- In a large resealable plastic bag, combine the flour, salt and pepper. Add beef, a few pieces at a time, and shake to coat., In a large skillet, brown beef in butter on both sides. Transfer to a 3-qt. slow cooker; top with onion. Combine soup and water; pour over onion. Cover and cook on low for 8-10 hours or until meat is tender. Serve with noodles.

SWISS STEAK
For dinner tonight, try Alton Brown's Swiss Steak cutlets from Good Eats on Food Network, cooked in bacon drippings and smothered in an oniony beef gravy.

- Preheat the oven to 325 degrees F.
- Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
- Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
- Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.

Great for a diabetic diet. One serving has no carb exchanges, only count 1 lean meat serving per cup.

Steps:
- Heat oil in skillet. Add onions, celery, zucchini and peppers. Cook and stir over moderate heat until vegetables are translucent but not brown.
- Brown meat in skillet if raw.
- If using cooked beef, add as soon as vegetables are cooked.
- Any type of beef will work, but I prefer using round steak or chuck steak because it's cheaper.
- Add broth to vegetables, cover and simmer 15 to 20 minutes.
- Add cabbage and seasonings to broth. Simmer another 5 minutes.

SWISS STEAK
An old family favorite salvaged from our 30-plus-year-old cookbook. We like this served over egg noodles. I like to increase the tomatoes to a 15 ½-ounce can, and I use a full green pepper and add a teaspoon of paprika.

- Mix flour, 1/2 teaspoon salt, and 1/4 teaspoon black pepper together in a bowl. Sprinkle half the flour mixture on one side of round steak pieces; pound steak until coating is absorbed. Flip steak and coat with remaining flour mixture; pound steak until coating is absorbed. Cut steak into 6 pieces.
- Melt shortening in a large skillet over medium heat; place steak pieces in the hot shortening. Cook until browned, 7 to 10 minutes per side. Cover and simmer until tender, about 1 hour, adding water as needed.
- Turn steak pieces over and add tomatoes, onion, and green bell pepper to the skillet. Season with salt and black pepper. Simmer until vegetables are tender, about 30 more minutes.

- In a large resealable plastic bag, combine the flour, 1/2 teaspoon salt and pepper. Add beef, a few pieces at a time, and shake to coat. Remove steak from bag; flatten to 3/4-in. thickness., In a large skillet, brown steak on both sides in oil over medium-high heat. In a large bowl, combine the tomatoes, tomato soup, onion, bay leaf, marjoram, thyme, paprika, cloves if desired and remaining salt; pour over beef. , Bring to a boil. KAREN'S SWISS STEAK (STOVE TOP, CROCK POT OR OVEN)
This recipe can be prepared on the stove top, or in the oven or crock pot. I decided to post it since it is a bit different than the swiss steak recipes I have seen on here. Just wait until you smell this stuff cooking!

- Cut meat into 6 serving pieces.
- Combine flour, salt, mustard, pepper, and garlic powder.
- Put 2 T. of the flour mixture into the meat.
- Brown the meat in the shortening on both sides.
- Drain off excess fat.
- Add undrained tomatoes, onion, celery, carrots, Worcestershire sauce and cooking wine.
- Cover and simmer for 1 1/4 hours or until meat is tender.
- Remove meat to a serving platter and keep warm.
- Combine 1/4 water and the remaining flour mixture.
- Stir into tomato mixture until thick and bubbly.
- Pass with meat.
- Serve meat and sauce with hot cooked noodles or rice.
- Crock pot directions:.
- Prepare swiss steak as above except cut meat to fit your crock pot.
- After browning meat, transfer to crock pot.
- Stir remaining flour into pan drippings in the skillet.
- Stir in the remaining ingredients and cook until thick and bubbly.
- Pour over meat in the crock pot.
- Cook on low for 8 to 10 hours.
- Serve with hot cooked noodles or rice.
- Oven directions:.
- Place meat in a baking dish.
- Cover with thickened drippings and veggies as above.
- Bake, uncovered, in a 350 degree oven for 1 hour and 20 minutes.
- Serve with hot noodles or rice.
SWISS STEAK

- Cut beef into 6 serving pieces. In small bowl, mix flour, mustard and salt. Sprinkle half of the flour mixture over 1 side of beef; pound in with meat mallet. Turn beef; pound in remaining flour mixture.
- In 10-inch skillet, heat oil over medium heat. Cook beef in oil about 15 minutes, turning once, until brown.
- Add tomatoes and garlic to skillet, breaking up tomatoes with a fork. Heat to boiling; reduce heat. Cover and simmer about 1 hour 15 minutes, spooning sauce occasionally over beef, until beef is tender.

SWISS STEAK
This is such an easy and tasty swiss steak and the gravy is very good over mashed potatoes or rice.

- 1. Cut steak into squares; flour, salt and pepper. Brown in a skillet with little oil. Mix the soup and tomatoes together and pour over the meat; add onion rings and bell pepper strips on top. Cook about an hour on very low or until steak is tender. Serve over mashed potatoes or rice.
- 2. This could be baked in the oven at 300 degrees for about 2 - 2/12 hours or in a crock pot. I baked this in the oven for about 2 1/2 hours.

- In medium bowl combine flour and salt mix well. Add beef and coat well.
- Coat a nonstick skillet with cooking spray and heat over medium heat. Add beef and cook until browned.

SWISS STEAK

- 1. Cut cubed steaks into large serving pieces. Mix together salt, pepper and garlic powder. Season steaks on both sides.
- 2. Dredge steaks through the flour. Shake off excess flour. Heat 1/3 cup cooking oil in large skillet.
- 3. Brown steak pieces on both sides in the oil. Remove to a clean platter. Turn heat to medium in the same skillet.
- 4. To the warm skillet, add minced garlic, onions and can of diced tomatoes. Mash the tomatoes, slighty, with a fork. Add the onion soup mix and water. Stir to combine. Add browned steak pieces along with any juices back to the skillet. Stir to coat the meat with tomato mixture. Cover and lower heat to low.
- 5. Simmer the steaks on low for 1 and 1/2 hours stirring frequently.
- 6. Season with more salt and pepper if desired. Serve with rice, mashed potatoes or noodles.
