SPICY SWEETCORN
Try this quick easy sweetcorn recipe the Pakistani way, really yummy :)

Steps:
- Drain sweetcorn and heat in saucepan
- Remove from heat, add a good nob of butter, squeeze of lemon juice and a sprinkling of red chilli powder
- You can use corn on the cob for this recipe, grill the corn, keep turning regularly to avoid burning, add butter, lemon and chilli :)))
- This is nice eaten on its own
SWEETCORN FRITTERS WITH CHILLI AND GINGER DIPPING SAUCE
The dipping sauce is fierce! Be careful start with a little and work up. If you have any left it can be kept in a jar in the fridge for up to 1 week. These also go well with bottles sweet chilli sauce.

Steps:
- Make the chilli and ginger paste by placing all ingredients in a food processor and puréeing until smooth. Rub through a sieve and set aside until needed.
- Sift together flour and baking powder and season if desired.
- In a separate bowl beat together the egg and milk and beat in the flour until smooth.
- Add the sweetcorn, cheese, coriander and onions and mix well. Leave to stand for 15 minutes (It should thicken).
- Heat the oil and use a large spoon to add batter to the pan, cook until golden on both sides and drain.
- Serve the fritters with salad leaves, lime wedges and the chilli sauce.

- Carefully peel back corn husks to within 1 in. of bottom; remove silk. Rewrap corn in husks and secure with kitchen string. Soak corn in cold water for 1 hour., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill corn, covered, over medium heat for 25-30 minutes or until tender, turning occasionally. Remove string before serving., Meanwhile, in a small saucepan, melt butter. Add the garlic, brown sugar, red pepper flakes and chili powder. Serve with grilled corn.

- Cook the bacon. And then the bacon fat left in the pan will be the oil you cook your corn fritters in.
- As you're cooking the bacon, thaw the corn by running under warm water for about 30 seconds in a colander over the sink. Let the corn sit and drain until ready to add to the other ingredients.

- Once the bacon is done, remove from the pan to drain on a paper-towel-lined plate. Leave behind in the pan all but about 2 tablespoons of bacon fat, and drain the rest into a cup for later use.
