2 tart apples - peeled, cored, and sliced
½ cup white sugar
1 tablespoon ground cinnamon
2 tablespoons water

Steps:

  • In a saucepan, combine the apples, sugar, cinnamon and water. Stir to dissolve sugar, and bring to a boil. Reduce the heat to low, and simmer for 10 minutes, or until apples are soft and syrup has thickened. Serve over pancakes or ice cream.

1/3 cup dried currant
1/2 cup pure maple syrup
1 pinch ground cloves
1 pinch ground cinnamon

Steps:

  • Preheat oven to 375 degrees.
  • Core apples, remove seeds, peel away a bit of skin, and stuff with currants.
  • Set in oven-proof baking dish.
  • Combine lemon and apple juice with spices and maple syrup and pour over apples.
  • Bake uncovered for about 45 minutes, basting often.
  • Serve warm.

1/2 cup packed brown sugar
3/4 cup dark corn syrup
2 1/2 tablespoons unsalted butter
1/2 teaspoon lemon juice
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground ginger

Steps:

  • In a 1-quart, heat proof, microwavable measuring bowl, mix all of the ingredients. Heat in the microwave on high for about 5 minutes or until the butter is completely melted. Stir and heat until mixture is reduced to 1 1/2 cups, about 10 minutes. Let stand at room temperature for about 30 minutes until slightly thickened.
  • Hints for success: - Be sure to heat the griddle before pouring your pancake batter. - Using a copper bowl to whisk the egg whites will give you more volume. - Do not whisk the whites until they appear dry. They should be stiff, yet moist. - Fold the whites and the squash mixture gently. If you over do it you will deflate the whites and have tougher, flatter pancakes. - The syrup is rich and full of flavor. You can make it the night before, refrigerate it and reheat the next morning. - Use the freshest apple cider you can find. If you use apple juice, try to use one that is not overly sweet.

4 medium cooking apples
1/4 cup walnuts, chopped (optional)
1/4 cup golden raisin
1 teaspoon honey
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 cup water
1 cup honey
1 teaspoon lemon juice
1 cinnamon stick
whipped cream (optional)

Steps:

  • Core apples, being careful not to cut through bottom. Pare 1/2 inch at the stem end.
  • Combine raisins and walnuts, if used, and 1 tsp honey with the ground cinnamon and ground cloves. Fill the center of the apples with this mixture.
  • Place the apples in a 8" by 8" baking pan.
  • In a small saucepan combine water, honey, lemon juice and cinnamon stick and bring to a boil. Simmer for 2 minutes. Remove cinnamon stick and pour syrup over apples.
  • Bake in a preheated 375 oven until tender, about 45 minutes, basting occasionally with syrup from the pan.
  • Serve warm or cold, with whipped cream if desired.
