Steps:
- Preheat the oven to 350°.
- The sauce-in a small bowl, mix together all the sauce ingredients; taste for seasoning and adjust.
- Place the chicken in a lightly sprayed or oiled 9 x 13 inch glass baking dish; sprinkle lightly with salt and pepper (optional).
- Spread the sauce on top of the chicken.
- Bake, uncovered, until the chicken is cooked through, about 35 minutes.
- Sprinkle with the cheese and bake until the cheese melts, about 5 minutes longer.

Chicken breasts are rolled around Dijon mustard, dill weed and Swiss cheese and then baked in a puff pastry for an extra-special entrée.

- Heat oven to 375ºF
- Mix mustard and dill; spread onto chicken. Top with cheese; roll up, starting at one short end of each.
- Roll each pastry sheet on lightly floured surface to 12-inch square; cut into 4 (6-inch) squares. Whisk egg white and water until blended; brush onto edges of squares. Top with chicken. Bring corners of each pastry square together over chicken; press together to seal. Place, seam-sides down, on baking sheet sprayed with cooking spray. Brush with remaining egg.
- Bake 30 min. or until pastry is lightly browned and chicken is done (165°F).

CHICKEN CORDON BLEU W/SWISS DIJON ALFREDO SAUCE
Lisa's slightly lightened-up version of chicken cordon bleu is fantastic! It's much easier to make too. Placing the Swiss cheese in the Alfredo sauce is a brilliant idea. Not only does it solve the oozing cheese problem, but it allows you to add as much of the sauce your heart desires on top of the chicken. The chicken itself is tender and juicy with a smoky flavor from the ham.

- In 3 separate shallow dishes, place the flour, salt, and pepper in one, egg in another, and bread crumbs in the last one. Set aside. Preheat over to 350. Spray a baking sheet with butter spray and set aside.
- With a sharp knife, slice chicken breasts horizontally without cutting all the way through the other side.
- Open up as you would a book.
- If they are very thick, gently pound them out between sheets of waxed paper or plastic wrap until 1/8 to 1/4 inch thick, being careful not to rip the meat. You can see that I pounded my pretty thin so they would cook faster. This helps keep the meat moist and tender.
- Slice each ham slice into strips and place on 1/2 of each chicken breast.
- Fold over the other half as though you are pressing the ham between the pages of a book.
- Carefully coat each piece lightly with the flour, holding it so the ham doesn't fall out.
- Dip in the egg, allowing excess to run off.
- Coat well with the seasoned bread crumbs and place on the prepared baking sheet. Spray tops well with additional butter spray.
- Cook 20 to 30 minutes, until done. This will depend on how thick your chicken breast is once you put the ham in it. Mine were pretty thin and took exactly 20 minutes in my oven...they were cooked through and yet still juicy and tender.
- During the last 10 minutes the chicken is baking, combine all sauce ingredients in a small sauce pan. Cook over medium heat, stirring often, until cheese is melted and the sauce is smooth.
- Once you take the chicken out of the oven, allow it to rest for 5 minutes so that the juices distribute throughout. Serve with the sauce. Enjoy!!!
HAM AND SWISS DIJON BRAID
This is incredibly yummy!!! It's a dijon flavored bread braided over layers of ham, swiss and dill pickle. It's a great party bread-beautiful and different.

Steps:
- Combine 3 cups flour, sugar and salt in a mixing bowl.
- In a small saucepan heat water, Dijon mustard, and butter to 120-130 degrees.
- Stir yeast into liquid.
- Let set 5-10 minutes until yeast is foamy.
- Add liquid to dry ingredients.
- Stir in remaining 1 cup flour to form a stiff yet pliable dough.
- Knead 6-8 minutes (I use my kitchenaid dough hook for about 4 minutes).
- Roll into a 12x14 inch rectangle on a greased baking sheet.
- Layer 1/2 lb of ham over the dough.
- Top with the cheese.
- Add the pickle.
- Arrange the remaining 1/2 lb of ham on top.
- Starting on a long side, cut 1 inch wide strips about 3 inches long toward the center (A kitchen shears or sharp knife works well).
- Repeat on the other long side.
- Starting at one end, fold strips at an angle across filling, alternating sides, tucking ends under next strip.
- Pinch ends to seal.
- Cover with a cloth and let rise for 15-20 minutes.
- Brush with the egg.
- Bake at 375 degrees for 30-35 minutes.
- Serve warm with Dijon mustard.

- In a medium sized skillet over medium heat add olive oil. Salt and pepper the chicken breasts and add to the pan. Cook on each side for about 3-4 minutes until browned and no longer pink and cooked to 165 degrees. Remove and set aside on a plate.
