HOMEMADE FRANKFURTERS
Another recipe out of, "The Sausage Making Cookbook". This is a good way to impress your friends. Have a cook out,using your homemade hot dogs.

Steps:
- Combine all ingredients, mix well and stuff into sheep casings (pork casings will work too, but will end up a little fatter frank).
- Smoke for 2-3 hours at 115 deg or until a rich orange color is reached (you can freeze them at this point, until you want to boil them).
- Then cook in water heated to 160-170 until franks float.
- Cooking time depends on thickness of the hot dog.
- You can simply just grill them as well.
- Again, the yield depends on how long and thick your links are.

- Mix all ingredients except franks in large skillet. Simmer 2-3 minutes, stirring often. Add franks and simmer 10 minutes or until franks are hot and onions are soft, stirring occasionally.

HOT DOG FLOWERS
These are inspired by one of my favorite things ever to get at a Chinese bakery, hot dog buns! When I was growing up, the kind that I would get would simply be a puffy round bun with a hot dog in the center. But recently on Instagram, I've been seeing them shaped like these beautiful flowers and fell in love immediately! It's basically a bunch of pigs in blankets stuck together. And they are such cozy pigs because the dough is really soft and a little sweet. In a nod to my Chicago upbringing, there's some mustard in the dough, which adds a nice zing.

- For the dough: In the bowl of a stand mixer, add the bread flour, sugar, mustard powder, yeast and salt and whisk together. In a liquid measuring cup, add the water, yellow mustard and egg and whisk together. Add the wet ingredients and the coconut oil to the dry ingredients and stir to form a ball.
- Attach the dough hook to the mixer and knead for 7 to 10 minutes, scraping down the sides of the bowl and the hook once or twice. Form the dough into a ball and transfer to an oiled bowl. Cover with plastic wrap or a kitchen towel and let sit on the counter until the dough has puffed up by about half, about 1 hour. Turn the dough out onto a floured countertop and divide into 4 pieces (or 8, if using regular-sized hot dogs).
- For the flowers: Prepare a baking sheet with parchment paper. Flatten each piece of dough and roll it all the way around a hot dog. Cut each dough-wrapped hot dog crosswise into 6 pieces and arrange in a flower design on the baking sheet. Cover with plastic wrap or a kitchen towel and allow to proof in a warmish place for 30 minutes (they should be a little jiggly).
- Preheat the oven to 375 degrees F.
- Beat the remaining egg in a small bowl and brush each flower with the egg wash, then sprinkle with the mustard seeds. Bake for 25 to 30 minutes and eat warm with Chinese hot mustard.
SWEET AND SOUR HOT DOG BITES
I know, I know. This sounds like a silly recipe for someone who doesn't know anything about cooking or food. BUT I got this recipe from a friend. She was serving it at an open house and everyone LOVED them and wanted more. Its just too easy.

- 1. Mix together mustard and jelly. Heat gradually while stirring to mix completely.
- 2. Cook hot dogs in water. Slice hot dogs into 4-6 pieces each. Add hot dog pieces to sauce and cook on warm for 10-15 minutes. Serve hot as an appetizer.
SWEET AND SOUR HOT DOGS---SIMPLE
A lady used to bring this to a church covered dish supper. Every time it was gone by the first time people went through. All the kids loved it, especially my granddaughter. So, I got the recipe from her and was amazed how easy it was. Only three ingredients. You could use this for tiny meatballs too along with the hot dogs.

- In a saucepan, put the jelly and mustard on a low heat till it is melted and mixed well.
- Cook the hot dogs and if using regular size ones--slice into pieces and add to the mixture; if using mini hot dog cook a few minutes and use whole.

NYC-STYLE HOT DOGS WITH STREET-CART ONIONS

- First, make the onions. Heat the oil in a frying pan over a low-medium heat and cook the onions for 10-12 mins until golden and slightly charred in spots.
- Stir in the cinnamon, chilli powder, honey, mustard, ketchup, tomato purée, vinegar, Worcestershire sauce, 2-3 tbsp water and a pinch of salt. Simmer for 1-2 mins until the onions are saucy, adding a splash more water if they seem dry. Taste and add a little more chilli powder, mustard or a pinch of sugar, if you like. Keep the onions warm if you're serving straightaway or cool and chill. Will keep in an airtight container in the fridge for up to five days. Reheat over a low heat before serving, adding a splash of water to loosen as needed.
- Light a barbecue and wait until the coals are ashen, set a gas barbecue to medium or heat a griddle pan over a medium heat. Alternatively, bring a pan of water to a simmer. Cook the frankfurters for 15 mins on the barbecue or in a griddle pan until charred, or for 8 mins in a pan of simmering water. If using a barbecue, warm the buns over the coals, if you like. Spoon a little sauerkraut into each bun, top with a frankfurter and spoon over the onions. Drizzle over some extra mustard and ketchup.
