This Taco Grilled Cheese Sandwich can be customized just like a taco! The original recipe is packed with bold flavor and a little heat for a lunch or dinner that's sure to leave your mouth watering!

8 slices Sara Lee® Artesano Bread
4 tbsp butter (softened)
8 slices cheddar cheese
1/2 lb ground beef (seasoned for tacos, we always use leftovers.)
1 jalapeno pepper (diced)
1 to mato (diced)
1 avocado (peeled and sliced thin)
sour cream and salsa for dipping

Steps:

  • Butter one side of a piece of bread with the softened butter and place butter-side down in a medium non-stick skillet over medium heat.
  • Add a slice of cheese to the bread and spoon 1/4 of the beef, 1/4 of the diced tomatoes, and 1/4 of the diced peppers on the cheese. Lay 1/4 of the avocado slices over the top and top them with another slice of cheese.
  • Butter one side of another slice of bread and place it butter-side up on top of the cheese, cook until cheese begins to melt and bread turns a golden brown, flip and cook the other side until cheese is melted through. Repeat for other sandwiches.

3 ounces cream cheese, softened
1/2 cup mayonnaise
2 cups cheddar cheese, shredded
2 cups mozzarella cheese, shredded
1/2 teaspoon garlic powder
1/2 teaspoon seasoning salt
1/4 teaspoon cracked black pepper
12 slices Texas toast thick bread
1/2 cup butter, softened, more if needed

Steps:

  • Blend all ingredients except bread and butter in a medium bowl.
  • Butter one side of each slice of bread.
  • Put sandwiches together using about 1/2 cup of filling each.
  • Place buttered side of bread on the outside of sandwich.
  • Toast on griddle or in skillet until a deep golden brown. Make sure you cook this slowly over low to med-low heat, so that the inside has a chance to melt before the outside gets too done. Kick up the heat when it gets going.
  • *Depending on the size of your bread, this makes 6-10 sandwiches.

A lovely, slightly spicy, change from traditional grilled cheese sandwiches. The roasted jalapenos and taco seasoning in the butter take this over the top. Guaranteed comfort food! I roasted the jalapenos over the gas burner for several minutes until black, then cooled in a closed paper bag for about 15 minutes before scraping off the blackened skin. Then I minced them and froze the surplus for occasions just like this one! You could even dip your sandwich into a nice salsa as well. OH GOD NO! SAY IT ISN'T SO! BE STILL MY BLOOD PRESSURE!! (*ahem*.... sorry) Anyway, this went so incredibly well with Recipe #107281... I almost couldn't get it all in my mouth fast enough. :D Hope you enjoy it!

4 slices French bread
2 slices swiss cheese
1/2 cup shredded cheddar cheese
2 teaspoons roasted jalapenos, minced
1 1/2 tablespoons butter, softened
1 teaspoon taco seasoning

Steps:

  • In a small bowl, combine taco seasoning with the butter until fully mixed.
  • Thinly coat 1 side of each bread slice with butter mixture.
  • Heat skillet to medium. When hot, lay down 2 of the four slices of bread, buttered side down.
  • On each slice in the skillet, layer 1 slice of Swiss cheese, 1 teaspoon of the minced roasted jalapenos and 1/2 of the cheddar. Top each sandwich with the remaining bread slices, buttered side UP. (I actually put a little bit more of the jalapeno pieces into the butter mixture before spreading it.).
  • Cover skillet and turn pan to medium low. Cook for 5 minutes.
  • Uncover and flip when sandwiches have reached desired brownness. Raise heat to medium or medium-high and continue cooking until other side is to your preferred brownness.
  • Goes perfectly with a good bowl of soup!
