2 tablespoons white sugar
2 tablespoons apple cider vinegar
½ cup extra-virgin olive oil
2 tablespoons soy sauce
2 teaspoons sesame oil
1 clove garlic, smashed
½ teaspoon red pepper flakes

Steps:

  • Stir sugar and apple cider vinegar together in a small saucepan; cook over medium-low heat until sugar is dissolved, scraping sides of the pan to include all sugar granules, 3 to 5 minutes; remove from heat and let cool 2 to 3 minutes.
  • Combine vinegar mixture, olive oil, soy sauce, sesame oil, garlic, and red pepper flakes in a food processor; blend until the garlic and red pepper flakes are tiny, 1 to 2 minutes. Strain through a fine-mesh sieve.

2 to 3 tablespoons rice vinegar
1 tablespoon soy sauce
2 teaspoons sugar (brown or granulated)
1 teaspoon sesame oil

Steps:

  • Gather the ingredients.
  • Put the sesame seeds in a frying pan and toast them over low heat. When 2 to 3 sesame seeds start popping, remove the pan from the heat.
  • Grind the toasted sesame seeds with a mortar and pestle, food processor, or clean coffee grinder until a fine powder forms. Transfer to a bowl.
  • Mix in the rice vinegar, soy sauce, sugar, and sesame oil.

½ cup yellow onion, chopped
1 ½ cups white sugar
2 teaspoons dry mustard powder
1 teaspoon kosher salt
2 teaspoons soy sauce
⅔ cup rice vinegar

  • Puree the onion in a blender until smooth. Strain through a fine mesh strainer. Reserve 3 tablespoons of onion juice; discard the remaining pulp.
  • Combine the sugar, mustard powder, and salt in the bowl of an electric mixer. Use the paddle attachment to mix the sugar until the spices are evenly blended. My Dad is very fond of a creamy sesame dressing found in Japanese restaurant near him and has asked me if I can come up with something close to it. I tasted it, tasted it, and tasted it and came to a conclusion that it's a commercial based salad dressing with raw eggs, very sharp vinegar taste reminiscent of kewpie mayonnaise taste and something else I could not pinpoint. That salad dressing is good, but when you taste it by itself, I realize there were lots of stablizers, preservatives, and chemical taste that I did not like. But still, I had to come up with something for Dad because he was paying $5 for a cup of this dressing and he was going through it quickly. This is my rendition and I think much tastier one that I am proud of. You can easily grind roasted sesame seeds in coffee grinder for 1 second or you can mortar and pestle. It should only be partially ground
