2 2/3 cups water
1/2 teaspoon salt
1/4 cup butter
1/4 cup powdered sugar
ground cinnamon (to taste)

Steps:

  • Heat rice, water, and salt to boiling, stirring once or twice.
  • Reduce heat. Cover and simmer 14 minutes. Remove from heat.
  • Fluff rice lightly with fork, then cover and let steam 5-10 minutes.
  • Stir in butter and powdered sugar.
  • Sprinkle with cinnamon and serve warm.

1 cup brown rice, uncooked
1/3 cup fresh cranberries, whole
2 medium apples, cored and chopped
2 cups apple juice
1 teaspoon cinnamon
2 tablespoons brown sugar, packed

Steps:

  • Place rice, cranberries, apples, juice, and cinnamon in rice cooker.
  • Turn on and wait until cooker shuts itself off, stirring occasionally (about 50 minutes).
  • Stir in brown sugar & serve warm.

This recipe was given to me, upon request! We have a fresh Mex grill place here that uses sweet rice. This recipe is very similar to this restaurants. Use it on your fresh tortilla salads, or in burritos, on the side, any way you have it, it is darn good (and sweet!) NOTE: The amount of sugar makes it very sweet. You can alter the amount of sugar if you would like, just remember it is supposed to be sweet! Also, let the sugar dissolve in the stock so you won't have sugar that has sunk to the bottom of the pan.

1/2-1 tablespoon vegetable oil
1/2 of a white onion, chopped (add more or less to your taste)
1/2 bunch fresh cilantro
1 1/3 cups white rice
3 cups chicken broth
1/4-1/2 cup white sugar

Steps:

  • Put a little oil in bottom of pan (maybe about 1/2-1 tablespoon).
  • Saute chopped onion until translucent. Add the chopped cilantro (no big stems) and saute a minute more.
  • Add the rice, cooking until it is light brown (being careful not to burn).
  • Combine the chicken broth and sugar, letting sugar dissolve. Then stir into rice until combined. Bring to a boil.
  • Cover and let cook on low, med-low until rice is done, about 25-30 minutes. Fluff with a fork before serving.

This is really tasty. I serve this dish with a plain Balkan (thick) yogurt and a fresh salad for a delicious meal. Modified from The Compleate Middle East Cookbook by Tess Mallos.

1 lemon, thinly pealed rind of (I grate the rind for ease)
water
1/2 cup white sugar
1/4 cup ghee (butter or oil)
1/4 cup blanched sliverd almonds
2 chicken breasts, quartered
sea salt
fresh ground black pepper
1 small cooking onion, sliced
1 1/4 cups white basmati rice
1/4 teaspoon saffron thread
1 tablespoon hot water
balkan yogurt (to serve)

Steps:

  • Preheat oven to 300F (yes that low).
  • Boil shredded peel in 1 cup water for 5 minutes, drain & rinse.
  • Desolve sugar in 1/2 cup water, add peel and boil gently for 5 minutes or until syrup is thick. Set aside.
  • Heat 1 tbs ghee or oil in a frying pan and fry almonds gently until golden (Watch carefully they brown quick when you turn your head.) Remove from pan once done.
  • Add remaining ghee or oil and brown chicken pieces on all sides, remove with a slotted spoon and season chicken with salt and pepper.
  • Add onion to the pan and fry gently until soft and slightly browned.
  • Add 1/2 cup water to the pan to lift browned juices, return chicken and simmer gently for 7 minutes.
  • Bring 5 cups of water to a boil in a large pot. Add washed rice and salt to taste.
  • Return to a boil and boil for 8 minutes then drain in a colander or sieve.
  • Turn rice into a bowl and pour syrup over rice. Toss rice and spread half into a greased casserole dish.
  • Arrange chicken pieces on top with the onion and half the cooking liquid.
  • Spread remaining rice on top, pour on remainder of chicken liquid evenly.
  • Cover casserole and cook in oven for 40 minutes.
  • Meanwhile steep pounded saffron threads in hot water. (An Arab coffee cup is the perfect size for this).
  • When palau is cooked remove top layer of rice and arrange around edge of warm serving platter. put chicken pieces aside and place bottom layer of rice in center of platter. Top with chicken pieces and garnish with reserved almonds. Pour saffron liquid over the rice boarder and serve immediately with yogurt.

My favorite way to make a simple bowl of rice a little more healthy and filling. If you don't have the same vegetables, just cut up and throw in whatever vegetables you have around...just make sure they're colorful.

1 cup rice (preferably Japanese, as it's sticky)
1/2 cup quartered cherry tomatoes
1/2 cup quartered carrot
1/2 cup diced green bell pepper
1 teaspoon rice vinegar
1 tablespoon sweet white miso
soy sauce (optional)

Steps:

  • Cook the rice in a rice cooker, or however you cook your rice.
  • While it's cooking, chop your vegetables.
  • Add a few drops of water to the miso paste to make it more mixable.
  • Combine the rice and vegetables and pour the miso mixture and the vinegar over it.
  • Mix well and serve!

I found this recipe in my Betty Crocker's International cookbook and thought it sounded pretty good. It is a chicken dish with rice, filled with spices, stewed tomatoes, capers, olives, ham, garlic, peas and more. I can't wait to try it myself. It could be a one dish meal or you could serve it with a salad. Hope you enjoy!

2 -3 lbs broiler-fryer chickens, cut up
2 teaspoons salt
1 teaspoon dried oregano
1/2 teaspoon ground coriander
1/4 teaspoon pepper
2 cups chicken broth
1 (16 ounce) can stewed tomatoes, blended
1 medium onion, chopped
1 garlic clove, crushed
2 cups uncooked rice (preferably Jasmine or Basmati)
10 ounces frozen green peas (1 package)
1 medium green pepper, chopped
1/2 cup fully cooked smoked ham, cubed
1/3 cup pitted small green olives
1 tablespoon capers
grated parmesan cheese

Steps:

  • Sear chicken pieces and diced onion in a deep 12" skillet or dutch oven. (You may have to use two pans if it doesn't fit in one; dividing the spices, broth, tomatoes etc between the two pans.).
  • Add broth, salt, oregano, coriander,blended tomatoes, onion, and garlic.
  • Heat to boiling; reduce heat.
  • Cover and simmer for 30 minutes.
  • Cook rice according to directions on bag, except add chicken broth where it calls for water.
  • While the rice is cooking add peas, green pepper, ham, olives, capers and 1 tablespoon of the caper liquid to chicken dish.
  • Cover and simmer the chicken dish until the rice is done.
  • Serve the chicken on top of the rice, pour the sauce over and sprinkle with parmesan.
