SWISS CHARD, GREEN BEANS & MUSHROOMS - STEAMED
Delicious way to serve Swiss Chard, Can also use fresh spinach and red onion with the mushrooms and cheese.

Steps:
- Wash Swiss chard and clip tough ends, wash and cut tips off green beans but leave whole.
- In the meantime, clean and slice mushrooms; Genourously pray frypan with veggie spray and saute mushrooms until browned on both sides about 5 minutes.
- Place whole green beans on the bottom of a large steamer; place Swiss chard on top of green beans, sprinkle with salt and pepper.
- Add the sauteed mushrooms on top of the Swiss chard; turn veggies over in the steamer a couple of times to mix them. Bring water to boil; reduce heat to medium and steam for approximately 10 minutes.
- Place cheese slices on top of veggies in steamer, replace lid and steam a further 2 minutes of until cheese melts. Remove from steamer, cut in half and serve immediately.

GARLICKY SWISS CHARD
There's really no secret to making excellent sautéed greens: just good olive oil, salt, loads of garlic and a jolt of red pepper flakes. This method works with pretty much any green too - broccoli, broccoli rabe, kale, spinach, collards, brussels sprouts or green beans - so you've really no excuse not to get your daily dose of vegetables. Serve it as a side to any roasted or grilled meat, or over a mound of creamy polenta that's been crowned with a fried egg.

- Stack chard leaves on top of one another (you can make several piles) and slice them into 1/4-inch strips.
- Heat oil in a very large skillet (or use a soup pot). Add garlic and red pepper flakes and sauté for 30 seconds, until garlic is fragrant. Stir in the chard, coating it in oil. Cover pan and let cook for about 2 minutes, until chard is wilted. Uncover, stir and cook for 2 minutes longer. Season with salt.

- Heat the olive oil, 3 turns of the pan, in large skillet over medium-high heat. Coarsely chop mushrooms and add to the pan, toss for 2 to 3 minutes then add the greens to wilt. Season with salt and pepper. Dress greens with lemon juice then toss with butter as it melts to form a sauce. Drizzle a little honey over the greens and serve.

- Turn heat on pot and add oil. When hot, add onions and garlic and fry for a minute or two.
- Add tomatoes and fry for a minute or two.

- Remove stems from chard. Roughly chop leaves, and dice stems. Keep stems separate from the leaves.
- Heat the olive oil in large skillet over high heat. Add diced chard stems and onions, stirring occasionally for 5 minutes. Add minced garlic and cook for 30 seconds longer.
- Add the chard leaves and vegetable broth to the skillet, and continue to cook until the leaves are soft and tender for about 5 minutes.
