1 cup crushed saltines (about 30 crackers)
1 envelope taco seasoning
1/2 cup ketchup
1 can (4 ounces) mushroom stems and pieces, drained
1 can (2-1/4 ounces) sliced ripe olives, drained
1 small onion, chopped
2 eggs, lightly beaten
2 tablespoons Worcestershire sauce
2 pounds lean ground beef (90% lean)
Salsa, sour cream, shredded cheddar cheese and additional olives, optional

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Press into a greased 9x5-in. loaf pan. , Bake, uncovered, at 350° for 1-1/2 hours or until no pink remains and a thermometer reads 160°. Serve with salsa, sour cream, cheese and olives if desired.

1 1/2 lbs ground beef
1 cup breadcrumbs
1 cup mild enchilada sauce, divided
1 ounce taco seasoning mix
1 small bell pepper, finely diced
1 jalapeno, seeded and finely diced
1/2 yellow onion, finely diced
1 egg, beaten
3/4 cup shredded mexican cheese
sliced jalapeno, for garnish
chopped cilantro, for garnish

Steps:

  • Preheat oven to 350 F and line a baking sheet with parchment paper.
  • Add the beef, bread crumbs, 1/2 cup enchilada sauce, taco seasoning, bell pepper, jalapeño, onion, and egg to a large bowl. Mix to combine.
  • Transfer the mixture to the prepared baking sheet and shape into an 8x4 inch loaf. Bake for 1 hour.
  • Remove the meatloaf from the oven. Brush all over with remaining 1/4 cup enchilada sauce. Top with the shredded cheese.
  • Bake for 15 minutes, or until cheese is melted.
  • Transfer to a serving platter and top sliced jalapenos and cilantro.

1 egg
1/2 c sour cream
1/3 c salsa
3-4 Tbsp taco seasoning (store bought)
salt to taste
1 c crushed tortilla chips
1/2 c shredded cheddar cheese
2 lb lean ground beef
optional sliced tomato, chopped black olives, chopped green onion, shredded lettuce

Steps:

  • 1. In a large bowl, whisk egg and add all ingredients except ground beef. Mix well. Add ground beef and mix well.
  • 2. Shape into loaf in baking dish. Bake at 350 F for 60-70 minutes. Time will depend on how thick you make your loaf.
  • 3. While hot, place on serving platter. Top with sliced tomato and grated cheese. Loosely cover with foil so the heat from the meatloaf melts the cheese.
  • 4. Meanwhile, prepare any combination of shredded lettuce, chopped green onion, chopped black olives, sour cream and extra salsa to serve on the side or on top of meatloaf.

1/2 cup progresso breadcrumbs
1/2 cup kraft mexican cheese (crumbles)
1/2 cup ortega bottled chunky salsa
1 egg
2 tablespoons chopped fresh cilantro
1 teaspoon gourmet garden crushed garlic
1 1/4 ounces mccormick reduced taco seasoning
2 slices oscar mayer thick cut bacon

Steps:

  • Prepare grill for indirect cooking over medium-high heat (no direct heat source under meat loaf).
  • In a large bowl, combine ground beef, bread crumbs, cheese, 1/4 cup of the salsa, the egg, cilantro, garlic, and taco seasoning. Poke several holes in bottom of an 8 x 4 x 2 1/2"-inch foil loaf pan. Shape meat mixture to fit loaf pan; place in pan. Spread the remaining 1/4 cup salsa over meatloaf; top with bacon.

I found this recipe in the "Cooking with Paula Deen" magazine and prepared it for my family. It is the hands down the best meatloaf I've ever had and my family was very pleased. Give this one a try and I think you'll agree. When you do, share your thoughts. One thing I learned about preparing meatloaf; when mixing and forming it, don't manhandle it. Over handling and squeezing the ingredients into the meat to blend cause the meatloaf to be tough; handle with care and you'll be rewarded with a wonderful meal.

1/2 cup tortilla chips, crushed, whole-grain
1/2 cup zucchini, shredded

1 large egg
1 teaspoon fajita seasoning mix
3/4 teaspoon salt
1/4 cup salsa, mild
1/4 cup cheese, Mexican blend, reduced fat, shredded

Steps:

  • Preheat oven to 350 degrees.
  • Place a wire rack on a foil-covered bakiing sheet.
  • In a large bowl, gently combine beef, crushed chips, zucchine, onion, beans, egg, fajita seasoning and salt.
  • Form mixture into a loaf and place on a prepared wired-rack.
  • Bake 40 minutes.
  • Top with cheese and salsa.
  • Bake for an additional 20 minutes or until a meat thermometer inserted in meatloaf registers 165 degrees.
  • Note: Meatloaf can also be baked on the rack of an aluminum foil-lined broiler pan. I covered my wire rack with foil and cut slits in it randomly so fat could drain off onto the baking sheet preventing the meatloaf from soaking in fat as it cooks.

  • In a large skillet, heat the olive oil over medium heat. Add the onion.
  • Sauté and stir until tender, about 5 to 6 minutes.
  • Stir in the refried beans and cook for 3 minutes.
  • Add the crumbled meatloaf, chili powder, and tomato sauce; simmer for 10 minutes.
  • Heat the taco shells as directed on the package until crisp and hot.
  • Let the diners make tacos with the hot meatloaf mixture, cheese, lettuce, salsa, and sour cream. Serve immediately.
