4 cups all-purpose flour
2 cups sugar
1/2 teaspoon salt
1-1/2 cups cold butter, cubed
FILLING:
8 cups sliced peeled zucchini
2/3 cup lemon juice
1 cup sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup chopped walnuts
1/2 cup golden raisins

Steps:

  • In a large bowl, combine the flour, sugar and salt. Cut in butter until mixture resembles coarse crumbs. Press half of the crumb mixture into a greased 15x10x1-in. baking pan. Bake at 375° for 10-12 minutes or until lightly browned. Set remaining crumb mixture aside., Meanwhile, in a large saucepan, bring zucchini and lemon juice to a boil. Reduce heat; cover and simmer for 5-6 minutes or until tender. Drain. Stir in the sugar, cinnamon, nutmeg and 1/2 cup reserved crumb mixture. Cook and stir for 2-3 minutes. Stir in walnuts and raisins. , Spread filling evenly over crust. Sprinkle with remaining crumb mixture. Bake for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into squares.

1 teaspoon salt
1 cup shortening, plus
2 tablespoons shortening
2/3 cup sugar
1/2 teaspoon cinnamon
milk
1 egg yolk, beaten
1 egg white
1 cup sifted powdered sugar
1/2 teaspoon vanilla
1 cup crushed corn flakes
1 -2 tablespoon water
8 cups peeled sliced apples

Steps:

  • Preheat oven to 400°F.
  • Sift together flour and salt.
  • Cut in shortening until crumbly.
  • Add enough milk to the yolk to make 2/3 cup.
  • Add to flour, mix to blend.
  • Divide dough in two.
  • Roll 1 batch to fit a 15x10-inch pan.
  • Sprinkle with corn flakes.
  • Combine apple slices, 2/3 cup sugar and cinnamon.
  • Place evenly on crust.
  • Roll out other batch and place on top.
  • Pinch edges to seal.
  • Beat egg white until stiff and brush over crust.
  • Bake at 400°F for 50- 60 minutes.
  • While baking, mix remaining ingredients.
  • When done remove pie squares from oven--cool only slightly.
  • Frost with glaze while still warm.

1 teaspoon salt
1 cup cold butter, cubed
1 egg, separated
3 to 4 tablespoons 2% milk
1 cup crushed cornflakes
9 cups thinly sliced peeled tart apples (about 10 medium)
1 cup plus 2 tablespoons sugar, divided
2 teaspoons ground cinnamon, divided
1/2 teaspoon ground nutmeg
GLAZE:
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
1 to 2 tablespoons 2% milk

Steps:

  • In a large bowl, combine flour and salt; cut in butter until mixture resembles coarse crumbs. In a measuring cup, combine egg yolk and enough milk to measure 1/3 cup. Gradually add to the flour mixture, tossing with a fork until dough forms a ball. , Preheat oven to 350°. Divide dough in half. Roll one portion into a thin 15x10-in. rectangle. Transfer to the bottom of an ungreased 15x10x1-in. baking pan. Sprinkle with cornflakes. , In a large bowl, combine apples, 1 cup sugar, 1-1/2 teaspoons cinnamon and nutmeg; toss to coat. Spoon over crust. , Roll remaining dough into a thin 15x10-in. rectangle; place over apple filling. Beat egg white; brush over pastry. Combine remaining sugar and cinnamon; sprinkle over the top. 1 teaspoon salt
1 cup shortening
1 egg
2/3 cup milk (approximately)
2/3 cup corn flake crumbs
5 cups sliced pared apples
1 1/2 cups sugar
1 1/2 teaspoons cinnamon
1 egg white, lightly beaten
1 cup icing sugar
2 tablespoons lemon juice

Steps:

  • Preheat oven to 400°F Combine flour, sugar and salt.
  • Cut in shortening.
  • Put egg in a 1-cup measure.
  • Add enough of the milk to bring to the 2/3 cup level.
  • Stir together and add to the pastry mixture.
  • Stir to combine.
  • Shape into a ball.
  • Dought will be soft.
  • Divide in half.
  • On a floured pastry cloth, roll one piece of dough into a 10" X 12" rectangle.
  • Place on an ungreased cookie sheet.
  • Sprinkle with cornflake crumbs.
  • Spread with apples, sugar and cinnamon, leaving a bare border of dough of about 3/4".
  • On a floured pastry cloth, roll the remaining piece of dough into another 10" X 12" rectangle.
  • Place over the apple mixture on the other piece of dough.
  • Pinch edges firmly together to hold in the filling.
  • Brush top with egg white.
  • Bake at 400F for about 40 minutes, or until done.
  • Combine icing sugar and lemon juice.
  • Remove apple concoction from the oven.
  • While still hot, drizzle the glaze over all.
  • Cool slightly as we don't want burnt lips.
  • Cut into squares and serve warm.

1 tablespoon sugar
1 teaspoon salt
1 teaspoon baking soda
1 cup vegetable shortening (not oil)
2 eggs
2/3 cup milk (up to 2/3 cup)
1 1/2 cups crushed corn flakes
12 -14 apples (peeled, cored, and sliced)
1 1/2 cups sugar
2 teaspoons cinnamon
1 cup powdered sugar
2 teaspoons lemon juice

Steps:

  • Preheat oven to 350 degrees.
  • CRUST:.
  • In a large bowl, combine flour, sugar, salt, and baking soda.
  • Cut-in 1 cup vegetable shortening.
  • Separate the eggs.
  • Place egg yolks in a one cup measuring cup and add milk to the egg yolks until milk and egg yolks equal 2/3 cups.
  • Blend the egg mixture into flour mixture until it reaches a dough consistency.
  • Divide the dough in half.

  • Beat remaining egg whites until they appear semi-stiff.

  • In a small bowl, combine powdered sugar and lemon juice for glaze.
  • Blend until smooth.
  • Adjust consistency (add lemon juice if too dry; add powdered sugar if too runny).
  • Drizzle glaze over the top of the warm bars.
  • Bars can be served warm or cold, and they freeze well, too.

2 1/2 cups flour
1 teaspoon salt
1 cup shortening
1 large egg yolk, slightly beaten, plus (save white)
milk, to make 2/3 cup liquid
5 -6 apples, pared and sliced
1 cup white sugar
2 teaspoons cinnamon
1 cup icing sugar
1/2 teaspoon vanilla
1 tablespoon water

Steps:

  • Mix flour and salt and cut in shortening. Add egg and milk mixture and mix till it forms a ball. Divide dough in half. Roll first half in 17 x 12 inch rectangle. Place in cookie sheet and bring pastry up sides.
  • Cover pastry with apples and sprinkle with sugar and cinnamon (homemade chunky applesauce also works well).
  • Roll out second half of dough and place on top of apples. Moisten edges with milk and pinch together.
  • Beat egg white until stiff and brush on crust. Bake at 400°F for 1 hour.
  • Mix glaze ingredients together and brush on crust.
  • This square freezes beautifully.
