SWEET AND SPICY APRICOT BBQ CHICKEN THIGHS

- For the apricot BBQ sauce: Heat 1 tablespoon canola oil in a medium saucepan over medium heat. Add the onions and cook until soft, 3 to 4 minutes. Add the chile and garlic; cook an additional 2 minutes. Stir in the apricot jam; cook until the jam melts, 3 to 4 minutes more. Pour in the orange juice and cider vinegar, bring to a simmer, and then add the ketchup, honey, Dijon and Worcestershire. Adjust the heat to medium-low and simmer, stirring often, until thickened, 15 minutes. Remove from the heat and let cool for 5 minutes.
- Transfer the sauce to a blender and puree until smooth. Add salt to taste. Remove 1 cup for basting the chicken; reserve the rest for serving.
- For the chicken thighs: Preheat the oven to 375 degrees F. In a small bowl, stir together the smoked paprika, 1 tablespoon salt and 1 teaspoon pepper.
- Place the chicken thighs on two foil-lined baking sheets. Lightly coat the thighs with canola oil and sprinkle liberally with the spice mixture on both sides.
- Bake until the chicken is cooked through, 35 minutes. Turn the oven to broil. Baste the chicken with BBQ sauce and broil until the sauce has caramelized and an instant-read thermometer inserted into the chicken reads 160 degrees F, about 2 minutes. Remove to a platter, let rest for 5 minutes
- Sprinkle the chicken with parsley, and serve with the reserved BBQ sauce.
SWEET & TANGY BBQ CHICKEN BREAST (OVEN OR GRILL!)
this is a super quick and easy barbecued chicken breast from the oven or grill!

- Butterfly chicken breasts and slice completely in half to make 6 pieces.
- Place chicken breasts in a zip lock back and cover with Italian dressing. Press all the air out and seal.
- Refrigerate chicken breasts for a minimum of 30 minutes or up to overnight.
- Line a pan with aluminum foil. Place a wire rack over the foil. Spray with nonstick cooking spray.
- Remove chicken from marinade and place on the rack. Bake at 350 for 20 minutes.
- Meanwhile, mix barbecue sauce and brown sugar, brush barbecue sauce onto top of chicken breasts, broil for 5 minutes or until sauce begins to caramelize. Flip chicken and repeat on the opposite side. (about 4-5 minutes per side.)
- NOTE: You can also do this on the grill. Place chicken breasts on grill over medium high heat and cook for 8 minutes per side. Brush with sauce halfway through on each side.

- For marinade, in a large bowl, combine wine, onions, lemon juice and garlic. Pour 2 cups marinade into a large shallow dish. Add chicken; turn to coat. Cover and refrigerate 4 hours to overnight. TANGY BARBECUE CHICKEN

- Simmer 1 cup ketchup, 1/2 cup cider vinegar, 3 tablespoons each molasses and brown sugar, 1 tablespoon each dried mustard and soy sauce, 2 teaspoons Worcestershire sauce, 1 cup water, and kosher salt and pepper to taste until thickened, about 30 minutes. Preheat a grill to medium-high on one side. Season 4 bone-in, skin-on chicken breast halves with salt and pepper. Grill over direct heat until golden and crisp on both sides, about 5 minutes. - Combine the balsamic vinegar, honey, brown sugar, soy sauce, rosemary sprigs, and garlic cloves in a large ziploc bag.
- Shake and squeeze the contents of the bag to dissolve the brown sugar and honey.
- Add the breasts to the bag and seal, squeezing out as much air as you can.
- Marinate in the refrigerator for 2 hours.
- Preheat the oven to 450*F. Line a rimmed baking sheet with aluminum foil.
- Remove the chicken from the bag, reserving the marinade, and arrange them on the prepared baking sheet.
- Bake until the skin is carmelized and very dark in spots, 30-35 minutes.
- Meanwhile, place the marinade in a small saucepan.
- Bring the marinade to a boil, then reduce the heat to simmer and cook over low heat until thick, about 15 minutes.
- Use a pastry brush to brush some of the cooked marinade on the cooked chicken.
- Place the cooked chicken on a serving platter.
- If using, sprinkle the sesame seeds and parsely over the chicken.

- Coat both sides of chicken breasts in Frank's Red Hot.
- Sprinkle both sides generously with garlic powder.
- Sprinkle both sides with black pepper.
- Let stand in fridge for at least 30 minutes.
- Spray grill with oil.
- Preheat on high for 10 minutes.
- Transfer chicken breasts to grill with tongs and cook for 7-10 minutes on each side until done.
- Baste with hot sauce while cooking for more flavour.
