2 medium Onions (sliced)
8 Kashmiri Red Chilies (whole)
1 Teaspoon Mustard Seeds
1 Teaspoon Coriander Seeds
6 Cloves Garlic
1 Teaspoon whole Peppercorns
1 Sprig Curry Leaves
1 Tamarind (marble sized Ball)
1 large Tomato (cut into chunks)
1/2 cup Water
600 Grams Seer Fish (Surmai/Anjal/Kingfish)
1 Teaspoon Turmeric Powder
2 Tablespoons Coconut Oil
1 ½ Teaspoons Salt
½ Tablespoon Red Chilli Powder
1 Tablespoon Coconut Oil
6-8 Cloves Garlic (with the skin on, smashed)
1 Teaspoon Mustard Seeds
1 sprig Curry Leaves

Steps:

  • Clean and wash the fish slices and rub turmeric all over them. Cover and keep aside. Marinate for 15 minutes.

Sour with tamarind, full-bodied with coconut and smoldering with dry red chiles, this dish has roots in the coastal city of Mangalore. In India, a cook might reach for Byadagi chiles from Karnataka to stain the sauce a bright red color. In the United States, chiles de árbol are easier to find. A stone mortar and pestle is the best tool for grinding the curry paste; the finer you can get the coconut and chile, the smoother and richer the texture of the final sauce. From there, the recipe is very adaptable - replace the fillets with any fish you like, including nice oily ones like mackerel or sardines.

1 teaspoon kosher salt
1/2 teaspoon ground turmeric
4 skin-on fish fillets (about 1 1/2 pounds total), such as striped bass or snapper
1 teaspoon plus 1 tablespoon ghee
2 teaspoons whole coriander seeds
6 dry red chiles, such as chile de árbol
1 cup fresh or frozen grated coconut
1 tablespoon tamarind pulp
1 small yellow onion, finely chopped
1 (1-inch) piece fresh ginger, peeled and finely chopped (about 1 tablespoon)
1 green finger chile (or serrano chile), finely chopped
2 tablespoons coconut oil
Fresh cilantro sprigs, for garnish (optional)

Steps:

  • Mix together the salt and turmeric, then rub the mixture all over the fish and set aside.
  • In a small skillet, heat 1 teaspoon ghee over medium. Add the coriander seeds and toast until lightly brown and fragrant, about 2 minutes. Tip into a large mortar and pestle with red chiles and grind to small pieces. Add the coconut a little at a time and smash until no large pieces of chile or coconut are visible and a smooth paste forms. (This texture is worth the effort, as it gives the tangy, hot sauce its richness.) Add the tamarind last and mash to integrate it into the paste.
  • Choose a large, heavy skillet that will fit all the fish in a single layer. Add the remaining 1 tablespoon ghee and melt over medium-low heat. Add the onion, ginger and green finger chile, and sauté gently until the onion is cooked through and just starting to color, about 10 minutes.
  • Stir in the prepared coconut paste and 2 cups water, and bring to a boil over medium heat. Add the fish to the skillet skin-side up, reduce the heat to low, and simmer gently until the fish is cooked through, about 8 to 10 minutes depending on thickness, flipping fish halfway through. Spoon the coconut oil on top, and sprinkle with cilantro, if using.

250g frozen sustainable white fish, cut into bite-sized pieces
1 lime, juiced
1 tsp ground turmeric
3 tbsp vegetable oil or ghee
1 large onion, finely chopped
1 tbsp grated ginger
3 garlic cloves, thinly sliced
2 tsp ground cumin
2 tsp ground coriander
½-1 tsp chilli flakes or powder, or to taste
2 tbsp tomato purée
250g prepared diced butternut squash and sweet potato mix
200ml coconut milk
2 tbsp tamarind paste (optional)
small bunch of coriander, roughly chopped, or use mint
cooked rice, to serve (about 250g uncooked weight)

Steps:

  • Tip the fish into a large bowl with add ½ tsp each of salt and plenty of freshly ground black pepper, half the lime juice and half the turmeric. Stir gently to combine. Set aside.
  • Heat the oil in a frying pan over a medium heat and cook the onion until softened, about 8-10 mins. Add the ginger, garlic, ½ tsp salt, the spices and remaining turmeric, and cook for 2 mins more until fragrant. Stir in the tomato purée and cook for a minute more, stirring. Tip the butternut squash and sweet potato mix into a heatproof bowl with a splash of water, cover and microwave on high for 3 mins until the veg is fork-tender. Tip the mixture into the pan with the onion and spices, and stir to combine.
  • Add the coconut milk, 180ml water, the tamarind paste, if using, and a pinch each of salt and black pepper, and simmer over a medium heat for 10-12 mins until thickened and fragrant.
  • Add the marinated fish to the hot coconut sauce in the pan and cook for 4-6 mins until the fish is opaque and cooked through. Break it into chunky flakes with a wooden spoon as it cooks. Remove the curry from the heat, stir in the remaining lime juice and scatter with the fresh coriander, then serve immediately with rice.

2 pounds white carp, cut into large chunks
1 tablespoon vegetable oil
1 tablespoon red chile powder
1 tablespoon ground turmeric
1 ½ teaspoons salt
¼ cup tamarind pulp
1 cup warm water
¼ cup oil
½ teaspoon cumin seeds
1 large onion, minced
1 ½ tablespoons garlic paste
2 tablespoons red chile powder
2 tablespoons ground coriander
1 pinch salt to taste
1 tablespoon chopped fresh coriander (cilantro), or to taste

Steps:

  • Place fish in a bowl; add 1 tablespoon vegetable oil, 1 tablespoon chile powder, turmeric, and 1 1/2 teaspoons salt and allow to marinate for about 10 minutes.
  • Place tamarind pulp in a bowl and pour warm water over it. Squeeze tamarind to extract juice.
  • Heat 1/4 cup oil in a skillet over medium heat; add cumin seeds and stir. Add onion to cumin; cook and stir until onion is translucent, 5 to 10 minutes. Add garlic paste and cook for 3 minutes. Add carp, cover the skillet, and cook for 5 minutes.
  • Mix tamarind juice into fish mixture; bring to a boil. Turn carp pieces; add 2 tablespoons red chile powder, coriander, and salt. Cook over low heat until sauce thickens and oil separates, about 10 minutes. Garnish with coriander leaves.

6 garlic cloves
1 red chilli , roughly chopped (deseeded if you don't like it too hot)
thumb-sized piece ginger , peeled and roughly chopped
1 tsp turmeric
1 tbsp ground coriander
1 tbsp rapeseed oil
2 tsp cumin seed
1 tsp fennel seed
2 x 400g cans chopped tomatoes
200g green bean , trimmed and halved
1 tbsp tamarind paste
4 firm white fish fillets (we used hake)
handful coriander leaves, roughly chopped
cooked basmati rice , to serve

Steps:

  • Blitz together the garlic, chilli, ginger, turmeric and ground coriander with 3 tbsp water. Heat the oil in a large pan and toast the cumin and fennel seeds, letting them sizzle until aromatic. Add the ginger paste and fry for 3 mins.
  • Empty the tomatoes into the spice pan, plus a can of water. Add the beans, bring to the boil, then turn down the heat and simmer for 5 mins. Stir in the tamarind paste. Add the fish fillets, generously season with ground black pepper, cover and simmer for 10 mins. Take off the lid, carefully turn the fillets, then bubble the sauce until the fish is cooked through and the sauce is thick. Sprinkle over the coriander leaves and serve with rice.
