Steps:
- Set your oven to 400°F.
- Line a sheet pan with parchment paper (foil also works). Place 7 strips of bacon on the parchment on the left side of the pan, and add diced onions to the right side of the pan.
- Place in the oven and cook for about 15-20 minutes. (Make sure to watch your onions and stir as needed. If the bacon completes cooking first, remove it from pan with tongs and drain it on a paper towel while the onions finish up. The onions should be lightly brown to optimize sweetness.)
- Cook both until done, then drain them on a paper towel when complete.
- When cool enough to handle, tear the bacon into pieces. Set it aside.
- Bring a large pot of water to boil and salt as a rolling boil begins. Add the pasta when the water is boiling vigorously.
- Cook in accordance with package directions.
- Drain the pasta when al dente.
- In a metal saucepan, begin melting the butter over medium-low heat.
- After the butter has melted, add in the heavy cream. Allow the mixture to come together in a soft bubbling boil.
- Add in the cheeses. Stir until everything is melted and combined.
- Add in the pepper, garlic, and nutmeg. Keep it on medium-low heat.
- The sauce will thicken. Continue to cook until the pasta is complete.
- Pour the cream sauce over the cooked and drained pasta. Combine.
- Add in the onions and bacon. Stir.
- Taste and add salt as needed. Bacon is naturally salty, so the amount of salt you need is a personal choice. Reserving it for the end is best.
- Let the pasta rest for 5 minutes. Serve and enjoy!

- In a large pot, cook the bacon over medium heat until crispy.
- Add the shrimp, salt, and pepper and cook until the shrimp is pink and opaque. Remove the shrimp and bacon from the pot, leaving any fat from cooking the bacon behind.
- Add the onions, tomatoes, and garlic to the pot and cook until the garlic is starting to brown.
- Add the cream and bring to a boil.
- Once the cream is boiling, add the fettuccine. Return the shrimp and bacon to the pan, along with the Parmesan cheese and parsley. Stir until the cheese melts and the sauce coats the shrimp and pasta nicely.

ROASTED GARLIC ALFREDO SAUCE
I served this oh-so-garlicky and wonderful sauce over portabello ravioli with a salad, garlic bread and a lovely Pinot Gris. What a treat! Turned frozen prepared pasta into a simple, yet gourmet meal. Next time, I think I will add steamed broccoli to the pasta bowls before adding the sauce.

- Slice top off garlic head and wrap in foil. Bake at 350F for 30-45 minutes. Cool and squeeze garlic paste from cloves. Note: I always pour olive oil over the garlic head before baking/roasting.
- Heat cream in a skillet or saucepan.
- Whisk in parmesan cheese and garlic, until thick and smooth.
- Reduce heat, add salt (or thyme) and pepper to taste.

- Cook linguine until just barely tender, then drain, rinse, and set aside.
- Melt butter in a skillet over medium-low heat.
- Add cream cheese to the melted butter (this is to help thicken the sauce, if you omit it you'll have to spend more time simmering the sauce to thicken it) and stir until melted.
- Slowly stir in the heavy cream then add remaining ingredients while continuing to stir until well blended.
- The longer you stir and simmer, the thicker the sauce will become; the preference is yours.
- Toss sauce with the linguine, sprinkle parsley over the top and serve warm.

- Bring a large pot of water to a boil. Salt generously. Add the pasta and cook until al dente. Reserve a mug full (about 1 cup) of the pasta water then drain the pasta. Return the pasta to the pot.
- While the pasta is cooking, cut the bacon into bite-sized pieces. Cook in a large skillet over medium-high heat until crisp. Remove the bacon with a slotted spoon to a plate lined with paper towels to drain.
- Add the butter to the bacon grease in the skillet and cook until the butter is melted. Whisk in the flour and cook for a minute or two.
- Slowly whisk in the chicken broth and the cream. Cook for a few minutes, until the sauce has started to thicken up. Add in the Parmesan and stir until melted.
- Pour the Alfredo sauce and the reserved bacon over the pasta in the pot. Stir to coat. If needed, add some of the reserved pasta water to loosen up the sauce.
- Serve topped with chopped parsley, if desired.

- Add onion and garlic and cook for 4 minutes, stirring frequently, or until onion is tender.
