CRANBERRY BARS
If you're from Wisconsin you have to love cranberries. This is one of my favorite bar recipes and it mixes up very fast and is sooo good.

Steps:
- This is good with a powder sugar glaze or lightly sifted powder sprinkled on top.
- Beat together eggs, butter, sugar and vanilla.
- Add flour and baking powder and mix well.
- Fold in nuts and cranberries.
- Mixture will be cookie-consistency. Spread into prepared 8x8 pan. (If using 9x12, you will need 1.5 times the recipe.).
- Bake@ 350 degrees 40-45 minutes (but start checking after 35).
EASY CRANBERRY FRANGIPANE TART
My first experience with a frangipane tart was at a Friendsgiving celebration; one bite and I had fallen in love. The nutty almond filling is rich and buttery and is a perfect foundation for tangy cranberries. Using a simple but delicious cookie crumb crust makes it a breeze to bake up.

- For the crust: Preheat the oven to 400 degrees F. Spray a 9-inch tart pan with removable bottom with baking spray and place on a sheet pan.
- Combine the cookie crumbs, flour, sugar and salt in a food processor or medium bowl and pulse or mix until combined. Add the butter and blend until moistened. The mixture should clump together in your hand; if it seems dry, mix in 1 teaspoon water until combined.
- Evenly press the crumbs into the bottom and up the sides of the tart pan. Bake until the center of the crust looks dry, about 12 minutes. Set aside on a wire rack to cool while you prepare the filling. Lower the oven temperature to 350 degrees F.
- For the filling: Beat the butter, granulated sugar, brown sugar and salt in a stand mixer fitted with the paddle attachment until smooth. Add the vanilla and almond extracts and beat a few seconds more. Add the eggs and yolk one at a time, beating well after each addition (don't worry if the mixture looks thin). Add the almond flour and all-purpose flour and mix on low until completely combined.
- Pour the frangipane into the warm crust and smooth it out towards the edges -- it's fine if it melts a little. Place the cranberry halves on top, pushing them in just slightly.
- Bake the tart at 350 degrees F until golden and set (not jiggly) and a toothpick inserted in the center comes out clean, 43 to 45 minutes. Let the tart cool completely on the rack before removing the outer ring and placing the tart on a platter. Dust the edges of the tart lightly with confectioners' sugar, then sprinkle the toasted almond slices around the edges of the tart.
CRANBERRY TART

- Crust: On a lightly floured work surface, roll pate brisee into a 13-inch round. With a dry pastry brush, sweep off excess flour; fit dough into a 10-inch round fluted tart pan with a removable bottom. Fold edges toward center to reinforce; press into sides of tart ring. Pierce bottom of tart shell all over with a fork. Cover with plastic wrap; freeze until firm, about 15 minutes.
- Preheat oven to 375 degrees. Uncover and line tart shell with parchment and fill with pie weights or dried beans. Bake until edges are set and golden, about 20 minutes. Remove weights and parchment and continue baking until bottom of crust is dry and golden, 15 to 20 minutes. Remove from oven and let cool completely on a wire rack.
- Filling: Place cold water in a small bowl. Sprinkle gelatin over water; let stand until softened, about 5 minutes. Combine cranberries, sugar, jelly, and cognac in a saucepan and cook over low heat 12 to 15 minutes. Do not overcook or the mixture will become too watery; cranberries should be soft but not bursting. Remove from heat and let cool slightly. Stir in gelatin and let cool completely.
- Pour cranberry filling into tart shell and chill for at least 1 hour before serving.

- Place pecans and dates in a food processor and pulse until coarsely ground.
- Pulse in oil and salt until mixture begins to form a ball.
- Press crust into an 8x8 inch greased baking dish.
- Bake at 350° for 8-12 minutes until lightly browned.
- To make cranberry topping, place 4 cups cranberries, agave and orange zest in a pot on the stove.
- Bring mixture to a boil, then cover and reduce to a simmer 10-15 minutes, until cranberries start to dissolve.
- Add remaining 2 cups cranberries and cook covered for 5 more minutes.
- Remove mixture from heat and allow to cool for 10 minutes.
- Pour mixture over pecan crust.
- Allow bars to set for 60-90 minutes.
- Serve.

- Make the crust: Line a 9x13-inch baking pan with parchment paper so that there is extra paper hanging off the two long sides like a sling, as described in this tutorial. Coat the paper and exposed sides of the pan with cooking spray; set aside.
- Place the nuts in the bowl of a food processor fitted with the blade attachment and pulse until coarsely ground, about 15 (1-second) pulses. Add the flour, sugar, cinnamon, and salt, and pulse until finely ground, about 10 (1-second) pulses. Scatter the butter over the top of the flour-nut mix and pulse until the mixture forms moist clumps, 20 to 25 (1-second) pulses.
- Transfer the mixture into the baking dish and press into the dish with your hands or the bottom of a floured measuring cup, making it as even as possible. Refrigerate at least 30 minutes. Twenty minutes before the crust is ready, arrange a rack in the middle of the oven and heat to 350°F.
- Bake the crust until beginning to brown around the edges, 20 to 25 minutes. Meanwhile, prepare the cranberry curd.
