2 tablespoons vegetable oil
2 boneless chicken breasts, sliced into strips
Salt and pepper
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1 cup canned pineapple chunks, drained with 1/2 cup reserved juice
3 tablespoons light brown sugar
3 tablespoons rice wine vinegar
1/4 cup chicken broth
4 teaspoons cornstarch, mixed with 4 teaspoons water
Cooked rice, for serving

Steps:

  • In a large non-stick skillet, heat oil over medium-high heat. Season chicken strips with salt and pepper and add to pan. Brown chicken and remove to plate. Add red and green peppers and cook for 1 minute.
  • Stir in pineapple chunks, juice, sugar, vinegar and broth and bring to a simmer. Simmer until sauce begins to reduce. Stir in cornstarch mixture and bring liquid to a simmer. Stir in chicken strips and cook for 5 minutes. Serve over rice.

1 cup red wine vinegar
1/2 cup rice wine vinegar
1/4 cup soy sauce
1 cup pineapple juice
1 cup granulated sugar
2 jalapeno chiles, coarsely chopped
2-inch piece fresh ginger, peeled and chopped
1/2 red bell pepper, finely diced
1/2 yellow bell pepper, finely diced
Canola oil
1/4 pound steamed snow peas
2 tablespoons finely chopped fresh mint leaves
3 tablespoons finely chopped fresh cilantro leaves, plus more for garnish
Salt and freshly ground black pepper
4 boneless chicken breasts, 8-ounces each
3 tablespoons canola oil
Salt and pepper
Steamed brown rice

Steps:

  • Heat the grill to high. Place the vinegars, soy sauce, pineapple juice, sugar, jalapeno and ginger in a medium saucepan and cook over high heat until reduced by half, stirring occasionally. If the sauce becomes too thick, thin with a little bit of water.
  • Strain the sauce through a strainer into a bowl. Briefly saute the red and yellow pepper in canola oil and then stir in the sauce along with the snow peas, mint and cilantro and season with salt and pepper.
  • Brush the chicken on both sides with the oil and season with salt and pepper. Grill until golden brown on both sides and just cooked through, about 8 minutes, while also brushing with any remaining glaze. Place the rice on a large plate. Remove the chicken from the grill/ and immediately drizzle with the sauce.

1 pork fillet (about 500g), trimmed and cut into 3cm chunks
sunflower or vegetable oil, for deep-frying
cooked rice or noodles, to serve
1 tbsp light soy sauce
2 tbsp shoaxing rice wine or dry sherry
1 garlic clove, grated
thumb-sized piece ginger, grated
50g cornflour
½ tsp salt
1 tsp ground white pepper
2 tsp celery salt
2 tsp caster sugar
1 tbsp sunflower oil
2 garlic cloves, finely chopped
thumb-sized piece ginger, chopped
1 green or red pepper, roughly chopped
2 tbsp tomato ketchup
4 tbsp rice vinegar
1 tsp sesame oil
2 tbsp light soy sauce
1 tbsp soft brown sugar
300g can pineapple chunks
1 tbsp sesame seeds
100g rice flour
100g cornflour
1 tsp baking powder

Steps:

  • Mix the pork with the marinade ingredients and leave to sit for at least 15 mins, or chill for a few hours. In a separate bowl, mix all the coating ingredients. Drain any excess liquid off the pork and toss the pork in the seasoned coating. Can be done 1 hr ahead.
  • To make the sauce, heat the oil in a shallow saucepan and gently fry the garlic, ginger and peppers until just starting to soften. Now drop in all the rest of the ingredients except the sesame seeds. Bring everything to the boil and cook for a few mins until thickened, then take off the heat. To make the batter, whisk the flours and baking powder together with 200ml water to a smooth paste.
  • Heat the oil in a deep-fat fryer, large saucepan or a wok to 180C or until a drop of batter sizzles and browns in 20 secs. Dip the marinated pork in the batter mix (do it in two or three batches) and let any excess drip off. Fry the pork in batches for about 5-6 mins or until golden. Remove and drain on kitchen paper until all the batches are done. Make sure you bring the oil back to the correct temperature between each batch. Coat the crispy pork in the sauce, then sprinkle over the sesame seeds, coriander and serve with rice or noodles.

1 teaspoon salt
¼ teaspoon white sugar
1 teaspoon soy sauce
1 egg white
2 green onions, chopped
1 quart vegetable oil for frying
½ cup cornstarch

3 stalks celery, cut into 1/2 inch pieces
1 medium green bell pepper, cut into 1 inch pieces
1 medium onion, cut into wedges

1 cup water

¼ cup ketchup

Steps:

  • Place cubed pork in a medium bowl, and season with 1 teaspoon salt, 1/4 teaspoon sugar, and 1 teaspoon soy sauce. Mix in the egg white and green onions. Cover, and place in the refrigerator at least 1 hour.
  • Heat 1 quart oil to 365 degrees F (185 degrees C) in a large, heavy saucepan or deep fryer.
  • Coat the pork with 1/2 cup cornstarch, and fry in the heated oil about 10 minutes, until evenly browned. Drain on paper towels.
  • Heat 1 tablespoon oil in a wok over medium heat. Stir in the celery, green bell pepper, and onion, and cook until tender. Season with salt and sugar. Remove from heat, and set aside.
  • In a large saucepan, mix 1 cup water, 1/4 teaspoon salt, 3/4 cup sugar, apple cider vinegar, ketchup, and 1/2 teaspoon soy sauce. Bring to a boil, and stir in the cooked pork, celery mixture, and the pineapple chunks with juice. Return to boil, and mix in 2 tablespoons cornstarch and 1/4 cup water to thicken. Cook until well blended.

