This salad is a must have at our family get togethers and it is a great weeknight meal for a hot summer night too! Hope you enjoy.

1 lb hamburger meat
1 (1 ounce) package taco seasoning
2/3 cup water
1 head lettuce, chopped
1 pint cherry tomatoes, halved
1/2 cup red onion, diced
2 avocados, diced
1 (15 ounce) can black beans, drained
1 -2 cup frozen corn, thawed
1 -2 cup shredded cheddar cheese
1 (16 ounce) bottle Catalina dressing
4 -6 cups Fritos corn chips

Steps:

  • Brown hamburger meat in frying pan. Drain off fat and return to pan with taco seasoning and water. Simmer meat an additional 3-5 minutes until most of water is absorbed. Allow meat to cool for about 10 minutes.
  • In a separate bowl, mix lettuce, tomatoes, onion, avocados, beans, corn, cheese, and cooled taco meat.
  • Mix as much dressing and Fritos as you desire when you are ready to serve salad.
  • If you mix them in too early, the salad and Fritos will be soggy.

When is a taco salad not a taco salad? Hamburger, tortilla chips, onion, lettuce and cheese. But it's the dressing that makes this amazing! I got this recipe from my parents who got it from my aunt who got it from a friend and so on. It is an amazing change from a regular taco salad!

1 lb ground beef
1 head lettuce
1 bottle Catalina dressing
1/2 onion, small dice
8 ounces shredded cheddar cheese
7 -10 ounces tortilla chips

Steps:

  • Brown the ground beef and drain off the grease and allow to room temperature.
  • Make sure you drain the grease off well or it will sift to the bottom of your salad bowl.
  • Chop the lettuce to bite sized pieces.
  • In a large salad bowl place in the lettuce, cheese, ground beef and onion.
  • Crush the tortilla chips lightly onto them and mix it up.
  • Add enough catalina to cover your salad.
  • I used about half of a bottle for this.
  • You want a nice coating though.
  • Serve.

1 package (9-1/4 ounces) corn chips
1 bottle (24 ounces) Catalina salad dressing

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Transfer to a large serving bowl. , Add the cheese, beans, tomatoes, onion, romaine and corn chips. Drizzle with dressing; gently toss to coat.

1 pound ground beef (or ground turkey)
1/2 cup of Catalina dressing (or French dressing)
1 packet of taco seasoning (2 tablespoons)
1 can of chili beans, drained (may substitute kidney beans, black beans, or pinto beans)
1/2 cup of diced onion
1 teaspoon of garlic powder
1/2 cup of diced bell pepper (red bell pepper or green bell pepper)
4 cups of lettuce, cut into bite-sized pieces (iceberg or romaine lettuce)
1 cup of diced fresh tomatoes
1/2 cup of shredded cheddar or Colby cheese
Tortilla chips

Steps:

  • Over medium heat, brown the meat. Drain the grease.
  • Add the Catalina dressing. Sprinkle the taco seasoning and garlic powder over the mixture. Stir until well mixed.
  • Turn the heat down to low heat. Let the meat mixture simmer while you prepare the remaining ingredients.
  • Mix the beans, onion, bell pepper, and tomatoes in a large bowl. Toss with the cut lettuce.
  • Put the lettuce mixture into serving bowls. Top with the meat mixture. Sprinkle the shredded cheese over the top.
  • Serve with your favorite chips.

This is a tweaked recipe from a family friend. It's awesome and makes a huge serving; perfect for potlucks. If not eating immediately, I put the cheese, onion and lettuce in a ziploc bag, the chopped tomatoes in a separate bag and keep the meat warm in a carrier [I like to keep it warm], then I assemble just before time to eat..mixing together and adding chips and dressing. I HATE soggy Dorito taco salad, so this fits the bill. My most requested "bring a dish" recipe!

1 head iceberg lettuce, chopped
5 roma tomatoes, diced
4 cups sharp cheddar cheese, shredded
1 medium sweet onion, chopped
14 1/2 ounces Fritos corn chips
1 (16 ounce) bottle western salad dressing
garlic salt

Steps:

  • Brown ground beef in skillet and drain. Season with garlic salt to taste.
  • Add chopped lettuce, chopped and seeded tomatoes, cheese and onion to big bowl.
  • If eating immediately, add warm ground beef to salad mixture.
  • Just before serviing mix in Fritos and Western Salad Dressing. Be sure to mix carefully and don't dump the entire bottle of dressing in at once. You want to lightly coat with the dressing, not drown the salad in it. I always leave a little on the side if someone wants more.
