MINI TACO BITES
Simple and delicious mini taco bites are the perfect party appetizer or cute weeknight dinner!

Steps:
- Gather the ingredients.
- Preheat oven to 350 F. Make pico de gallo: combine tomato, onion, jalapeño, garlic, cilantro, and lime juice. Season with salt and pepper and stir.
- Use a 3-inch cookie cutter to cut out 4 small taco shells from each tortilla. Save the scraps and toast them for a crispy garnish for salads or soups . Warm the tortillas for 10 to 20 seconds, covered, in a microwave, or wrap in foil and heat in a warm oven until pliable.
- Brush both sides of each tiny tortilla using 2 teaspoons of oil and sprinkle with salt, keeping them covered and warm in between. Press into openings of a mini muffin tin. Repeat with 11 more little tortillas, lightly reheating if needed to keep them pliable.
- Repeat with a second mini muffin tin or repeat after cooking first batch of mini taco shells, for a total of 24.
- Bake for 10 to 12 minutes or until lightly browned.
- Meanwhile, heat a large skillet over medium heat. Add 1 teaspoon of oil followed by ground beef . Cook, breaking up into small pieces, until no longer pink. Use a spoon to scoop out any excess oil.
- Add picante sauce, chili powder, and cumin. Season with salt and pepper and stir. Simmer for about 5 to 10 minutes, or until no longer watery. Taste for seasoning.
- Add a heaping spoonful of beef mixture to each tortilla shell, followed by a dollop of crema, a scoop of homemade pico de gallo, and a sprig of cilantro.

I have been making this for years. It is so good just for a snack. In fact, I have been known to make this for (Ahem!) Sunday supper. Just sit and munch.

Steps:
- I put this on a 12" round platter, but any dish would be fine.
- Put the cream cheese in a bowl and beat with mixer.
- Slowly add the taco sauce and beat well.
- Neatly spread this on a platter.
- Sprinkle the lettuce as the next layer.
- Then over this arrange the diced tomatoes.
- Next layer is the green pepper and then the onion.
- Next layer is the olives arranged nicely.
- Then lastly is the cheddar cheese; (In the photo I did not put it on because I didn't have any, but by the time we ate it, I had gone to the store and got some).
- Use frito scoops or tortillas for scooping up the platter.

HOT AND COLD TACO APPETIZER DIP
This is a twist on the taco dip recipe that's been around for quite awhile, because this one has seasoned meat. If you enjoy taco dip, but have been wondering "Where's the Beef?", this one is for you. It is heartier and delicious. The hot/cold combination is great...as it is in most Mexican themed dishes. We have actually had this as a main dish for dinner and it disappears before my eyes whenever we have it at any gathering!

- Fry ground beef over medium heat until no longer pink, drain fat.
- Add taco seasoning and water and simmer for 5 minutes, keep warm.
- In a medium bowl, beat the cream cheese and sour cream until smooth.

LINDA'S TACO SCOOP APPETIZERS
I made these yesterday for my Holiday Appetizer Party with my cooking and recipes group and they were really good! The amount is approximate, depending on how much you fill the scoops. I had some scoops left over when I got done making mine.

- In a lg. skillet over med-high heat fry hamburger until almost done, chopping to break up the meat into small pieces.
- When meat is done, drain grease.
- Add half the pack of taco seasoning and water. Continue cooking until water is evaporated.
- Add salsa, and mix well.
- Add half the bag of Mexican blend cheese. Mix well until cheese melts. Set aside.
- When ready to make scoops, fill each one with a little meat mixture.
- Preheat oven to 350.
- Mix sour cream and the rest of the pack of taco seasoning. Set aside.
- Top scoops with additional cheese.
- Put on a lg. baking sheet, and bake in the oven for about 5 minutes, or until cheese is melted.
- Put on serving platter, and dollop with a little sour cream mix.
