This smacks of old-fashioned goodness! Look for good prices on fresh fruit in season for this wonderful dessert you can make for just .53 cents a serving. This came from Taste Of Home. I have not tried this just posting for safe keeping.

4 cups sliced peeled peaches or 4 cups frozen unsweetened peach slices, thawed
1 medium tart apple, peeled and thinly sliced
1/3 cup sugar
1/3 cup packed brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup all purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons cold butter
1/2 cup milk
1 1/2 cups vanilla ice cream

Steps:

  • In a large bowl, combine the first six ingredients. Spoon into a greased shallow 2-quart baking dish. For topping, in a bowl, combine the flour, sugar, baking powder and salt. Cut in butter until crumbly. Stir in milk just until blended. Drop by spoonfuls over peach mixture.
  • Bake at 400 for 25-30 minutes or until filling is bubbly and topping is golden brown. Serve warm with ice cream.

Butter-flavored cooking spray, for coating the baking dish
3 pounds Fuji apples, peeled and sliced
2 tablespoons unsalted butter
1 tablespoon agave syrup
1/2 teaspoon kosher salt
One 16-ounce can sliced peaches, drained
1 tablespoon cornstarch
1 teaspoon almond extract
1 teaspoon ground cinnamon
1 large orange, for zesting
2 packages ready-made pie dough (2 dough pieces in each package; roll out 3 dough pieces to fit a 9-by-13-inch baking dish; reserve the fourth piece for another use)
2 large egg yolks, whisked
1 cup brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Lightly coat a 9-by-13-inch baking dish with cooking spray.
  • Place a large skillet over medium heat. Add the apples, butter, agave and salt; mix and let simmer down for 10 minutes. Remove from the heat and allow to cool down.
  • In a large bowl, combine the cooked apples, peaches, cornstarch, almond extract and cinnamon and mix well. Zest half of the orange into the mixture and mix again.
  • Place one of the rolled-out pie crusts in the bottom of the prepared baking dish. Bake until very light brown, about 5 minutes. Remove from the oven and add about half of the fruit filling to the baking dish, filling it about halfway. Cover the fruit with the second pie crust. Bake until golden brown, another 10 minutes.
  • Add the remaining fruit mixture, filling the baking dish to the top. Cover the cobbler with the third rolled-out pie crust and pinch it to the rim of the baking dish to seal. Cut 3 slits across the top of the crust, brush on the egg yolk and sprinkle with the brown sugar. Zest the remainder of the orange over the top.
  • Bake until the fruit juices are bubbling and the crust is a dark golden brown, about 40 minutes.

5 small peaches, cut into 1/4-inch-thick slices (about 5 cups)
3/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
2 teaspoons fresh lemon juice
1/2 stick (4 tablespoons) unsalted butter
3/4 cup all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon kosher salt
1/2 teaspoon pure vanilla extract
3/4 cup milk, at room temperature

Steps:

  • For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
  • For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
  • Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
  • Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
  • Let cool to room temperature before serving.

1 large pie crust
5 -6 large peaches, peeled, sliced thin
3 -4 apples, peeled, sliced thin
1 cup sugar
1 cup brown sugar
1 1/2 tablespoons cinnamon
1 teaspoon nutmeg or 1 teaspoon apple pie spice
1/4 teaspoon lemon juice
1/4 teaspoon orange flavoring
1 1/2 cups flour
1/2 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1 -3 tablespoon butter or 1 -3 tablespoon oleo

Steps:

  • Line a 10 x 10 inch deep dish pan, or a 10 x 12 inch pan with pie crust.
  • Mix well all the rest of the pie ingredients. Be certain they are well blended.
  • Spoon ingredients into pie shell. If too much liquid, sprinkle a bit of flour on top.
  • For topping, combine all ingredients; fold in butter and make sure it is criumbly.
  • Broadcast the crumble on top of the pie.
  • Bake at 400 degrees for about 35-40 minutes, or until bubble and topping is golden brown.
  • Let cool. Can be served both warm and cold topped with ice cream or whipped topping.

This is my SIL's recipe for a quick dessert. Very yummy served with a scoop of vanilla bean ice cream. Enjoy! Not complicated, but fun and easy in case someone pops over!

2 refrigerated pie crusts
1 (21 ounce) can apple pie filling
1 (29 ounce) can peaches, drained
1 teaspoon vanilla
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
3 tablespoons brown sugar

Steps:

  • Preheat oven to 350°F.
  • Grease a 8x8 or 9x9 pan (I like to use margarine).
  • Lay crust in pan. You may need to cut it and lay it in strips. Make sure it is up the sides as well.
  • In separate bowl, mix remaining ingredients (but not the second crust).
  • Pour in crust.
  • You may have a bit of left over crust. I like to roll them up in balls the size of a dime and put them into the filling. When it cooks it soaks up the juices and is yummy!
  • Top with remaining Crust, again you may need to cut and layer in strips.
  • Bake until crust turns a gold brown.
  • Serve with a scoop of vanilla bean ice cream.

8 tablespoons unsalted chilled butter

1/2 teaspoon ground cinnamon
Pinch grated nutmeg

Steps:

  • Preheat oven to 375 degrees F.
  • Mix flour, baking powder, and salt in large mixing bowl. Cut in butter with pastry cutter or hands until it resembles coarse meal. Add 1/2 cup sugar and cream. Knead approximately 3 minutes and let rest.
  • Toss fruit with cornstarch, 1/4 cup sugar, and spices. Place fruit mixture in a 9 by 13-inch glass or ceramic baking dish. Cover with gobs of the cobbler dough. Bake 35 minutes or until lightly browned.
