1/4 cup frozen apple juice concentrate, thawed
1 tablespoon poppy seeds
1 teaspoon very finely chopped sweet onion
1/8 teaspoon salt
6 ounce package baby salad greens
3 cups fresh mixed berries
1/3 cup honey roasted sliced almonds

Steps:

  • 1.In a small bowl, beat the sour cream, apple juice concentrate, poppy seeds, onion and salt with wire whisk until blended.
  • 2.Divide the salad greens among 6 salad plates. Top each evenly with the berries.
  • 3.Drizzle with the dressing and sprinkle with almonds before serving.

1/2 cup balsamic vinegar
1 cup whole berry cranberry sauce
1 shallot, finely chopped
1 cup extra virgin olive oil
salt & freshly ground black pepper, to taste
1/2 cup chopped walnuts
10 cups baby greens
8 ounces goat cheese, crumbled
1/2 cup dried cranberries

Steps:

  • In a small bowl, mix the vinegar, cranberry sauce and shallot. Slowly whisk in the olive oil and season with salt and pepper.
  • Preheat the oven to 400 degrees F.
  • Place the walnuts on a baking sheet and toast for 5 to 7 minutes; set walnuts aside.
  • To serve the salad, toss the greens with enough of the vinaigrette to moisten and arrange on plates.
  • Sprinkle each salad with goat cheese, dried cranberries and toasted walnuts.

1 bunch curly kale, stems removed, leaves torn
3 tangerines, separated into segments
3/4 cup walnuts
1/4 cup pomegranate seeds

Steps:

  • Whisk together the tangerine juice, garlic and balsamic vinegar in a bowl. Add salt and pepper to taste. Slowly stream in the olive oil while whisking.
  • In a large bowl, combine the kale, tangerine segments and walnuts. Toss with some dressing and season with salt.
  • Transfer the salad to a serving platter and sprinkle the pomegranate seeds over the top. Serve.

1 can mandarin oranges, drained
1/4 English or European seedless cucumber, thinly sliced
2 tablespoons rice wine or white vinegar, eyeball it
2 teaspoons sugar
3 tablespoons vegetable oil, eyeball it
1 teaspoon toasted sesame oil
Sesame seeds, for garnish, 2 tablespoons
Salt and freshly ground black pepper

Steps:

  • Combine greens, oranges and cucumber in a salad bowl. In a small bowl, combine vinegar and sugar. Whisk in vegetable oil and sesame oil. Pour dressing over salad. Add sesame seeds, salt and pepper and toss.

8 cups mixed baby greens
4 small red beets (cooked and cut*)
2 oz glazed pecans
2 tbsp balsamic
2 tbsp extra virgin olive oil
1 tbsp honey

Steps:

  • Make vinaigrette by whisking olive oil, balsamic and honey until smooth.
  • In a large bowl toss greens with vinaigrette and mix well.
  • Evenly divide greens between four bowls. Top each bowl with one beet, 1 oz goat cheese and pecans. (* You can buy cooked beets or cook them yourself. I boiled the beets in water until soft, but they can be roasted in the oven as well, see notes above.)

5 medium strawberries (washed and hulled, from 1-pound container)
2 tablespoons balsamic vinegar (plus extra for berry puree)
1/3 cup fruity extra virgin olive oil
3/4 tablespoon sugar
1 (6 ounce) bag salad greens (baby bitter greens mixture i.e spinach, arugula, mache, watercress or all spinach 5 ounces)
remaining strawberry, sliced
1/3 cup packaged oven-roasted sliced almonds
4 ounces wisconsin blue cheese, crumbled

Steps:

  • Make the dressing.
  • Whirl the 3 to 5 strawberries in a blender with a dash of balsamic vinegar until puréed (or mash by hand).
  • In a small bowl, whisk the 2 tablespoons balsamic vinegar, olive oil and sugar until well blended. Whisk in pureed berries.
  • Place greens in salad bowl. Add desired amount of dressing and toss.
  • Add almond slices and Blue cheese and lightly toss.
  • Serve immediately.

Found this recipe in Shape Magazine and thought I'd give it a try. It is a flavorful and healthy salad and is one of my DH's favorites. Sometimes I add bean sprouts, wontons or crispy rice sticks.

1 (15 ounce) can mandarin oranges in light syrup
1 tablespoon olive oil
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1/4 teaspoon black pepper
3 cups chopped romaine lettuce
3 cups Baby Spinach
1 cup chopped red cabbage

Steps:

  • Drain mandarin oranges, reserving oranges in a large bowl and juice in a medium bowl.
  • To the mandarin juice, add olive oil, vinegar, dijon mustard and pepper. Whisk until blended.
  • In the large bowl, add lettuce, spinach and cabbage to the reserved oranges.
  • Pour dressing over all and toss well to combine.

2 tablespoons fresh tarragon, chopped
1/2 pint fresh strawberries, sliced
2 ounces kalamata olives, pitted and sliced
1/3 cup walnuts, chopped and toasted
3/4 cup feta cheese, crumbled
lemon zest
3 tablespoons red wine vinegar
1 1/2 tablespoons lemon juice
1/2 teaspoon garlic, finely minced
