I got this recipe from the restaurant where I work. It's famous in our town for the blend of seasonings, and now the secret is out! -Denise Mumm, Dixon, Iowa

3 pounds ground beef
2 large onions, chopped
2 cups water
5 tablespoons chili powder
2 teaspoons salt
1 teaspoon ground cumin
3/4 teaspoon garlic powder
1/4 to 1/2 teaspoon crushed red pepper flakes

Steps:

  • In a large cast-iron skillet or Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain. Add water and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, until the water is evaporated, about 15 minutes.

Yield enough for 1 pound ground meat (about 3 tablespoons)

1 tablespoon chili powder
1 1/2 teaspoons ground cumin
1 1/2 teaspoons cornstarch
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • In a small bowl, combine the chili powder, cumin, cornstarch, salt and pepper.
  • To use: Brown 1 pound of ground meat in a skillet. Add the taco seasoning and 2/3 cup water, bring to a simmer and cook, stirring, until thickened, about 4 minutes.

1 ½ tablespoons corn flour
4 ½ teaspoons chili powder
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon seasoned salt
½ teaspoon paprika
¼ teaspoon cumin
½ teaspoon garlic salt
¼ teaspoon sugar
1 teaspoon dried minced onion
½ teaspoon beef bouillon granules
¼ teaspoon ground red pepper
1 ⅓ pounds lean ground chuck
1 cup water

Steps:

  • In a medium bowl, combine the corn flour, chili powder, onion powder, garlic powder, and seasoned salt. Stir in the paprika, cumin, garlic salt, and sugar. Blend in the onion, bouillon, and ground red pepper, stirring until all spices are well blended.
  • Crumble the ground chuck into a large skillet over medium heat. Cook, stirring, until browned. Remove from heat, rinse meat with hot water, and drain water and grease from beef.
  • Return meat to skillet, and pour in seasoning. Stir in water. Reduce heat to medium-low, and simmer until most of the liquid has cooked away, about 20 minutes.

GROUND BEEF TACO MEAT

Quick and easy ground beef taco meat for all your tacos, burrito bowls, burritos, and/or enchiladas

2 Tbsp avocado oil
1/2 medium yellow onion, chopped
4 cloves garlic, minced
1 batch Homemade Taco Seasoning
2 lbs ground beef
1/2 cup chicken broth, or beef broth or water
sea salt, to taste
1 to 2 Tbsp lime juice

Steps:

  • Heat the oil to medium or medium-high heat in a large skillet. Add the onion and saute, stirring occasionally until onion begins to turn translucent, about 5 to 8 minutes.
  • Add the garlic and saute another 2 minutes.
  • Make space for the ground beef and place the ground beef directly onto the skillet. Allow one side to brown for 3 to 5 minutes without touching it (you can stir around the onions during this process so they don't burn).
  • Flip the meat and allow the other side to brown 3 to 5 minutes.
  • Use a spatula to break the meat into smaller chunks. Sprinkle all of the taco seasoning over the meat.
  • Continue breaking up the meat and stirring until well combined, but don't cook the beef all the way through just yet.
  • Pour in the chicken broth and stir. Bring mixture to a full boil, then reduce the heat to medium-low.
  • Cover with a lid and cook 10 to 15 minutes, until beef is cooked through and sauce has thickened.
  • Taste for flavor and add lime juice, sea salt, and/or hot sauce or salsa to taste.

I threw this together because I wanted to make nachos. I figured I could make a better seasoning mix that wasn't all salt and junk I can't pronounce. Turned out pretty good. The Seasoning mix recipe makes enough for 4 pounds of ground beef. I would suggest making your own chili powder. If you've never tried to make your own, check out Recipe #225751 This recipe makes about a half cup of seasoning mix.

4 tablespoons chili powder
1 tablespoon summer savory
1 tablespoon onion powder (not salt)
2 tablespoons ground cumin
3 tablespoons minced dried onion
1 tablespoon dried chipotle powder
2 lbs ground beef
1/4 cup taco seasoning mix
1 cup low sodium beef broth

Steps:

  • Taco seasoning mix.
  • Add all the dried spices and herbs except the dried minced onion into the bowl of your food processor. A blender will work in a pinch, but you'll have to wash it several time or else your smoothy will taste like tacos.
  • Mix on high for about 30 seconds.
  • Add the dried onion and pulse about ten times to mix in well.
  • Store in a zip top bag or jar.
  • Taco Meat.
  • Brown ground beef in a large skillet.
  • Drain fat from meat and add the 1/4 cup of seasoning mix. Mix seasoning into meat.
  • Add beef stock, cover pan and simmer on medium for 10 minutes or until the moister is absorbed.
  • Crumble up the ground beef so you have a small grain texture. I like to use a potato masher.

1 (28 ounce) package o'brien frozen hash browns with onions and peppers, thawed, divided
1 1/2 lbs ground beef or 1 1/2 lbs ground chicken
1 1/2 cups salsa
2/3 cup water
1 (1 1/4 ounce) package taco seasoning mix
2/3 cup water
2 1/2 cups shredded colby-monterey jack cheese
cooking spray

Steps:

  • In a medium skillet over medium heat, brown ground beef.
  • Drain and return to skillet.
  • Add taco seasoning and water.
  • Stir until water is absorbed, about 5 minutes; add salsa, mixing well.
  • With cooking spray, coat a 8 x 11-inch dish.
  • Spread half of potatoes evenly over bottom of dish.
  • Then spread half of ground beef mixture over potatoes.
  • Sprinkle with half of the cheese.
  • Repeat layers ending with cheese.
  • Bake at 350°F for about 25 to 30, or until cheese is a nice golden brown.
