SWORDFISH STEAKS WITH TOMATO-BASIL SAUCE



Swordfish steaks with Tomato-Basil Sauce image

My own invention, a quick and easy "something". I thought it would make a nice combination, and wasn't disappointed. Whenever available, I substitute fresh basil for the dried spice.

2 swordfish steaks
1 tablespoon olive oil
salt and pepper
1 large ripe tomatoes, chopped
1/2 teaspoon dried basil

Steps:

  • Salt and pepper the swordfish steaks.
  • In a saute pan just large enough to hold the steaks, heat the oil, and quickly brown the swordfish on both sides, but not cooking completely.
  • Remove them from the saute pan and set aside.
  • In the same pan, add the tomatoes and the basil.
  • Cook for a few minutes, until the tomatoes begin to break down.
  • Return the fish to the pan, covering them with the sauce.
  • Cover the pan, and cook at a low simmer for 4-5 minutes until they are done.
  • Serve!

Swordfish Steak with Creamy Lemon Basil Sauce image

Paleo, Whole30, and keto-friendly swordfish steak served with creamy lemon basil sauce. It's made under 30 minutes and so flavorful!

2 swordfish steaks (1 inch thick)
1 tbsp lemon juice
Salt and pepper (to taste (Omit pepper for AIP))
2 tbsp ghee (or coconut oil)
1/2 avocado
1/2 cup fresh basil (packed)
Juice and zest of 1/2 lemon
1 tbsp extra virgin olive oil
Salt and pepper (to taste (Omit pepper for AIP))
3 tbsp of water (plus more, if necessary)

Steps:

  • Pat the swordfish dry with a paper towel, and season them liberally with salt and pepper on both sides. Pour lemon juice over the swordfish and refrigerate for 15 minutes.
  • While the swordfish is marinating, place all ingredients of the lemon basil sauce in a blender and blend until smooth. If the sauce is too thick, add more water until it becomes the right consistency. Set aside.
  • Heat a coconut oil in a skillet over medium high heat.
  • Place the steaks in the pan and cook for 6 minutes, flipping halfway through.
  • Drizzle lemon basil sauce over the steaks and serve with delicious veggies!

This wonderful dish is truly an impression maker. It is easy to prepare and is guaranteed to get rave reviews! Great with wild and long grain rice or garlic mashed potatoes!

1 ½ pounds swordfish steaks
¼ cup dry white wine
¼ cup soy sauce
1 tablespoon prepared Dijon-style mustard
1 teaspoon grated fresh ginger root
2 cloves garlic, minced
1 teaspoon sesame oil
3 tablespoons olive oil
¼ cup fresh lemon juice
4 cups coarsely chopped arugula
3 tablespoons olive oil
3 tablespoons lemon juice
1 cup chopped fresh tomato

Steps:

  • Rinse and pat dry swordfish. Place fish in a glass baking dish. In a large mixing bowl, whisk together white wine, soy sauce, mustard, ginger, garlic, sesame oil, olive oil and 1/4 cup lemon juice. Pour sauce over fish, cover and refrigerate for several hours or overnight.
  • Remove swordfish from marinade; reserve marinade. Use a sharp knife to cut pockets into the sides of the swordfish steaks.
  • In a large bowl, toss together arugula, tomato, 3 tablespoons olive oil and 3 tablespoons lemon juice. Stuff swordfish with arugula mixture and seal with toothpicks.
  • Place marinade in a small saucepan and cook over high heat until reduced by half.
  • Heat a grill or broiler to high heat. Grill swordfish for 5 minutes on each side. Spoon reduced marinade over swordfish and serve.
