Swiss Chard Orange Salad with Cumin Vinaigrette image

This super healthy, delicious Swiss Chard Orange Salad with Cumin Vinaigrette is a simple, 6-ingredient recipe you can enjoy year round based on seasonal produce.

1 bunch baby Swiss chard
2 medium oranges, peeled and chopped
¼ cup pumpkin seeds
2 tablespoons extra virgin olive oil
½ orange, juiced (about 2-3 tablespoons)
¼ teaspoon cumin
Salt and pepper (as desired, optional)

Steps:

  • Wash chard leaves, and dry. Chop them fairly fine and place in a large salad bowl. Add oranges and pumpkin seeds.
  • To make vinaigrette: Whisk together oil, juice, cumin, and salt and pepper (optional )in a small dish.
  • Toss dressing into salad, combining well.
  • Chill for 30 minutes to 1 hour to allow dressing to tenderize leaves. Toss again to distribute ingredients and serve.

Delicious Swiss chard and orange salad that is easy and fresh!

1 bunch rainbow swiss chard - chopped
1 orange segmented and juiced
1 shallot -
Sprinkle of fresh pepper
Sprinkle of salt
2 tablespoons olive oil
3 tablespoons white or red wine vinegar

Steps:

  • Chop swiss chard and add to a large bowl.
  • Segment the orange and then squeeze the remaining orange parts over the swiss chard to release any leftover juice over the swiss chard.
  • Mince a shallot and add to the bowl.
  • Sprinkle salad with black pepper, salt and drizzle with olive oil and vinegar and toss together well.

2 bunches Swiss chard (large stems removed), leaves cut into 1-inch strips
Zest from 1 orange, cut into wide strips, plus juice
Coarse salt and ground pepper

Steps:

  • In a large skillet, heat oil over medium-high. Add Swiss chard and orange zest. Cook, tossing frequently, until chard wilts, about 4 minutes. Season with coarse salt and ground pepper, then add juice of the orange; toss to coat.

Swiss chard and mixed greens topped with citrus fruit, avocado, red onion, and cashews and drizzled with a citrus vinaigrette. You can use any combination of citrus fruits, such as grapefruit, oranges, tangerines, or pomelos.

2 oranges
1 grapefruit
2 clementines
⅓ cup extra virgin olive oil
2 tablespoons white wine vinegar
1 teaspoon honey
½ teaspoon Dijon mustard
½ teaspoon salt
¼ teaspoon ground black pepper
1 (5 ounce) package mixed salad greens
3 cups Swiss chard, thinly sliced
½ cup very thinly sliced red onion
2 avocados - peeled, pitted, and diced
½ cup roasted and salted cashews, coarsely chopped

Steps:

  • Using a sharp knife, remove all of the peel and pith from the citrus fruit. To section each fruit, cut between the membrane and flesh of each fruit and remove the flesh. You should have 2 cups fruit. After sectioning, squeeze the leftover membranes over a bowl to reserve the juice.
  • Combine 3 tablespoon of reserved fruit juice, olive oil, vinegar, honey, mustard, salt, and pepper in a screw top jar. Close and shake vigorously to combine.
  • Arrange mixed greens, Swiss chard, orange, grapefruit, and clementine sections, red onion, avocado, and cashews on a large serving platter. Drizzle with dressing.
