These baked donuts are delicious and slightly healthier than their fried counterpart. I like to mimic my favorite from the donut shop, chocolate glaze with chopped peanuts, but the donut by itself is a great blank canvas! If you do not have whole wheat pastry flour on hand, just use all all-purpose flour.

1/2 cup all-purpose flour
1/2 cup whole wheat pastry flour
6 tablespoons sugar
1/4 teaspoon cinnamon
1/4 teaspoon salt
6 tablespoons buttermilk
1 egg
1/2 teaspoon vanilla
1 tablespoon melted butter
1/4 cup chocolate chips
1 tablespoon melted butter
1 teaspoon sugar
1 teaspoon hot water
chopped peanuts

Steps:

  • Preheat oven to 325 and lightly grease your donut pan.
  • Mix together dry ingredients. Add remaining ingredients and whisk to combine. Using a piping bag, pipe batter into prepared pan (you can also carefully use a spoon to fill pan).
  • Bake 8-11 minutes, or until donuts spring back when touched. Let cool for 5 minutes before removing to a wire rack. During this time, prepare your glaze by microwaving all four ingredients together until smooth.
  • Dip the tops of slightly cooled donuts into the glaze and top with chopped peanuts.

1 cup all-purpose flour
1/2 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon nutmeg
1 pinch cinnamon
1/2 cup soymilk
1/2 teaspoon apple cider vinegar
1/2 teaspoon pure vanilla extract
1 egg
4 tablespoons margarine (like Earth Balance)

Steps:

  • Preheat oven to 350º F.
  • In a large bowl, combine dry ingredients with a whisk to mix thoroughly. Combine wet ingredients in a small sauce pan over medium low heat and mix until earth balance is melted. This mixture should NOT get too hot, you should be able to stick your finger in the mixture. It should feel slightly warm.
  • Add wet to dry and mix until just combined. It should form a very soft dough.
  • Using a tablespoon measure, scoop out dough into your ungreased nonstick mini-donut pan. Smooth out the top of the dough with your fingers, this will make for more even, prettier donuts, but isn't crucial. The dough should sit just below the rim of the pan.
  • Bake for 12 minutes. They should not be browned on top, but a tester will come out clean. Invert hot pan over a cutting board or cooling rack to release donuts.

I find this technique much easier than the stovetop pan method. You'll get beautiful, perfectly frosted nuts that are roasted evenly, with no bitter burned spots.

Cooking spray
1 cup untoasted walnut halves
1 cup untoasted pecan halves
1 cup unsalted, dry roasted almonds
1 cup unsalted, dry roasted cashews
1 teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon ground cumin
¼ teaspoon cayenne pepper
½ cup white sugar
¼ cup water
1 tablespoon butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lightly coat with cooking spray.
  • Combine walnut halves, pecan halves, almonds, and cashews in a large bowl. Add salt, black pepper, cumin, and cayenne pepper; toss to coat.
  • Heat sugar, water, and butter in a small saucepan over medium heat until the butter is melted. Cook for 1 minute and remove from heat. Slowly pour butter mixture over the bowl of nuts and stir to coat.
  • Transfer nuts to the prepared baking sheet and spread into a single layer.
  • Bake nuts in the preheated oven for 10 minutes. Stir nuts until the warm syrup coats every nut. Spread into a single layer, return to the oven, and bake until nuts are sticky and roasted, about 6 minutes. Allow to cool before serving.

These are so delicious and there's no mess of frying! I found this recipe on the side of a biscuit can a little while ago and now use the recipe quite often.

1 (8 ounce) can country biscuits
3 tablespoons melted butter
1/2 cup sugar
1 tablespoon cinnamon

Steps:

  • Mix cinnamon and sugar together to make cinnamon/sugar mixture (you can adjust the measurements to your liking).
  • Cut a hole in the center of each biscuit, set center portions aside.
  • Dip biscuits into butter and then into the cinnamon/sugar mixture, place on non-greased baking sheet.
  • Dip holes into butter and into sugar/cinnamon mixture, place on non-greased baking sheet.
  • Bake at 375 degrees for 10-12 minutes or until donuts are golden brown.
