A taco salad is a great dish to take to a potluck or serve to a crowd on a hot, summer night. Loaded with veggies as well as savory taco meat, cheese, and beans, it's filling without being heavy.

1 lb ground beef
2 tbsp Taco Seasoning Mix
1 head romaine lettuce (chopped into bite-sized pieces)
4 oz cheddar cheese (shredded) ((1 cup))
1 15-ounce can black beans (rinsed and drained)
1 9-ounce bag tortilla chips (coarsely broken)
1 2.25-ounce can sliced black olives
1 green onion (chopped)
1/4 bunch fresh cilantro (chopped) (chopped )
1 avocado (peeled, pitted, and chopped)
toppings for casserole (: sour cream, salsa, and/or hot sauce)

Steps:

  • In a large skillet, cook the ground beef until no longer pink. Season with the taco seasoning mix, stirring well. Drain off the fat.
  • In a large salad bowl, combine the lettuce, cheese, beans, broken chips, black olives, green onions, and cilantro. Toss gently to combine.
  • Divide the salad among four dinner plates. Divide the meat mixture among the plates. Top with the avocado and additional toppings and serve.

2 envelopes taco seasoning, divided
1 medium head iceberg lettuce
1 package (10 ounces) nacho-flavored tortilla chips, coarsely crushed
2 pints grape tomatoes, halved
2 cans (16 ounces each) kidney beans, rinsed and drained
3 cans (2-1/4 ounces each) sliced ripe olives, drained
1-1/2 cups shredded cheddar cheese
1 large sweet onion, chopped
2 cans (4 ounces each) chopped green chilies
1-1/2 cups Thousand Island salad dressing
1-1/3 cups salsa
1/3 cup sugar

Steps:

  • In a Dutch oven over medium heat, cook beef with 1 envelope plus 2 tablespoons taco seasoning until no longer pink; drain. , In a very large serving bowl, combine the lettuce, chips, tomatoes, beans, olives, cheese, onion, chilies and beef mixture., In a small bowl, combine the salad dressing, salsa, sugar and remaining taco seasoning; pour over salad and toss to coat.

3 cloves minced garlic
6 (4 ounce) cans chopped green chilies, drained
6 (14 1/2 ounce) cans diced tomatoes, drained
3 (16 ounce) cans kidney beans, drained
1 tablespoon salt
3/4 teaspoon pepper
6 medium tomatoes, chopped
2 heads lettuce, shredded
3 (8 ounce) packages shredded sharp cheddar cheese
3 cups onions, chopped
3 (8 ounce) cartons sour cream
1 1/2-2 lbs tortilla chips (and/or taco salad shells)
taco sauce

Steps:

  • In large skillet, cook ground beef and garlic until meat is no longer pink.
  • Drain fat.
  • Stir in chiles, tomatoes, kidney beans, salt and pepper (and chili powder or taco seasoning if using).
  • Simmer uncovered for 30 minutes.
  • Arrange tomatoes, lettuce, cheese, onion and sour cream in separate serving bowls.
  • Place tortilla chips, lettuce and meat mixture in serving dishes alongside toppings and allow guests to assemble their own salads.

¼ cup water
1 ½ tablespoons taco seasoning mix
1 (15 ounce) can dark red kidney beans, drained
½ (12 ounce) bag nacho cheese-flavored corn chips (such as Doritos®), crushed
1 large head romaine lettuce, chopped
1 ½ medium tomatoes, diced
½ cup shredded Cheddar cheese, or more to taste
½ cup Catalina salad dressing, or to taste

Steps:

  • Heat a large nonstick skillet over medium to medium-high heat and saute ground beef, diced onion, salt, and pepper together until ground beef is browned and no longer pink and onions are tender, about 10 minutes.
