SWEET AND SOUR SICILIAN TUNA



Sweet and Sour Sicilian Tuna image

My grandmother made this recipe every Christmas Eve as part of the Feast of the Seven Fishes. We still make it today and it is my all time favorite!

3 tablespoons olive oil
1 large onion, cut into chunks
4 tuna steaks
1 cup red wine vinegar
1 cup sugar

Steps:

  • Heat olive oil in a heavy-bottomed skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue to cook and stir until the onion is very tender and dark brown, 15 to 20 minutes more. Remove the onion from the skillet.
  • Place the tuna steaks in the same skillet over medium-high heat and cook until golden brown, about 2 minutes per side. Remove the tuna steaks to a serving tray; keep warm.
  • Stir the vinegar and sugar together in the same skillet until sugar is dissolved. Return the onions to the pan, and simmer until the liquid reduces and is slightly thickened, about 5 minutes. Return the tuna to the pan and cook for 3 to 5 minutes. Place the tuna on the warm serving tray and top with the onion and sweet and sour mixture.

Number Of Ingredients 8

3 Cans of Tuna -5 oz. I like this brand
3 Medium-Large Avocados
4 TBSP Balsamic Vinegar
3 TBSP Dijon Mustard
2 Organic Apples - I prefer Gala
1 Cup Chopped Grapes -I prefer green for this recipe
1 Cup Dried Cranberries - no added refined sugar, like this brand.
1/2 tsp Himalayan Pink Salt, or to taste

Steps:

  • Scoop out avocados, and place in a large mixing bowl. Smash until smooth.
  • Add in tuna, and mix together until no longer chunky.
  • Add in balsamic, dijon, and salt, and mix until well combined.
  • Dice apples and cut grapes in half, and combine in bowl.
  • Add in dried cranberries, and mix until well combined.
  • Serve immediately, and enjoy!

1 (8 ounce) can pineapple chunks
1/4 green bell pepper, cut into 2-inch strips
1 vegetable bouillon cube
1/2 cup water
1 tablespoon cornstarch
1 teaspoon light soy sauce
1 tablespoon vinegar
3 tablespoons granulated sugar
1 (6 1/2 ounce) can albacore tuna, drained
1 tablespoon unsalted butter
1 (3 ounce) can chow mein noodles

Steps:

  • Drain the can of pineapple, reserving the juice.
  • In a saucepan combine 1/3 cup of the pineapple juice [set aside the rest], bell pepper, pineapple chunks, bouillon cube & water.
  • Heat the mixture to boiling, then reduce heat & simmer 5 minutes.
  • Mix the cornstarch with the remaining pineapple juice, soy sauce, vinegar & sugar, then stir that mixture into the hot pineapple mixture.
  • Cook, stirring constantly, until the mixture is thickened & bubbling.
  • Add the tuna chunks & butter, carefully stirring. Heat through.
  • Heat the chow mein noodles, & spoon the tuna mixture over the noodles before serving.

4 small sweet potatoes (about 200g each)
185g can tuna in spring water, drained
½ red onion , finely sliced
1 small red chilli , deseeded and chopped
juice 1 lime
6 tbsp Greek yogurt
handful coriander leaves

Steps:

  • Scrub the sweet potatoes and prick all over with a fork. Place on a microwaveable plate and cook on High for 18-20 mins, or until tender. Split in half and place each one, cut-side up, on a serving plate.
  • Flake the drained tuna with a fork and divide between the sweet potatoes. Top with the red onion and chilli, then squeeze over the lime juice. Top with a dollop of yogurt and scatter over the coriander, to serve.
