SWISS CHEESE & SALSA TOASTED SANDWICH
I wanted a toasted cheese sandwich for lunch today, and not having anything to go with the cheese thought I'd try adding salsa. While hardly gourmet, it was quick and easy to make and very tasty. I used white bread as it crisps well, and recommend a fairly thin layer of salsa as too much could result in the sandwich being overly salty. Make sure the heat isn't too high so that the cheese has a chance to melt and the ingredients can heat through before the outside of the sandwich is cooked.

Steps:
- Heat skillet on stove top over low-medium heat.
- Butter two slices of bread - I used a spread - place a slice of cheese on each half, then spread both slices with a thin layer of salsa. Join halves to make a sandwich.
- Melt some butter in the skillet then place sandwich in and let it cook until crisp and browned, turning as necessary.

ROASTED TOMATO AND SWISS CHEESE SANDWICH
Super delicious, I was at the gym and really wanted tomatoes and cheese, so I roasted my own tomatoes and threw this together! It is even better if the bread you are using is homemade bread, I like it with the white bread recipe from the Betty Crocker cookbook.

Steps:
- Slice tomato fairly thin, between a quarter and half an inch. Place on parchment and sheet pan, drizzle with olive oil, sprinkle salt, pepper, oregano and basil and place under maxi broil in middle of the oven (same position that you would use to bake anything else).
- After about 5 minutes, flip tomato slices, drizzle more olive oil and sprinkle more pepper, oregano and basil. Bake about 5 more minutes.
- Toast the bread, spread on mayo, and put 2 or 3 slices of tomato on one slice and swiss cheese on top of tomato. Grind a little more pepper and place under broiler to melt cheese.
- Place other slice of bread on top and enjoy!

- Place the onion in a bowl, and set aside. In a blender, place tomato sauce, jalapeno peppers, serrano pepper, garlic, lime juice, salt, and pepper. Blend well. Place the cilantro into the blender, and pulse several times to chop the cilantro. Do not over blend. Pour the tomato sauce mixture into the bowl with the onion, stir well to combine, and refrigerate at least 1 hour to blend flavors before serving.

SWEET AND MILD COOKED TOMATO SALSA
When fresh tomatoes from my garden start ripening faster than I can eat them fresh, I make this salsa. I modified the recipe to match my taste for sweet salsa with just a bit of zip. I freeze peeled tomatoes so that I can have the garden-fresh taste in winter, too.

- Combine the tomatoes, onion, green chiles, vinegar, brown sugar, garlic powder, cumin, oregano, coriander, salt, and hot sauce in a Dutch oven or large pot over medium-low heat. Simmer, stirring occasionally, until the salsa reaches your preferred consistency, about 3 hours. Store in refrigerator until using.
