CHUNKY HOMEMADE APPLESAUCE
This baked homemade applesauce is rich, tart and sweet -- almost like apple pie filling -- and a world apart from store-bought.

Steps:
- Preheat the oven to 400°F.
- Place the apples in a 9x13-inch baking dish. Scatter the brown sugar and chunks of butter evenly over top. Cover tightly with aluminum foil and bake for 45 to 50 minutes, tossing once halfway through, until the apples are very tender.
- Mash the apples with a potato masher or fork. Taste; if the applesauce is too tart, add more brown sugar little by little until the flavors are balanced. (Note that no two batches will ever be the same; the flavor will depend on the tartness of the apples you use.)
- Make-Ahead/Freezer-Friendly Instructions: The applesauce can be made up to 3 days ahead and refrigerated or frozen in an airtight container for up to 3 months.

BAKED APPLE SLICES RECIPE
With a hint of cinnamon, these sliced baked apples are the perfect comfort dessert for fall and winter.

Steps:
- Preheat the oven to 350F. Spray a baking dish with non-stick cooking spray.
- Slice the apples into wedges that are about 1/2 inch to 3/4 inch thick at the widest part. (The thicker the apple slices, the longer they'll need to cook).
- Combine the melted butter, brown sugar and cinnamon. Mix well until the sugar is dissolved.
- In a large bowl, add the apples, then pour the butter/sugar mixture over top. Mix gently until each apple is coated with the mixture.
- Pour the coated apples into the baking dish. Bake for 30 minutes, stirring every 10 minutes or so. The buttery mixture pools at the bottom, so stirring makes sure the apples stay moist and covered in flavour as they bake.
- The baked apples are done when they're soft enough to cut with a spoon. Enjoy!

- Cut apples in half lengthwise; remove cores. Brush with 1 teaspoon lemon juice. Place in an ungreased 11x7-in. baking dish. TANGY MAPLE BAKED BEANS WITH APPLEWOOD SMOKED BACON

- In a large, heavy-bottomed pot or Dutch oven, add the bacon and canola oil, turn the heat to medium-high and cook the bacon until it starts to crisp, 4 to 5 minutes.
- Add the red onions and green pepper, season with salt and pepper and saute over medium-high heat until the vegetables have softened, about 5 minutes. Add the beans, barbeque sauce, maple syrup, vinegar and mustard. Bring to a simmer, cover, reduce the heat to low and continue to cook the beans, about 45 minutes. Remove the lid and cook uncovered until the sauce has reduced and thickened and the flavors have developed, about 15 minutes. Just before serving, adjust the seasoning with salt and pepper.
SPICED ROASTED APPLES & BLACKBERRIES

- Preheat the oven to 180C/gas 4/fan 160C. Core the apples so you have a hole the size of a pound coin in each one. Make a cut just into the skin around the middle of each apple.
- Stand the apples in a shallow baking dish large enough to take all four. Mix together the honey, cinnamon and orange zest, put an equal amount into the cavity of each apple, then pour the orange juice into the dish.
- Roast the apples for about 40 minutes, spooning the juices over them occasionally. Then, when the apples are almost ready, spoon the blackberries around and over the top of each apple. Return to the oven for 10 minutes or until the juices start to run. Spoon the blackberries and juices over the apples to serve.

SHEET-PAN SAUSAGES WITH CARAMELIZED SHALLOTS AND APPLES
In this rustic sheet-pan dinner, apples and shallots roast slowly alongside pork sausage, becoming fragrant and caramelized in the process. A quick toss with whole-grain mustard and apple cider vinegar adds a savory edge, making the apple and shallot mixture almost reminiscent of chutney. This recipe works equally well with both sweet and hot pork sausage, as well as any crisp apples, though a mix of red and green apples looks particularly nice. Serve with French green lentils and a green salad, with plenty of Dijon mustard on the side.

- Heat the oven to 425 degrees. Cut the shallots lengthwise into 1/2-inch-thick wedges. Core the apples and cut into 1/2-inch-thick wedges. Place the shallots and apples on a sheet pan, drizzle with the 1 tablespoon olive oil, sprinkle with salt and pepper, and toss to coat. Roast the mixture for 10 to 15 minutes, until the shallots are just starting to brown at the edges.
- Meanwhile, place the sausages on a plate. Using a fork, prick a few holes in each sausage. Drizzle the sausages with olive oil and toss to coat.
- Add the rosemary and mustard to the pan with the apples and shallots, and toss, spreading everything out into one even layer. Arrange the sausages on the pan, evenly distributed, and roast for 25 to 30 minutes, flipping the sausages and tossing the apples and shallots with the juices released from the sausages halfway through, until the sausages are browned and cooked to 160 degrees and the shallots are tender and caramelized.
- Transfer the sausages to a serving platter and discard the rosemary sprigs. Pour the vinegar over the apples and shallots, and toss well, scraping up any browned bits from the pan. Transfer to the serving platter with the sausages, sprinkle with parsley, if using, and serve immediately.
