This is a scrumptious taco dip. When I use all low-fat ingredients, such as low-fat sour cream and low-fat Cheddar, it still comes out so delicious! Serve with baked tortilla chips for dipping.

TACO JOE DIP
A Low Fat Southwestern treat. I found this hearty appetizer recipe in a magazine a few years ago, and it is one of our family's favorites. Not only is this very easy to make, but the fact that it is made in a slow cooker allows me to prep it earlier in the day before things get too hectic. I think you'll enjoy this as well. Leftovers are yummy spooned over a baked potato.

- In a slow cooker or crock pot, combine all ingredients.
- Cover and cook on low for 5-7 hours.
- Serving suggestions:.
- Serve with tortilla chips.
- Spoon over hot baked potatoes.
- Roll in a warm tortilla.
- Spoon over a bed of lettuce.
- Use as an omelet filling.
- Add shredded cooked chicken and serve over crushed doritos with a dollop of sour cream.

JOE THE PLUMBER DIP (TACO) TOH
Originally from Taste of Home, this recipe cooks up easy in the slow cooker. Delicious with tostadas or use this as a vegetarian taco filling for taco shells. You can stuff a burrito with this, too! The possibilities are endless. Add whatever ingredients you like; omit those that you don't.

- Open cans.
- Drain beans, corn and black beans.
- Add all ingredients to the crock pot. (Be sure to use only 2 chipotle chilis NOT 2 cans of chili)

Steps:
- Place ground beef, bell pepper, onion, garlic, flour, brown sugar, salt, pepper, and cayenne pepper in a heavy pot.
- Place pot over medium-high heat. Break up and stir mixture as it heats. Cook and stir until most of the moisture has evaporated and mixture is crumbly and begins to brown, about 15 minutes. Stir in chicken broth, ketchup, mustard, and Worcestershire sauce. Mix well and bring mixture to a simmer. Reduce heat to medium. Cook, stirring occasionally, until mixture is thick, about 45 minutes.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Transfer mixture to oven-proof sauce pan. Top with 1/2 of the shredded cheese. Poke cheese down into the dip with a fork, stirring lightly. Top with remaining cheese.
- Place pan under broiler; broil until cheese is browned, and mixture is hot and bubbly, about 5 minutes.
