Super easy, healthy sweet potatoes are a delicious and versatile side dish that bakes to fluffy perfection in your oven! Serve them sweet or savory-it's up to you! However you decide to make them, they're certain to be amazing!

Ingredients

3 medium sweet potatoes ((5-6 ounces each, cleaned))
each, salt & pepper ((to taste))
butter ((optional, or use your favorite toppings))

Steps:

Preheat your oven to 425°F (218°C) and line your baking sheet or pan with aluminum foil if desired (for easy cleanup).
Place the cleaned sweet potatoes onto your prepared baking sheet and pierce the skin with a fork 5-6 times. Bake at 425°F (218°C) for 45-50 minutes or until the sweet potatoes are tender.
Remove from the oven and allow your baked sweet potatoes to cool slightly before cutting a slit down the top of the center of each potato to serve. Fluff the sweet potato, and serve with salt, pepper, and butter or your favorite toppings.

The original of this slightly tweaked recipe was found in the 1955 cookbook, German Cookery, & I'm posting it here to help fill out my cookbook of Deutsch recipes for the Zaar World Tour 6.

Ingredients

4 medium sweet potatoes
1/4 teaspoon salt
1/8 teaspoon pepper
4 tablespoons brown sugar
4 tablespoons unsalted butter, cold, diced
3 tablespoons whole wheat bread crumbs

Steps:

Wash & cut the sweet potatoes in 1/2-inch thick slices, then steam them for 8 minutes or until just fork tender.
Preheat the oven to 450 degrees F & butter an 8"x8" baking dish.
Layer the sweet potatoes in the baking dish, sprinkling each layer with a small amount of salt, pepper, brown sugar & butter (using just half of the butter for this purpose).
Cover the top layer with the bread crumbs & the rest of the butter & bake for 20 minutes or until well browned.

5 slices bacon, crisply cooked & crumbled
4 cups potatoes, cubed (3 potatoes)
1/2 lb Velveeta cheese
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons half-and-half cream
2 -4 green onions, sliced
3/4 cup Miracle Whip
1/4 cup sour cream (2 oz)
3/4 teaspoon salt (or to taste)
3/4 teaspoon black pepper (or to taste)
paprika, to taste

Steps:

Preheat oven to 350°F.
Melt cheese and butter together over low heat with cream; then add half of bacon and onions.
Add all Miracle Whip and sour cream.
Gently fold in potatoes and spoon into a greased casserole dish.
Top with remaining bacon, onions and spices (spices may be mixed in with the cheese if desired).
Bake for about 55 minutes.
