1/3 cup packed brown sugar
Dash kosher salt
1/2 cup cold butter, cubed
1/3 cup finely chopped pecans
FILLING:
1 package (8 ounces) cream cheese, softened
1/4 cup sugar
2 tablespoons 2% milk
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
Dash kosher salt
1 large egg, room temperature, lightly beaten
JAM:
1/2 cup sugar
2 tablespoons cornstarch
1-1/3 cups chopped fresh strawberries
1-1/3 cups sliced fresh or frozen rhubarb
1 tablespoon lemon juice

Steps:

  • Preheat oven to 350°. Line an 8-in. square baking pan with parchment, letting ends extend up sides. In a small bowl, mix flour, brown sugar and salt; cut in butter until crumbly. Stir in pecans., Press into bottom of prepared pan. Bake until edges just begin to brown, 12-15 minutes. Cool completely on a wire rack., In a large bowl, beat cream cheese and sugar until smooth. Beat in milk, lemon juice, vanilla and salt. Add egg; beat on low speed just until blended. Pour over crust., Bake until filling is set, 15-20 minutes. Cool on a wire rack for 1 hour. , For jam, in a small saucepan, mix sugar and cornstarch. Add strawberries, rhubarb and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, until mixture begins to thicken, 6-8 minutes. Cool completely. Spread over filling. Refrigerate until set, 8 hours or overnight. , Using parchment, carefully remove cheesecake from baking pan. Cut into bars for serving.

1 1/2 cups fresh rhubarb, sliced into 1-inch pieces (unsweetened frozen rhubarb may be used)
1 1/2 cups fresh strawberries, sliced
1 tablespoon lemon juice
1/2 cup granulated sugar
2 tablespoons cornstarch
1 1/2 cups all-purpose flour
1 1/2 cups quick oats (old fashioned may be used, but not instant)
1 cup brown sugar (firmly packed, I use light brown but dark can be substituted)
3/4 cup butter, softened (12 tbs., or 1 1/2 sticks)
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup confectioners' sugar
1 -2 tablespoon milk or 1 -2 tablespoon lemon juice

Steps:

  • Preheat oven to 350 degrees F. Grease the bottom of a 13x9 inch baking pan.
  • Combine rhubarb, strawberries, and lemon juice in a 2-qt saucepan. Cover and cook over medium heat, stirring occasionally, 8 to 12 minutes or until fruit is tender.
  • Combine granulated sugar and cornstarch in a small bowl, then mix into the fruit mixture.
  • Keep cooking, stirring constantly, until mixture comes to a boil (approximately 1 minute). Continue boiling until thickened (1 minute). Remove from heat and set aside.
  • Combine all crust ingredients in a large mixing bowl. Beat on low speed, scraping bowl often, for 1 to 2 minutes or until mixture is crumbly.
  • Set aside 1 1/2 cups of crumb mixture.
  • Press remaining crumb mixture onto bottom of prepared pan. Spread fruit filling over crust, and sprinkle evenly with reserved crumb mixture.
  • Bake at 350 degrees F for 30 to 35 minutes, or until crust is golden brown.
  • Cool completely (I pop pan in fridge for a bit if I'm short on time).
  • Mix drizzle ingredients in a small bowl. Drizzle over cooled bars. Cut into bars.

1 cup chopped pecans
1 cup butter, melted

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan. Chill a metal bowl in refrigerator.

1 ½ cups sliced fresh strawberries
1 tablespoon lemon juice
½ cup granulated sugar
2 tablespoons cornstarch

¾ cup butter (softened)

½ cup powdered sugar

Steps:

  • Combine the rhubarb, strawberries, and lemon juice in a medium saucepan. Cover and cook on medium heat for 8 - 12 minutes or until fruit is tender, stirring occasionally.
  • Mix together the ½ cup granulated sugar and cornstarch in a bowl. Stir into the fruit mixture. Continue cooking, stirring constantly until the mixture comes to a boil. Continue boiling one minute, stirring constantly. Remove from heat and set aside.
  • Preheat the oven to 350°F and grease your 13 x 9 baking pan with butter.
  • Combine all crust ingredients in a bowl. Using a pastry blender or the back of a fork, combine the ingredients until they resemble coarse crumbs.
  • Reserve 1 ½ cups crumb mixture. Press the remaining crumb mixture into a greased 13x9 baking pan using a spatula or the back of a fork. Spread filling over the crust. Sprinkle with the reserved crumb mixture.
  • Bake 30-35 minutes or until golden brown. Cool completely.

1 cup butter or 1 cup margarine
4 large eggs
2 cups sugar
1/2 cup flour

  • In food processor, mix together the crust ingredients.
  • Press into a 15 x 10-inch pan.
  • Bake at 350° for 15 minutes (crust will be very light colored).

2 1/2 cups rhubarb, cut in 1 " pieces
1 1/4 cups strawberry jam or 1 1/4 cups preserves
1/4 teaspoon ground cinnamon
1/8 teaspoon finely grated orange zest (optional)
1 2/3 cups all-purpose white flour
1 2/3 cups old fashioned oats
1 cup granulated sugar

3/4 cup unsalted butter, very soft, but not melted
1 large egg, lightly beaten with 1 1/2 tsps water

Steps:

  • Preheat oven to 350*.
  • Generously grease a 13x9 pan or coat with nonstick spray.
  • For the filling: in a medium heavy nonreactive saucepan, stir together the sugar and cornstarch till well blended. Stir in the rhubarb, jam or preserves, cinnamon and orange zest, is using. Bring to a simmer, stirring over medium high heat. Cook, stirring, for 3-6 minutes or until rhubarb softens just slightly, fresh rhubarb will take longer than thawed frozen. Set aside. For the crumb mixture; In a large bowl, thoroughly stir together the flour, oats, sugar, cinnamon and salt.   • Using a large sharp knife, cut into 20 bars -- wipe the knife clean between cuts.

Steps:

  • Preheat the oven to 350˚F.
  • In a large bowl, combine 1 1/2 cups of the flour and the powdered sugar and salt. Cut the butter into the flour mixture using a pastry blender or fork. The mixture should resemble coarse crumbs and clump together when squeezed lightly in your hand. (This can also be done in a food processor.) Scoop 2 cups of the mixture into an 8-inch baking dish and press evenly into the pan with your fingers.
