- In a heavy skillet over medium heat, crumble the sausage with a fork.
- Sauté the sausage until completely cooked.

- For the sauce. In a pan with straight sides on medium heat, add the olive oil and sausage. Crumble the sausage into bits, not boulders, and cook until browned, 6 to 8 minutes. Remove the sausage with a slotted spoon to a plate, leaving the fat in the pan. Add the mushrooms to the pan and cook until wilted and darkened, 6 to 8 minutes. Season with pepper and remove from the heat. Add the sausage back to the pan along with the pasta sauce and stir.
- For the pasta: Meanwhile, bring a large pot of water to a boil. Add the rigatoni to the boiling water and cook until very al dente. Drain and spread out on a cooling rack to prevent sticking. Let cool slightly.
- Preheat the oven to 375 degrees F.
- Add the rigatoni to a bowl and sprinkle with the Parmesan and parsley. Gently toss with your hands.
- Coat the inside bottom and sides of a springform pan with cooking spray. Begin lining the rigatoni on end (vertically) around the edge of the pan, creating a border. Pack the pasta pieces tightly, but not so tight that the holes in the rigatoni close. Toss the remaining rigatoni in the sauce, then pour into the center of the pan. Gently press the mixture to level it off.
- For the topping: Arrange the provolone slices in an overlapping spiral to cover the pasta mixture, then top with the mozzarella. Gently press everything down with your hands. - Position a rack in the middle of the oven and preheat to 375 degrees F. Lightly grease a 9-inch pie plate, including the lip, with butter.
- Gently roll each piece of biscuit dough out to about two times its original size. - Scatter the cheese over the biscuit crust, pressing the cheese over any holes that may have formed during baking. Pour the sausage custard over the cheese and bake until the custard is set, 18 to 20 minutes. Serve hot.

- Peel the potatoes and put in a large pan with water along with the sausages. Cook until the potatoes are tender enough to be mashed.
- Drain and mash the potatoes. Set aside. Chop the sausages and set aside.
- In a large pan, add the butter, ½ grated onion, mashed potatoes, and milk. Mix until it becomes a puree. Season with salt and pepper. Set aside.
- In a large pan, put the oil, chopped onion, green chilli and mix until the onion is transparent.
- Add the chopped sausage, tomatoes, and salt. Cook until the tomatoes are soft and become a sauce. Sprinkle in the parsley and green onions. Mix gently. Set aside.
- Preheat the oven to 200ºC (400ºF).

- Sprinkle the top with parmesan cheese and chopped parsley.
- Bake for 35 minutes or until the cheese is melted and the top layer is turning it is golden.

- Preheat the oven to 190C/fan 170C.
- Fill a saucepan with water and bring to the boil. Add the potatoes and cook for 22 minutes or until cooked through.
- Meanwhile, heat the olive oil in a non-stick frying pan then add the sliced onion. Fry until softened then add to a casserole dish.
- Re-use your non-stick frying pan to fry the bacon. You should not need to add any oil due to the non-stick coating. Once cooked, remove any liquid released during cooking then layer the bacon on top of the onions in the casserole dish.
- Re-use the non-stick frying pan once more to cook the sausages. Make sure they are cooked through before layering them on the top of the bacon in the casserole dish.
- Pour the chopped tomatoes on top of the sausages.
- Once the potatoes are cooked, remove them from the heat and drain. Then mash them with the butter/margarine and milk until there are no lumps.
- Put the mashed potato on the top of the onions, bacon, sausages and chopped tomatoes, using a fork to make a pattern in the top.
- Place in the oven, uncovered, for 30 minutes, until heated through and browned on top. Enjoy!

- Heat the oil in a frying pan and gently cook the sausages over a medium-high heat for 10-12 mins, turning them until browned on all sides. Transfer to a plate, then put the butter in the pan and heat until sizzling. Tip in the onions, stirring them into the butter, then sprinkle over the sugar and fry for 8-10 mins until the onions are golden. Scatter over the flour and stir to make a paste, then add the tomato purée. Cook for a minute, then add the vinegar, pour in the stock and bring to the boil. Turn down to a simmer. Tip in any juices from the sausages, then cut the sausages into thick slices and add to the pan. Simmer everything together for 5 mins until you have a glossy onion gravy. Tip the mixture into a baking dish.
- To make the mash, tip the potatoes into a pan of cold salted water and bring to the boil, then turn down and simmer for 10-12 mins or until just cooked (the tip of a knife should slide in easily). Drain and leave for a minute. Pour the milk into the pan and bring to a simmer, then tip in the drained potatoes and butter, and mash thoroughly. Season to taste.
- Top the sausages and gravy with the mash, starting from the edge of the dish and working your way into the middle. Use a fork to scrape lines in the topping and scatter over the cheese, if using. Can be assembled, covered and chilled for up to two days or frozen for three months. Defrost completely before cooking. Heat the oven to 200C/180C fan/gas 6. Bake the pie on a tray for 35-40 mins until the top has browned. Leave to cool for 5 mins before scooping straight from the baking dish at the table and serving with peas, if you like.
