GINGER CHICKEN SALAD SUPREME
This has long been my go-to recipe for Easter brunch, potluck lunches, bridal and baby showers, or really, anytime we want a delicious chicken salad. It can be made a day ahead. The unique combination of the fresh ginger and green grapes always draw raves. I serve mine with a basket of fresh croissants that my guests can then make into chicken salad sandwiches, if they choose. There are never any leftovers!

- Combine chicken, grapes, celery, pecans, and parsley in a bowl. Whisk mayonnaise, sour cream, ginger, and white pepper together in a separate bowl; gently stir into chicken mixture. Cover bowl with plastic wrap and refrigerate until chilled, 1 to 2 hours.

GINGER SWEET AND SOUR CHICKEN

- Microwave the lime in a small bowl and set aside until it is just cool enough to handle. In a small bowl, create a slurry by gradually whisking 2 tablespoons water into the cornstarch. Through the feed tube of a running blender add, 1 at a time, the vinegar, chile pepper, garlic, ginger, salt, black pepper, and sugar. Then squeeze the lime from the micro-waved lime through the feed tube into the mixture. Then, leaving the blender running, add the slurry to the sauce, and pour the olive oil in a slow thin stream.
- Heat the oil in the deep-fryer to 375 degrees F, or as directed by the manufacturer's instructions for similar foods.
- Season the flour with salt and pepper and dredge the chicken strips, allowing any excess flour to fall away. Deep-fry the chicken and drain on paper towels.
- Serve with sweet and sour sauce.
SWEET & TART GINGER CHICKEN SALAD (PF CHANG)
Found this on the PF Chang website. I'm hoping it's as tasty as the dishes I've tried at their restaurant. The agave nectar is a sweetener. Vegetable oil can be used if you don't have soy bean oil. The recipe doesn't say when to add the sesami oil; it might be part of the vinaigrette?

- Cut the chicken breast in half lengthwise and lightly rub with vegetable or soy bean oil. Season with salt and pepper and either grill or pan sear for about 4 minutes on each side. Remove and let stand while mixing salad.
- Take all cabbages, lettuce and vegetables and cut them into small julienned 2" matchsticks.
- Take the ginger, soy, lime juice, vinegar, Agave syrup and mayonnaise and mix together in a bowl. Place the vinaigrette mixture to the side.
- Cut the chicken against the grain (muscle) into thin slices mimicking the vegetables/lettuces. Place all ingredients into a bowl and mix 2 ½ ounces of the vinaigrette into the mixture until evenly dressed. Season with salt and pepper to taste.

SWEET & TART CREAMY FRUIT SALAD
The idea for this recipe actually came from the Waldorf salad; I replaced the mayo with light sour cream blended with some fruit juice and Splenda, and I replaced the walnuts (because I'm allergic to them) with toasted almond slivers. I played with adding different fruits and juices to the recipe, and finally wound up with this version, which my boyfriend promptly declared to be "the BEST fruit salad. Ever." We eat it frequently! I toast my own almond slivers and pecan pieces; I buy the nuts raw at the store and just spread them out on a cookie sheet in the oven to toast them. You can use walnuts in place of either (or both) of the almonds or pecans. Also, the Fuji apples can be interchanged with any of your favorite crunchy, sweet apples, if you prefer. (This is definitely a recipe that can be "played with" a bit and tailored to fit your tastes... I change it up from time to time, so that we don't get bored with it).

- In a small mixing bowl, whisk together the light sour cream, lime juice and Splenda until creamy and well-blended.
- Add the crushed pineapple and the mandarin orange slices to the sour cream mixture and wisk again; the orange slices will probably break up a bit while you wisk them, which is fine.
- Set the sour cream mixture in the refrigerator to chill.
- Core and slice the granny smith and fuji apples into bite-sized chunks and place them in a large bowl.
- Add the chilled sour cream dressing to the sliced apples and stir well, until all of the apple chunks are well-coated with dressing.
- Sprinkle 1 teaspoons to 1 tablespoons of each of the toasted almonds and pecans on top of each serving immediately before eating (you can stir the nuts into the salad if you want to; I sprinkle mine on top immediately before serving so they stay extra crunchy).
- This salad keeps well covered in the refrigerator for a few days; just remember to stir well right before each time you serve it.

- Combine the vinegar, oil, sugar, ginger, soy sauce, salt and pepper in a small bowl and whisk to combine. Pour 1/2 cup of the marinade into a large ziplock bag. Cover and refrigerate the remaining marinade.
- Cut each of the chicken breasts open width-wise, creating two thinner breast pieces from each breast. Place the chicken in the bag with the marinade and turn to coat. Place the bag in a larger bowl to prevent leaking, and refrigerate for 3 hours.
- Preheat the broiler. Line a baking sheet with foil and place the chicken on the foil; discard the remaining marinade in the bag. Place the chicken 4-6 inches under the broiler to cook, about 4-6 minutes per side, until cooked through (internal temperature is 165ºF.) Cut the chicken into strips.
- In a large bowl, combine the spinach, romaine, oranges, chow mein noodles, cabbage, carrots and green onions. Top with the chicken, cashews and sesame seeds. Add the remaining marinade and toss to coat. Serve immediately.
