SOUTHERN SWEET CORNBREAD
An easy delicious southern sweet cornbread made with basic ingredients - it's the perfect comfort food side!

Steps:
- Combine the flour, baking powder, corn meal, salt, and sugar in a large mixing bowl.
- Add the eggs, then pour the milk.
- Next add the vegetable oil and the butter.
- Mix everything until it's well combined.
- Fold the ingredients until well combined.
- Lightly oil a 9x13, and pour the cornbread batter.
- Bake on 350 for 35-40 minutes.
- Serve and enjoy!
CLASSIC CORNBREAD
Matt and Amy Bell, owners of the restaurant South on Main, usually avoid cooking contests. But the cornbread festival was different. "It's more of a community project than a competition," Matt says. "And it's directly outside the restaurant." The pair won the traditional category with their classic cornbread, a recipe developed by Amy's grandmother Nellie Mae. "You don't dare mess with family recipes," Matt says. "And if you do, you better make sure they can't tell."

- Preheat the oven to 400 degrees F and brush a 9-by-13-inch baking dish with vegetable oil.
- Whisk the cornmeal, flour, sugar, baking powder and salt in a large bowl. In another bowl, whisk the egg, vegetable oil and buttermilk, then fold into the dry ingredients with a rubber spatula until just combined.
- Transfer the batter to the prepared baking dish and bake until a toothpick inserted into the center comes out clean, 10 to 12 minutes. Transfer to a rack and let cool 15 minutes before serving.

- Preheat oven to 350°F Grease 8-inch square baking pan.
- Combine flour, sugar, corn meal, baking powder and salt in medium bowl. Combine milk, eggs, oil and butter in small bowl and mix well. Add to flour mixture and stir just until blended.
- Pour into baking pan. Bake for 35 minutes or until wooden pick comes out clean.
- For corn muffins, spoon batter into muffin cups 2/3 full. Bake for 18-20 minutes or until wooden pick comes out clean. Cool for 5 minutes before removing from pans.
SWEET SOUTHERN CORNBREAD
Steps:
- Preheat the oven to 375 degrees F.
- Place two 8-cavity mini loaf pans in the oven to heat up.
- Meanwhile, in a large bowl, whisk together the cornmeal, cake flour, sugar and baking powder.
- In a medium bowl, whisk the buttermilk, oil, eggs and salt to a uniform color. Quickly but gently fold the liquid mixture into the dry mixture. It should be a loose batter, not a dough.
- Carefully remove the loaf pans from the oven and quickly spray with cooking spray.
- Divide the batter evenly among 12 cavities of the loaf pans and bake until the tops are golden brown and a toothpick inserted in the middle comes out clean, 28 to 30 minutes. Rotate the pans 180 degrees halfway through baking.
- Immediately turn the cornbread loaves out of the pans onto a cooling rack to cool. This will also ensure they build a crisp crust.

- Preheat the oven to 350 degrees F. Butter and lightly flour a 9-inch cake pan. Be sure to remove any excess flour from the pan.
- Whisk together the flour, cornmeal, sugar, baking powder, baking soda and salt in a large bowl.
- Whisk together 8 tablespoons of the butter with the buttermilk, eggs and vanilla in a small bowl until smooth.
- Pour the butter mixture into the cornmeal mixture and stir until thoroughly combined. Pour the batter into the prepared pan and bake until a cake tester comes out clean, about 30 minutes.

I feel it is one of the most sweet and moist cornbread recipes around, so if your looking for those qualities this is the right one for you!

Steps:
- Place 9" cast iron skillet in oven and preheat to 375°F.
- In a medium bowl, mix together the corn meal, flour, sugar, baking powder, and salt.
- In a small bowl, whisk together the butter and honey.
- Pour honey butter over corn meal mixture along with the eggs and milk.
- Whisk until combined.
- Once oven has preheated, remove cast iron skillet and add the tablespoon of oil.
- Spread oil on the bottom of the skillet and half way up the sides.
- Sprinkle the bottom with the tablespoon of corn meal.
- Pour batter into the pan and place in oven.
- Bake for 25-30 minutes, or until a toothpick comes out clean.
- Remove from oven and let sit for 1-2 minutes before flipping out onto a plate. Be careful not to burn yourself!
- Slice and serve with honey butter.
- Enjoy!
