NOT TOO SWEET SWEET POTATOES
I needed a good sweet potato recipe for Thanksgiving that satisfied the marshmallow topping brigade as well as those of us who didn't want something quite so sweet. So I played around with a variety of recipes and came up with this. It's definitely sweet, but not too sweet. And no marshmallow in sight!

Steps:
- Heat oven to 350°F.
- Peel sweet potatoes and chop into one inch cubes.
- Melt butter and honey together in the microwave or on the stovetop.
- Stir spices, salt and lemon juice into butter mixture.
- Place sweet potatoes in a casserole dish.
- Pour butter mixture over sweet potatoes and stir to coat well.
- Bake for about 1 hour, until sweet potatoes are soft. Stirring occasionally.
- Once sweet potatoes are done, sprinkle almonds over the top before serving.

SWEET SWEET POTATOES
This is a wonderful recipe that goes back years, the addition of orange juice seems to bring out the flavour --- to save time you can even cook the potatoes a day ahead, and this may easily be doubled or even tripled to serve a large dinner party --- this is so delicious! :)

Steps:
- Set oven to 425°F.
- Butter a medium-size baking dish.
- In a saucepan cook sweet potatoes in boiling water for about 8-10 minutes, or until just firm-tender; drain well and transfer to baking dish.
- Mix together brown sugar, cinnamon and salt in a small bowl or cup.
- Sprinkle the potatoes with the brown sugar mixture and toss gently to coat.
- Drizzle with orange juice.
- Dot with butter all over.
- Bake uncovered for 15 minutes.
- Remove from oven and sprinkle with marshmallows.
- Return to oven and bake for another 2 minutes longer, or until marshmallow are puffed and golden coloured.
- Delicious!

MASHED SWEET POTATOES

- Preheat the oven to 400 degrees F. Pierce the sweet potatoes 2 or 3 times with a fork. Bake in a roasting pan for 45 to 60 minutes, until tender. Cut the potatoes in half, lengthwise. Hold the sweet potatoes with a potholder or towel and scoop out the potato flesh into a food mill or ricer.
- In a medium saucepan, heat the butter, syrup, zest, and vinegar over medium heat. Remove from the heat and mash the sweet potatoes in the pan. Stir to combine evenly. Season to taste with salt and pepper. Serve immediately.
STEAMED SWEET POTATOES
Sweet potatoes are a nutritional powerhouse, chock full of vitamins A and C, fiber and potassium to name just a few. - Place a steamer basket or colander in a large pot. Add water until it reaches 1 inch below the bottom of the basket. Put the sweet potatoes in the steamer basket and bring the water to a boil. Once the water is boiling, cover the pot, reduce the heat to medium and allow the potatoes to steam until you can insert a paring knife without resistance, about 30 minutes. Using tongs, remove the potatoes from the steamer basket and let rest for 5 minutes. Split potatoes in half lengthwise, and serve as is or with preferred toppings if using.
SWEET AND SPICY SWEET POTATO BAKE
This is a must at your holiday dinner table, It has just the right balance of sweet and spicy --- cooking time will vary depending on the size you cut the sweet potatoes you will love these!

- In a resealable plastic bag toss the cubed sweet potatoes with melted butter or oil; add the rest of ingredients; toss well to coat.
- Transfer to a greased baking dish (large enough to hold the potatoes in one layer).
- Bake uncovered at 400 degrees for about 22-25 minutes, or until sweet potatoes are tender but not too soft (tossing with a wooden spoon or spatula about every 15-20 minutes, baking time will vary depending on the size you cut the potatoes).
- *NOTE* careful not to over bake as the potatoes will become mushy.

My husband and I love this recipe. They are very easy to make and make a delicious side for steak. Did you know....one baked sweet potato provides over 8,800 IU of vitamin A or about twice the recommended daily allowance, yet it contains only 141 calories. - Preheat an oven to 425 degrees F (220 degrees C).
- Place the sweet potato chunks into a large mixing bowl. Drizzle with the olive oil, then sprinkle the brown sugar, paprika, black pepper, onion powder, garlic powder, poultry seasoning, chili powder, and cayenne pepper overtop. Toss until the potatoes are evenly coated with the seasoning. Spread onto a baking sheet.
