This Taco Mac recipe is a one-pan, 30-minute meal packed with taco meat, noodles and cheese! Perfect for busy weeknights and family dinners.

1 pound ground turkey or beef
1 (10 ounce) can Ro-Tel, undrained
1 cup broth (chicken or beef broth)
1 cup milk
1 (8 ounce) can tomato sauce
1 (1 ounce) package taco seasoning
1 1/2 cup elbow noodles (I use Barilla gluten free elbows)
1 1/2 cup shredded cheddar cheese

Steps:

  • In a large skillet, brown the ground turkey or ground beef over medium heat. Drain off any grease.
  • Add the undrained can of Ro-Tel, broth, milk, tomato sauce and taco seasoning.
  • Increase heat to medium high until the mixture begins to simmer.
  • Stir in noodles and reduce heat to low, cover and allow to cook for 15-20 minutes.
  • When noodles are tender, stir in shredded cheddar cheese.

2 packs of dry ranch seasoning
2 packs of the hidden valley (the original ranch salad dressing and seasoning mix)
1 cup of mayonnaise
½ tbsp. of garlic powder
½ tbsp. of onion powder
1 tbsp of lemon juice
1 tbsp of dry parsley flakes
32 fl oz. of heavy whipping cream

Steps:

  • Arrange all the ingredients together: At first, arrange all the necessary elements in one place.
  • Pour whipping cream into a mixing bowl: Add 32 fl oz. of heavy whipping cream to a large mixing bowl.
  • Add Mayo: Add 1 cup of mayonnaise inside the mixing bowl. Mayonnaise is not just a treat for the taste buds; it can be an excellent source of essential nutrients. It provides some other surprising health benefits, including adding moisture to rough and chapped skin, keeping our heart healthy, promoting nail health, etc.
  • Add parsley: Add 1 tbsp. of dried parsley flakes. Parsley is a good source of vitamin K, vitamin c, and other antioxidants. Vitamin K helps our blood clot and contributes to bone health.
  • Add onion and garlic powder: ½ tbsp. Of onion powder and ½ tbsp. Of garlic powder.
  • Add Lemon Juice: Add 1 tbsp. of lemon juice. Lemons are high in Vitamin C, fiber, and various beneficial plant compounds. These nutrients are responsible for several health benefits.
  • Add dry ranch seasoning: Finally, add two dry ranch seasoning mix packs. You can also make your seasoning.
  • mix all the ingredients: With a whisk, give them a good mix until it becomes a smooth mix. After whisking, let them sit in the refrigerator for 25 minutes. After 25 minutes, take it out of the fridge. It became thick and creamy. It tastes like the ranch served at restaurants.

You may be familiar with that one-skillet macaroni dish that comes in a box where all you have to add is ground beef? Well, this is my version, with a little Tex-Mex twist. The whole family will eat it up, and it's so easy to put together.

1 tablespoon vegetable oil
1 cup diced onion
2 cloves garlic, minced
1 pound ground chuck
1 tablespoon Miss Brown's House Seasoning, recipe follows
2 tablespoons tomato paste
1 tablespoon chili powder
2 teaspoons ground cumin
1 1/2 cups beef stock
8 ounces elbow pasta, cooked according to package directions
One 8-ounce block sharp Cheddar, shredded
Kosher salt and freshly ground black pepper
Sour cream and chopped green onions, for serving, optional
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 tablespoon kosher salt
1 tablespoon freshly ground pepper

Steps:

  • Heat the oil in a large cast-iron skillet over medium heat. Add the onion, garlic, ground beef and House Seasoning. Cook until the veggies begin to soften and the beef is slightly browned and no longer pink, about 7 minutes. Stir in the tomato paste, chili powder, cumin and beef stock.
  • Increase the heat to medium-high and bring the mixture to a rolling boil. Reduce the heat to low and cook until the sauce reduces, 5 to 10 minutes. Add the pasta and continue to cook, stirring constantly, until the liquid starts to slightly absorb. Add the cheese and remove from the heat. Season with salt and pepper.
  • To serve, top with the sour cream and sprinkle with the green onions, if using.
  • Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container.

1 package (24 ounces) shells and cheese dinner mix
1/2 pound bulk pork sausage, cooked and drained
1/3 cup taco sauce
1 tablespoon taco seasoning
4 cups shredded lettuce
2 medium tomatoes, chopped
Shredded cheddar cheese, optional

Steps:

  • Prepare shells and cheese mix according to package directions. Stir in sausage, taco sauce and seasoning; cook and stir until heated through. Top with lettuce, tomatoes and, if desired, cheddar cheese. Freeze option: Freeze cooled pasta mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little milk if necessary. Garnish as directed.

2-3/4 cups water
1/3 cup TACO BELL® Thick & Chunky Salsa
1-1/2 tsp. chili powder
2 cups elbow macaroni, uncooked
1/2 lb. (8 oz.) VELVEETA, cut into 1/2-inch cubes

Steps:

  • Brown meat in large skillet on medium-high heat; drain. Return meat to skillet.
  • Stir in water, salsa and chili powder. Bring to boil. Stir in macaroni; cover. Simmer on medium-low heat 8 to 10 min. or until most the water is absorbed.
  • Add VELVEETA; cook 3 to 5 min. or until completely melted, stirring frequently.
