Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease two 5x9 inch loaf pans and set aside.
- Blend together the butter, sugar, eggs, evaporated milk and almond extract.
- Sift together the flour, baking powder and cinnamon. Add to wet ingredients and stir.
- Add coconut, coarsely mixed dry chopped fruit and raisins. Mix well and pour into prepared loaf tins.
- Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean. Remove from pans and cool on wire rack.

Steps:
- In a small bowl, dissolve yeast in 1/2 cup warm water. Let stand until creamy, about 10 minutes.
- In a large bowl, beat together the yeast mixture, eggs, pineapple juice, 1/2 cup water, sugar, ginger, vanilla, and melted butter. Gradually stir in flour until a stiff batter is formed. Cover with a damp cloth and let rise in a warm place for 1 hour.
- Deflate the dough and turn it out onto a well floured surface. Divide the dough into three equal pieces and form into round loaves. Place the loaves into three lightly greased round cake pans. Cover the loaves with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
- Bake in preheated oven for 25 to 30 minutes, or until bottom of a loaf sounds hollow when tapped.

- Preheat oven to 350, grease a 9x5 loaf pan.
- In a large bowl, combine yogurt,sugar, oil, juice of orange,vanilla and ginger.
- Stir in flour,soda,baking powder,and salt, do not over mix, stir in dried mango and pineapple pieces and orange zest; gently fold in whipped egg whites.
- Pour into a prepared loaf pan, bake about 50 minutes until a toothpick inserted in center comes out clean.
- Allow to cool in tin for 10 minutes.
POI BREAD
The Polynesian Cultural Center has a fantastic luau. One of the best things on the menu is a taro roll (go to polynesia.com for their recipe). The rolls are divine, but I wanted to make a bread out of it for the breadmaker (less work!). I altered the proportions for the machine and dropped the food coloring. A sweet, light bread.

- 1. Wash the potatoes, place (unpeeled) in a large saucepan of lightly sugared water, bring to the boil then cook for 30 to 40 minutes or until they are very well cooked when the skin will break and loosen.
- 2. Drain well, peel then place in a large mixing bowl together with the sugar and the vanilla seeds .
- 3. Begin by mashing with a fork or potato masher, adding a little of the water or milk, then add the sugar and beat with a wooden spoon, adding more water or milk to give a thickish puree . Add more sugar according to taste. Transfer to glasses or cups and chill well before serving.

- Combine the flour, egg, baking powder, rose water, and buttermilk in a good sized bowl, stirring until they are well blended.
- Fold in the candied fruits so they are distributed evenly in the dough. If the dough seems sticky, add more flour until you can work it easily with your fingers.
- Shape heaping tablespoonfuls of the dough into four leaf clovers.
- Place on a greased cookie sheet at 350*F for about 10 minutes, until fully raised and slightly browned.

- In a small bowl, dissolve yeast in warm water; let stand until bubbles form on surface, 5 minutes. Meanwhile, in a small saucepan, heat butter until melted. Add pineapple juice and whole milk and continue to heat gently until mixture reaches 110° to 115°. In a large bowl, combine 3 cups flour, potato flakes, sugar, salt and ginger. Add yeast and butter mixtures to dry ingredients; beat just until moistened. Add eggs; beat until smooth. Beat in vanilla. Stir in enough remaining flour to form a soft dough; dough will be sticky. , Turn dough onto a floured surface; with floured hands, knead until smooth and elastic, about 8-10 minutes, adding more flour to surface and hands as needed. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1-1/4 hours., Punch dough down. Turn onto a lightly floured surface; divide into thirds. Shape each into a ball. Place in 3 greased 9-in. round baking pans lined with parchment. Cover and let rise until doubled, about 45 minutes. Preheat oven to 350°. Bake until golden brown and internal temperature of loaves reaches 200°, 30-35 minutes, covering loosely with foil during the last 10 minutes of baking if needed to prevent tops from over-browning. - In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
- In a medium bowl, beat 6 eggs and the sugar together until light and fluffy. Sift the flour and salt into a large bowl. Stir in the dissolved yeast, the egg and sugar mixture and the cooled, melted butter. Slowly add the milk to the flour mixture until the dough is of working consistency. Turn dough out onto a lightly floured surface. Knead until the dough is soft and elastic, about 15 minutes. Place into a well oiled bowl, and cover with a damp cloth. Set aside to rise overnight.
- The next morning, preheat oven to 400 degrees F (205 degrees C). Grease two 10 inch round cake pans. Divide dough in half, shape into round loaves, and place into prepared pans. Brush the tops with beaten egg.
- Bake at 400 degrees F (200 degrees C) for 15 minutes, then lower temperature to 350 degrees F (175 degrees C) and bake for another 40 minutes, or until the top is golden brown and the loaves sound hollow when tapped on the bottom.
