TACO SALAD DIP
I made this up with ingredients I had when I needed something to take to a Cinco de Mayo luncheon. It has the ingredients of a layered taco dip, but the addition of lettuce makes it like a salad. The best of both worlds!

Steps:
- Mix ranch-style beans and refried beans together in the bottom of a shallow casserole dish; season with taco seasoning mix and stir. Spread the bean mixture into an even layer.
- Mix sour cream and onion soup mix together in a small bowl; spread over the bean mixture. Top the sour cream layer with salsa.
- Refrigerate dish until the bean layer firms, about 30 minutes.
- Layer lettuce atop the salsa. Sprinkle tortilla chips in a layer over the lettuce. Finish with a layer of Cheddar cheese.

This is a scrumptious taco dip. When I use all low-fat ingredients, such as low-fat sour cream and low-fat Cheddar, it still comes out so delicious! Serve with baked tortilla chips for dipping.

- In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
- Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.

- In Kitchen aid mixer whip the cream cheese, add the salsa; blend well.
- Place this mixture into the bottom of a 9x13-inch glass baking dish ( or similar serving dish)

I made this dip and my dearest hubby just fell in love with it. I got this recipe in a email, but I rearranged it to suit my way of cooking and added ingredients I had on hand. It can be served cold or warm and I used Frito's to dip with.

- Brown ground beef in skillet.
- Add minced garlic,diced onion and diced green pepper.
- Cook for 5 minutes.
- Add refried beans,tomato sauce,seasoning mix and pepper sauce and heat until it bubbles.
- Spoon mixture in a 8x8 baking dish (I used a glass pie plate) and top with 1/2c.
- shredded cheese.
- In a small bowl mix together sour cream,1/4c.
- shredded cheddar cheese,chili powder and cayenne powder.
- Mix well and spoon over top of taco meat mixture.
- Top with shredded lettuce, tomato and chopped green onions.
- Serve with Fritos.

- In a large skillet, brown ground beef (No need to add oil). Drain with a paper-towel if there is excess liquid. My lean 7% beef didn't have any extra juices to drain.
- Combine 1 packet of taco seasoning mix with 1/4 cup water. Once the beef is fully cooked, stir the taco seasoning mix into the beef and remove from heat to cool down.
- In the bowl of a food processor, blend 1 cup cottage cheese, 1 package cream cheese and 1 cup salsa until well combined and smooth.
- Spread beef into the bottom of a 9x13-inch glass baking pan, or into individual glass ramekins. Top the meat with the blended cream cheese mixture.
