners or lightly coat with nonstick spray. Set aside. If using nuts for the mix-ins, toast them in the oven now: Spread the nuts into an even layer on an ungreased baking sheet. Bake at 350 degrees F for 8 to 12 minutes (for pecan or walnut halves), until they are lightly browned and fragrant. Transfer the nuts immediately to a cutting board; roughly chop and set aside.
  • Place the coconut oil in a medium microwave-safe bowl. Heat in the microwave just until melted (about 30 seconds on high). Set aside to cool to room temperature.
  • In a large mixing bowl, whisk together the flour, oats, baking powder, baking soda, cinnamon, ginger, and salt. Add the grated carrot and apple and fold to combine.
  • To the bowl with the coconut oil, add the eggs, Greek yogurt, honey, and vanilla. Whisk until smooth. If the coconut oil resolidifies, warm it in the microwave in 15-second bursts, and stop as soon as you can stir the mixture back together. Add the wet ingredients to the dry ingredients, and stir gently until just combined. Do not overmix. Fold in the nuts or any other mix-ins.
  • Divide the batter evenly among the 12 muffin cups. Bake for 18 to 22 minutes, or until a toothpick inserted in the center of a muffin comes out clean. Place the pan on a wire rack and let the muffins cool in the pan for 4 minutes. Gently transfer the muffins to the rack to finish cooling completely.
  • For the icing: Whisk together the powdered sugar, honey, and 1 teaspoon milk. Continue to add milk, 1 teaspoon at a time, until your desired consistency is reached. Drizzle over the top of the cooled muffins.

1 banana
1 egg
1 teaspoon vanilla extract
½ cup almond milk
¼ cup maple syrup
½ cup greek yogurt
1 ½ cups rolled oats
1 teaspoon baking powder
1 teaspoon cinnamon
salt, to taste
strawberry, sliced
blueberry
apple, sliced
dark chocolate chip
nut, chopped
½ cup dried cranberry

Steps:

  • Preheat oven to 350˚F (180˚C).
  • Mash banana in a large bowl until smooth and mix in all wet ingredients. Stir in dry ingredients until thoroughly mixed.
  • Pour batter into greased muffin tin, filling each tin about ⅔ full.
  • Top each muffin with toppings.
  • Bake for about 30 minutes or until a toothpick comes out clean.
  • Enjoy!

⅓ cup brown sugar
¼ cup white sugar
4 tablespoons softened butter
⅛ teaspoon salt
1 teaspoon vanilla extract
¼ cup milk
⅔ cup flour
¼ tablespoon baking powder
¼ tablespoon baking soda
1 ⅓ cups oats
1 banana, mashed
1 teaspoon cinnamon
2 tablespoons honey

Steps:

  • Preheat the oven to 350°F and grease mini muffin tins.
  • Cream sugar and butter together. Then, add salt and mix on low speed until combined.
  • Add milk, vanilla and honey to your mixture.
  • In a separate bowl, sift together flour, baking soda and baking powder.
  • Combine dry ingredients with wet ingredients slowly until combined.
  • To this, add in oats, bananas, and cinnamon and mix to form a soft dough.
  • Distribute batter evenly amongst your muffin tins and bake for 15-20 minutes until the toothpick comes out clean.
  • Serve hot and enjoy.

1 1/4 cup flour (I used wholemeal but you can use plain)
3/4 cup rolled oats - not quick oats (or Oat Bran)
1 teaspoon baking powder
1 1/2 teaspoons baking soda
1/4 cup brown sugar
1/4 cup white sugar
1/4 cup vegetable oil (I used canola)
1 teaspoon vanilla
2 eggs
1/2 cup milk (can use soy, low fat, full fat etc)
1/2 cup grated carrot (half a large carrot)
1/2 cup grated apple (approx. 2 apples)
2 mashed bananas (use your brown or frozen bananas here!)

Steps:

  • Preheat Oven to 200C (400F)
  • Prepare muffin tray with cooking spray, being careful to completely coat inside of muffin cups, or alternatively use cupcake cases.
  • Combine the dry ingredients in a bowl, Flour, Oats, Baking Powder & Baking Soda and set aside.
  • In a large bowl or food mixer blend the oil, brown and white sugar together until well combined.
  • Add eggs, vanilla and milk and whisk well until completely blended - 2 minutes
  • Add the dry ingredients to the wet until just combined.
  • Grate the carrot & apple and mash your banana in a bowl.
  • Add the carrot, apple & banana and combine all ingredients until they are well combined.
  • This is a really wet mix so carefully ladle filling into the muffin tray, filling almost to the top of the cup.
  • Bake for 13-15 minutes, checking that they bounce back to a light touch and they are ready.
  • Remove from the oven and cool for 2 minutes before carefully transferring the muffins to a wire rack until completely cooled.
  • Store in an airtight container for 4 days or freeze in container or ziplock bags.

  • Add the dry mixture to the wet mixture until well combined.
  • Add vegetable/fruits to mixture.
  • Bake at 400°F for 18 minutes or until dry in the middle.
