TAMARILLO & CAROB PUDDING
The base pudding is a quick self saucing pudding which has been a favourite for 3 generations in our family. The tamarillos and the carob powder (instead of cocoa powder in the original recipe) is my adaptation and a very well received one.

Steps:
- Peel and poach whole, 6 tamarillos in 3/4 cup water and 1/3 cup of sugar until fruit just cooked.
- Mix into a bowl: 1 cup SR flour, 3/4 cup sugar and 1 tbsp carob powder, and add to this 2 ozs (50 gms) of butter melted in 1/2 cup milk and 1 tsp vanilla.
- Drain the syrup liquid that the tamarillos were poached in into a cup.
- Place tamarillos on the bottom of a deep cooking dish and spoon over the pudding mix.
- Sauce topping: Sprinkle 1/3 cup sugar and 1 tbsp carob powder over pudding mix.
- Make up the syrup liquid to 2 cups by adding hot water and pour over top of the pudding.
- Cook in a moderate oven 35-45 minutes.
- Serve with plain ice cream.

Steps:
- Preheat oven to moderately low.
- Sift flour, 2 tablespoon of the cocoa, sugar and 2 teaspoons of the coffee powder into 1.25 liter (5 cup) oven proof dish.
- Gradually sir in milk and oil.
- Sift brown sugar, remaining cocoa and remaining coffee evenly over flour mixture.
- Gently pour the water over brown sugar mixture.
- Bake pudding, uncovered, in moderately slow oven about 45 minutes.
- Serve dusted with sifted icing sugar.

- Preheat oven to 350°F (180°C).
- To make the pudding, beat the sugar, butter and vanilla in a bowl until light and fluffy.
- Add the eggs and beat until combined.
- Add the flour, baking powder and milk and beat until combined.
- Spoon the mixture into a square oven proof dish and place on a baking tray.
- To make the sauce, whisk together the water, brown sugar, molasses, maple syrup and flour until combined.
- Spoon the sauce over the pudding batter and bake for 35 minutes or until golden brown and set.

- To make the sauce put sugar, butter and water in pan and bring to boil.
- Put aside.
- Cream butter and sugar.
- Add egg and vanilla essence and beat well.
- Sift in dry ingrediants and add sultanas.
- If dry may need a little milk.
- Put the hot sauce into pudding dish, spoon cake mixture on top.
- Bake at 350 deg F for approx 45 mins.
- Serve with cream or ice cream.

- Heat the oven to 180*C.
- Sift the flour into a bowl with the sugar, baking powder and a pinch of salt.
- Add the banana, milk, butter, egg and vanilla extract and whisk until well combined.
- Pour the mixture into a buttered 1.
- 5 litre baking dish.
- To make the sauce, put the light muscovado sugar, golden syrup and 250 ml water in a small pan and bring to the boil.
- Pour the boiling mixture carefully over the pudding.
- Bake for 30 to 40 minutes until it springs back when lightly pressed.
- Vanilla ice cream is just right with this hot sticky pudding.

SELF-SAUCING BUTTERSCOTCH PUDDING
Lovely pudding if you like them saucy! So far mine has not bubbled over, but I always use a foil lined tray just in case. There is nothing worse that trying to remove burned sugar from your oven.

- Put the condensed milk in a saucepan, stir on medium heat for about ten minutes, it should slightly thicken and turn a light golden brown, take off the heat.
- Stir in the butter until melted, then add the milk and the vanilla essence.
- Let it cool until it is warm.
- Preheat oven to 350 degrees F.
- Sift the flour in a bowl, combine with the hazelnuts.
- When the milk mixture is cool enough, blend it with the flour/hazelnut mix, I use a whisk to get it as lump free as possible.
- Pour this in a greased, 8-cup capacity not too shallow dish, sift over the brown sugar, for the last bits and lumps I use a small ladle/spoon to push the sugar through, remove any sugar on the rim.
- Carefully pour the boiling water evenly over the pudding, put on a foil lined baking tray and bake for approx 35 minutes or until firm.
- Let it stand for 5 to 10 minutes before you serve it, looks pretty dusted with icing sugar.

Steps:
- Combine the flour, baking powder, ground ginger and sugars in a large bowl.
- Melt butter with golden syrup.
- Pour into dry ingredients with the milk and mix.
- Place in greased oven-proof dish that is quite deep, (I use a small lasagne dish) Put sauce ingredients in a bowl.
- As you add the boiling water, stir until ingredients are mostly dissolved, then pour over the batter mixture.
- Bake for 45 minutes at 180C degrees.
- Nice served with vanilla ice cream and a dollop of whipped cream.
