AWESOME PASTA SALAD
I got this recipe from a lady that I used to work with when I was teaching. It is wonderful! People ask for this recipe over and over again!

Steps:
- The night before serving, break the noodles up 3 times.
- Boil, rinse, and drain.
- That same night -- in a large bowl, add the dry seasonings and Wesson oil to pasta.
- Mix well, seal, and refrigerate at least 8 hours (the longer the better).
- Next day (morning), add veggies and mayonnaise to pasta.
- Stir together.
- Refrigerate all day if possible. The longer it marinates the better the flavor.

REFRESHING SUMMER ORZO SALAD
This is a wonderfully light salad for those hot summer nights. If you like, it goes well with the addition of either tuna or grilled chicken, and you can vary the amount of feta depending on your taste.

Steps:
- Bring the chicken broth to a boil over high heat. Add the orzo pasta, and cook until al dente, 8 to 10 minutes. Drain well, then pour the orzo into a bowl, and toss with the butter to keep it from sticking; set aside.
- While the pasta is cooking, heat the olive oil in a skillet over medium heat. Stir in the garlic, and cook until the garlic softens and the aroma mellows, about 2 minutes. Stir in the basil, thyme, red pepper flakes, and pine nuts. Cook and stir until the pine nuts have toasted to a light golden brown.
- Stir the pine nut mixture into the orzo along with the olives, capers, feta cheese, spinach, and lemon juice. Serve either warm or cold, but it's better the next day.

Steps:
- Cook the pasta, adding the peas for final 2 mins cooking time. Drain, rinse with cold water to cool, then drain again. Tip into a bowl with the chopped herbs, lemon zest and juice, olive oil and plenty of seasoning and mix well. Cover and chill, spooning out portions as and when. If you're making this for one person, by days 3 and 4 you'll need to stir in a little olive oil or something creamy to loosen the pasta.
