1 cup canola oil
2 teaspoons salt
2 teaspoons white pepper
2 cans (15-1/4 ounces each) small peas, drained
3 cans (7 ounces each) white or shoepeg corn, drained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/4 ounces) lima beans, drained
1 can (14-1/2 ounces) cut green beans, drained
1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and halved
2 jars (4-1/2 ounces each) sliced mushrooms, drained
1 can (8 ounces) sliced water chestnuts, drained
2 cups thinly sliced celery
1 cup chopped onion
1 cup chopped sweet red pepper
1 cup chopped green pepper
1 jar (7 ounces) diced pimientos, drained

Steps:

  • For dressing, combine the sugar, vinegar, oil, salt and pepper in a large saucepan. Bring to a boil. Remove from the heat; cool. , In a large bowl, combine the remaining ingredients. Drizzle with dressing and toss to coat. Cover and chill for 8 hours. Serve with a slotted spoon.

1 medium red onion, chopped

Kosher salt and freshly ground pepper
Olive oil, for drizzling
1 cup bulgur wheat
1 cup chopped sour cherries
2/3 cup finely chopped fresh parsley
2/3 cup finely chopped toasted walnuts
1/2 cup finely chopped red onion
1/2 cup finely chopped fresh dill
1/4 cup extra-virgin olive oil
2 tablespoons lemon juice
2 cloves grated garlic
1/2 cup crumbled feta

Steps:

  • Add 2 cups water to a medium saucepot. Season with salt and drizzle in some olive oil, then stir in the bulgur. Bring a boil over high heat, then cover, lower to a simmer and cook until the grains are tender, about 1 hour. Allow bulgur to come to room temperature.
  • Combine the bulgur wheat with the cherries, parsley, walnuts, red onion and dill in a large bowl, reserving about 1 tablespoon of each herb for garnish. Gently mix to combine. Add the extra-virgin olive oil, lemon juice and grated garlic and season to taste. Transfer to a serving bowl and garnish with feta, reserved herbs and a drizzle of olive oil.

Wheat Sweet Salad image

In Montana this is quite a common fruit salad at potlucks. I used red durham wheat. You can use any raw wheat that has been washed. Go to a bulk foods place where they have barrels of spices and different foods and you can dip a scoop in and sack. We definitely do not call it "wheatberries" here but perhaps that is the name in the store.The best part is that it is easy, makes a lot and is a crowd pleaser. I guarantee the bowl will be wiped clean.

1 cup raw wheat, cleaned and washed
6 -7 cups water
8 ounces cream cheese, softened
2 (3 1/2 ounce) packages instant vanilla pudding
21 ounces crushed pineapple in juice
1 (14 ounce) container Cool Whip

Steps:

  • In large saucepan, add wheat and 6 cups of water. Cook about 3 hours on low heat. Add one more cup of water if necessary Do not let wheat burn. The wheat will puff up and be very soft. Stir once in a while. Watch the water.
  • Drain any remaining water in colandar. Rinse with cool water.
  • In mixing bowl, mix cream cheese, instant vanilla pudding and crushed pineapple and juice. Beat on low speed until mixed.
  • Add cool whip, and mix in low speed.
  • Add cooked rinsed wheat, and fold into cream cheese mixture.
  • Note: You can use Instant Pistashio Pudding or instant lemon pudding.
  • You can also freeze this salad. A long keeper dish for the refrigerator too.

1 1/2 cups hard wheat berries
3/4 cup chopped walnuts
2 stalks celery, finely chopped
1/2 cup tart dried cherries, chopped
1 scallion, white and green parts, chopped
1/2 cup finely chopped parsley leaves
3 tablespoons olive oil
2 tablespoons lemon juice
Salt and freshly ground black pepper

Steps:

  • In a large pot combine the wheat berries and enough water to come 2 inches over the wheat berries. Bring to a boil and cook uncovered for 1 hour, or until tender. Drain and let cool. Toast the walnuts in a medium dry skillet over medium-high heat until fragrant, 2 to 3 minutes.
  • In a large bowl, combine the wheat berries, walnuts, celery, dried cherries, scallions, parsley, olive oil and lemon juice. Season, to taste, with salt and pepper.

