When planning to make ribs one day, I remembered that a friend had given me homemade plum jelly. I stirred some into the sauce for a pleasant fruity accent. -Ila Mae Alderman, Galax, Virginia

4 to 4-1/2 pounds bone-in country-style pork ribs
1 bottle (12 ounces) chili sauce
1 jar (12 to 13 ounces) plum preserves or preserves of your choice
1/4 cup soy sauce
1/4 teaspoon hot pepper sauce

Steps:

  • Place ribs in two ungreased 13x9-in. baking dishes. Bake, uncovered, at 350° for 45 minutes; drain. , In a small saucepan, combine the remaining ingredients. Bring to a boil, stirring occasionally. Remove from the heat. Set aside 3/4 cup sauce for serving., Brush ribs with some of the remaining sauce. Bake, uncovered, until ribs are tender, 30-45 minutes, turning and basting frequently with remaining sauce. Serve with reserved sauce.

5 to 6 pounds pork spareribs
3/4 cup reduced-sodium soy sauce
3/4 cup plum jam or apricot preserves
3/4 cup honey
2 to 3 garlic cloves, minced

Steps:

  • Cut ribs into serving-size pieces; place with bone side down on a rack in a shallow roasting pan. Cover and bake at 350° for 1 hour or until ribs are tender; drain. , In a small bowl, combine the remaining ingredients; brush some of the sauce over ribs. Bake at 350° or grill over medium heat, uncovered, 30 minutes longer, turning and basting occasionally.

2 pounds bone-in country-style pork ribs
1-3/4 teaspoons salt, divided
1/4 teaspoon pepper, divided
3/4 cup orange juice
2 tablespoons lemon juice
1/2 cup packed brown sugar
1-1/2 teaspoons garlic powder
1 teaspoon grated lemon zest
3/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1 bay leaf

Steps:

  • Place ribs on a rack in a foil-line shallow roasting pan; sprinkle with 3/4 teaspoon salt and 1/8 teaspoon pepper. Bake, uncovered, at 400° for 30 minutes. Turn ribs. Reduce temperature to 350°; bake 30 minutes longer., Meanwhile, in a saucepan, combine the orange juice, lemon juice, brown sugar, garlic powder, lemon zest, ginger, cloves, bay leaf and remaining salt and pepper; bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Discard bay leaf., Remove ribs from rack; drain drippings. Return ribs to pan; brush with sauce. Bake, uncovered, for 45-60 minutes or until tender, turning and basting often.

2 racks pork baby back ribs (about 5 pounds)
2 tablespoons olive oil
2 teaspoons salt
2 teaspoons pepper
1 bottle (18 ounces) barbecue sauce
1 cup seedless raspberry preserves
1/4 cup dry red wine
1/2 teaspoon onion powder
1/2 teaspoon cayenne pepper

Steps:

  • Preheat oven to 325°. Place ribs in a shallow roasting pan, bone side down. Brush oil over ribs; sprinkle with salt and pepper. Bake, covered, until tender, 1-1/2 to 2 hours; drain., Combine remaining ingredients, reserving 3/4 cup sauce. Brush some of remaining sauce over ribs. Bake, uncovered, 25-30 minutes or until ribs are glazed, brushing occasionally with additional sauce., Preheat broiler. Transfer ribs, bone side down, to a broiler pan. Broil 4-5 in. from heat until browned, 8-10 minutes. Serve with reserved sauce.

3/4 cup pineapple juice
1/2 cup canola oil
1/2 cup white wine
1/4 cup packed brown sugar
1 tablespoon Worcestershire sauce
6 garlic cloves, minced
1 teaspoon salt
1 teaspoon pepper
1 teaspoon dried rosemary, crushed
3 pounds boneless country-style pork ribs

Steps:

  • In a large bowl, combine the first nine ingredients; set aside 1/2 cup for basting. Pour remaining marinade into a large resealable plastic bag. Add the ribs; seal bag and turn to coat. Refrigerate for 8 hours or overnight, turning once. Cover and refrigerate remaining marinade., Drain and discard marinade. Grill ribs, covered, over indirect medium heat for 10 minutes on each side. Baste with some of the reserved marinade. Grill 20-25 minutes longer or until meat is tender, turning and basting occasionally.

Plum-Glazed Gingered Ham image

Tossed aside my plans for a traditional ham when I found this recipe on Christmas Eve. It was worth the last minute run to the grocery store, and will become our ham for the holidays recipe for years to come. Served with recipe Lemony Green Beans (#201257) to offset the sweet glaze and gravy from this ham. Since it was just the two of us this year, I opted for the small boneless ham, and halved the recipe and it was great, but I really do think we'll go for the bone-in ham in the future, as they tend to be a little less salty. Thanks to Taste of Home for this recipe.

2 (12 ounce) jars plum preserves
2 tablespoons lime juice
1 tablespoon lime zest
1 tablespoon Dijon mustard
2 tablespoons gingerroot, grated (or substitute refrigerated brand grated ginger)
3/4 teaspoon pepper
1 (5 -10 lb) ham, bone-in
2 tablespoons cornstarch, dissolved in water, for thickening

Steps:

  • Preheat oven to 325°F.
  • Glaze: Combine first 6 ingredients in a saucepan, and bring to a boil, stirring constantly.
  • Place ham on rack (or on celery ribs, if you don't have a rack that fits) in shallow pan (I used a covered cast-iron pot with celery ribs to keep the ham off the bottom).
  • Score surface of ham, making diamond pattern around the ham, about 1/2 inch deep.
  • Spoon half of glaze over the ham.
  • Cover and bake at 325°F for approximately 90 minutes.
  • Remove drippings from pan and bake an additional 30 minutes (or until temp reaches 140°F), uncovered, basting 1-2 times with remaining glaze.
  • Gravy: Skim fat from drippings, and combine with dissolved flour or cornstarch, stirring until thick and smooth.

  • Cover with foil, and bake for 1 hour, at 350 degrees.
  • Combine remaining ingredients and brush over ribs.
  • Bake uncovered for another 30 minutes, brushing occasionally with sauce.
  • These can also be made on the grill.
