Ingredients

2 cups Seedless Watermelon
.25 cup Red Onion
1 Tbsp Red Wine Vinegar
1 Tbsp Basil ((thinly sliced))

Steps:

Dice watermelon into big chunks, approximately 1" square. Thinly slice the red onion lengthwise, end to end, not crosswise, and separate into individual strands. Combine both ingredients in mixing bowl.
Sprinkle in the red wine vinegar. Toss lightly.
Thinly slice, or ribbon, a few fresh leaves of basil. Sprinkle over the melon salad as garnish and serve.

Serve this side dish at cookouts, picnics or even backyard BBQs, for a refreshing and standout dish. Thinly sliced jalapeños are a great way to pack some extra heat into this dish. Our watermelon salad can be made 2 hours ahead of your event.

Ingredients

1 teaspoon grated lime zest
2 tablespoons fresh lime juice
1/4 teaspoon salt
5 cups 3/4-inch cubes seedless watermelon
1/2 cup diced red onion
1/2 cup diced English (seedless) cucumber
3 tablespoons thinly sliced fresh basil leaves
1/3 cup crumbled feta cheese

Steps:

In large serving bowl, mix lime zest, lime juice and salt with whisk until well blended. Add remaining ingredients except feta cheese. Gently toss to coat. Refrigerate about 30 minutes or until chilled.
Gently stir in feta cheese just before serving.