1 tablespoon cornstarch

This is one of my daughter's favorite meals. We use chicken, the original recipe called for pork shoulder. This freezes very well. For an even quicker dinner, precook and freeze the rice in a separate baggie. If making and serving on the same night. Allow 45 minutes for the meat to marinate.

1 lb boneless skinless chicken breast (or thighs)
1 tablespoon olive oil
1 garlic clove, minced
1 cup diced green pepper
1 cup diced onion
1/3 cup soy sauce (I use low sodium)
8 ounces pineapple chunks, reserve juice
2 tablespoons vinegar
2 tablespoons brown sugar
1 teaspoon grated gingerroot
1 tablespoon cornstarch
4 cups cooked rice

Steps:

  • Cut chicken into bite sized pieces. Place in a large zipper baggie.
  • Add garlic, reserved pineapple juice and ginger root. Seat bag and squish it around to coat the chicken with the marinade.
  • Place the bag in the fridge and allow chicken to marinate for 45 minutes. (this can be done in the morning).
  • While chicken is marinating, chop bell pepper and onion.
  • Heat oil in a large skillet or wok.
  • Add green pepper and onion and saute for 3-4 minutes.
  • Add chicken and marinade and cook and stir for about 10 minutes or until chicken is cooked through.
  • In a small bowl, mix together cornstarch, brown sugar, vinegar, and soy sauce. STir to make sure there are no lumps. Add this mixture to the skillet. Stir.
  • Add the pineapple chunks to the skillet.
  • Stir until the mixture has thickened slightly.
  • Serve over cooked rice.
  • To freeze: Allow to cool. Package in a rigid container or in a large freezer bag.
  • To serve: Thaw overnight in fridge and reheat on stovetop over medium low heat OR heat in microwave until bubbly.

1/3 cup brown sugar, packed
1/4 cup ketchup
1/4 cup water
1 tablespoon cornstarch

Steps:

  • Combine 2 tbs soy sauce, 1 tbs rice wine, and meat in a bowl. Stir to coat & let marinate for at least 10 minutes.
  • Mix in a small bowl, vinegar, brown sugar, ketchup, water, 1 tbs cornstarch, 2 tsp soy sauce, and chili garlic sauce. Set aside.
  • Remove meat from marinade. Dip meat in egg wash, drain excess, then dredge in cornstarch and shake off the excess.
  • In a wok or deep fryer, heat oil to 360 degrees. Fry meat a few pieces at a time to not drop temperature, turning occasionally until golden brown, about 3 minutes. Remove and drain on paper towel. Repeat process for remaining meat pieces.
  • Sautee onions and bell peppers until onions are translucent, add sauce, cook sauce over medium-high heat, stirring, until boils and thickens then stir in pineapples and meat. Reduce heat and simmer for 5 minutes.
  • Place meat on a bed of rice & top with sauce.

  • Make sure the meat has enough time to cook before removing it.
  • Drain the fried chicken (or pork) and set aside, or place a cover over them to keep them warm.
  • Sauce: Melt the margarine in a frying pan, and add the onion, green pepper and sliced carrots.
  • I often add other peppers or snow peas as well.
  • Once the veggies are cooked stir in the rest of the ingredients EXCEPT the pineapple.
  • Cook until it boils and add cornstarch if it is too runny.
  • Finally add the Pineapple for the last 5 min.

1 -1 1/2 lb boneless skinless chicken breasts or 1 -1 1/2 lb boneless pork chop
1 (14 ounce) can pineapple chunks in juice, drained
1 small onion
1 green pepper
1 bottle Kikkoman sweet and sour sauce
garlic powder
onion powder (optional)
ginger powder
cumin powder
sesame oil

Steps:

  • Dice chicken or pork into 1/2" to 3/4" cubes.
  • Cut onion into 1" squares.
  • After removing seeds, cut green pepper into 1" squares.
  • Heat wok over high heat on stove.
  • Add sesame oil to coat.
  • Brown chicken or pork with onions, 3 dashes garlic powder, 1-2 dashes onion powder, 1 dash ginger and 1 dash cumin.
  • When cooked through, remove from pan and set aside.
  • Add pineapple and green pepper to pan and stir-fry approximately 2 minutes.
  • Return chicken and onion mixture to pan.
  • Pour in the entire bottle of sweet and sour.
  • Stir to coat.
  • Stir-fry 2-3 minutes until heated through.
  • Serve with white steamed rice.
