SEVEN LAYER TACO DIP
I am continuously asked to bring this dip for parties and family get-togethers. People gather around the platter until it's gone.

TACO DIP I
This is a scrumptious taco dip. When I use all low-fat ingredients, such as low-fat sour cream and low-fat Cheddar, it still comes out so delicious! Serve with baked tortilla chips for dipping.

TACO DIP
This version of a game-day favorite, taco dip, is super simple to make. Even easier, make the beef-and-bean mixture a day ahead, then just reheat and top.

Steps:
- Heat the oil in a large skillet over medium-high heat. Add the beef, and cook, stirring occasionally, until completely browned, 8 to 10 minutes. Pour off the excess grease, add the taco seasoning and stir until the beef is well coated. Add the tomato paste, and stir until it darkens to a dull brick red, about 30 seconds. Add 3/4 cup water, bring to a simmer and cook and until the mixture thickens, 2 to 3 minutes. Add the beans, and stir just to warm them through. Remove from the heat, and transfer to an 8-inch square baking dish.
- Top the beef-and-bean mixture with an even layer of sour cream, then a layer of Cheddar. Sprinkle the tomatoes, lettuce and black olives and jalapeno if using on top. Serve with tortilla chips.

TACO DIP FANTASTIC!
Steps:
- Fry hamburger; add seasoning and water, as directed on pkg.
- In a clear, round baking dish spread can of refried beans, bake at 325 degrees F for 10-15 minutes, until heated through and brown on top.
- After hamburger is fried and seasonings have been added and cooked off, spread hamburger on top of the layer of baked refried beans. Next, add a layer of sour cream (large spoon or spatulas work best) on top of the layer of hamburger - about a 1/4 inch thick layer, or to liking. Then, add a thick layer of salsa atop the sour cream layer. Finally, spread the shredded lettuce on top of the salsa, topping it off with the shredded cheese!

FANTASTIC MEXICAN DIP
This recipe was given to me by my sister-in-law and always goes fast! Cream cheese at the base of the dip makes it extra thick and scoopable. Seasoned beef and vegetables make it extra filling and tasty! You may want to prepare two batches. Serve with tortilla chips and enjoy.

THE BEST TACO DIP
I got this recipe from a book from the Art Gallery of Windsor - with some modifications it is one of my favourites and one I'm asked to make again and again. The lettuce and onion are optional in my mind

FANTASTIC TACO DIP
I always loved my mom's taco dip salad, you know, with the base "dip", and then all the toppings on it, that is a mess to eat and a pain in the butt to make. So I made up this taco dip that's quick and easy and tastes AWESOME. There are endless add-ins that you could do, black olives, hamburger (though this is a cold dip, so I don't know), lettuce (tends to get soggy), etc, etc. Let me know what you think... my friends LOVE this dip and ask for it when we have potlucks and stuff. Most of the prep time is chilling it.

Steps:
- Mix sour cream and cream cheese together well. The "whip" setting on a mixer or a "3"-ish on a hand mixer works well.
- Add in taco seasoning and cayenne pepper and mix (whip) well. Adjust the amount of seasoning to taste. I like it pretty spicy.
- Add in salsa and shredded cheddar and mix well. I like to mix it in with a spatula so it won't shred up the cheese too much or mush up the chunky salsa.
- Transfer to a serving bowl and chill WELL. This is a kind of dip you want to make at least an hour or so before you enjoy it, so the flavors have a chance to meld. It also thickens as it chills, so don't worry about it being runny at first!
- Serve with chips; I'd recommend Nacho Cheese Doritos (they're my favorite!). ENJOY!