1 can green beans, rinsed and drained
1 can cut yellow wax beans, rinsed and drained
1 can kidney beans, rinsed and drained
1 can butter beans, rinsed and drained
1 large green bell pepper, diced
1 large red onion, sliced and separated into rings
1 (4-ounce) jar pimentos, diced
1/2 cup salad oil
2 cups thinly sliced celery
1 1/2 cups cider vinegar
2 cups sugar
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 can tomato soup, undiluted

Steps:

  • Place all the beans, green pepper, onion and pimentos in a large mixing bowl. Add the oil and celery. In a saucepan, combine the vinegar, sugar, salt, pepper, and tomato soup. Bring to a boil and pour over the vegetables. Toss the mixture lightly with 2 forks. Do this several times as the mixture cools. Cover the bowl and refrigerate at least 4 hours before serving. The salad will be better if kept chilled 24 hours before serving. Drain and reserve liquid before serving; it will keep for several days. The reserved liquid can be poured over the leftovers. Add more sugar, if desired.

  • Wrap sliced cucumbers in paper towels to absorb excess liquid and refrigerate.

1 (8 ounce) package cream cheese, softened
1 (15.25 ounce) can crushed pineapple in juice, drained
2 tablespoons lemon juice
1 (3.4 ounce) package instant vanilla pudding mix
1 (8 ounce) tub frozen whipped topping, thawed

Steps:

  • Soak wheat berries in a bowl of water for at least 5 hours or overnight. Drain and place in a slow cooker with enough water to cover by one inch. Cover, and cook on Low setting for 5 to 6 hours, until tender. Add more water if needed. When tender, drain, and rinse under cold water to chill.

1 cup water
2 tablespoons mustard seeds
1 (20 ounce) can diced beets, drained

1/2 cup dried cranberries
1/2 cup finely chopped walnuts
2 tablespoons vinegar

Steps:

  • Dissolve Jello in boiling water and add mustard seed.

Usually called German Potato Salad, but many sweet-sour recipes are of Ost Friesen origin, now part of Germany, but formerly part of The Netherlands. This one is a combination of several recipes.

4 lbs ore-ida frozen hash browns, diced, not shredded
24 slices pre-cooked smoked bacon
6 tablespoons lard
2 cups chopped celery
1 cup frozen chopped onion
1/2 cup flour
6 tablespoons sugar
2 tablespoons salt
2 teaspoons celery seeds
2 2/3 cups water
1 1/3 cups cider vinegar

Steps:

  • Place the frozen potatoes in a dutch oven and cover with water. Heat enough to break potatoes apart, turn off heat and let set a few minutes. Drain well and place in 6-quart roaster or crock pot.
  • Cut the bacon into 1-inch pieces. Warm in a small skillet to release flavor and crisp. Keep warm.
  • Combine the flour, sugar, salt and celery seed and set aside.
  • Combine the water and vinegar and set aside.
  • Melt lard in a deep 10-inch skillet (chicken fryer). Sauté the celery until it begins to turn golden. Add the onions and continue until the onions are translucent. Add the warmed bacon and any drippings that collected. Combine all well.
  • Sprinkle the flour mixture over the vegetables and bacon and combine well.
  • Add the water and vinegar a little at a time, stirring constantly, until all has been added. Bring the dressing to a boil, stirring constantly, then reduce heat and simmer for 2 minutes.
  • Pour hot dressing over potatoes and combine well. Cover container tightly with foil and refrigerate, overnight if possible. Before serving, heat to serving temperature 3-6 hours depending upon appliance used, stirring about once an hour.

2 tablespoons sweet plum sauce or 2 tablespoons Chinese duck sauce
