Here's what you need: mashed sweet potato, almond butter, molasses, vanilla extract, cinnamon, ground ginger, milk, salt

½ cup mashed sweet potato
1 tablespoon almond butter
1 tablespoon molasses
½ teaspoon vanilla extract
½ teaspoon cinnamon
½ teaspoon ground ginger
1 cup milk, of choice
1 pinch salt

Steps:

  • In a blender, combine the sweet potato, almond butter, molasses, vanilla, cinnamon, ginger, milk, and salt. Blend on high speed for 3 minutes, or until completely smooth.
  • Transfer the sweet potato mixture to a small saucepan and heat over medium-low heat until just warmed through. Do not boil.
  • Pour into a mug and serve immediately.
  • Enjoy!

Sweet Potato Smoothie image

My version of a recipe from Oxygen magazine. This tastes a lot like pumpkin pie! The cook time is the time to chill the potato.

Number Of Ingredients 4

1 small sweet potato
1 1/2 cups skim milk or 1 1/2 cups unflavored light soymilk
1 scoop vanilla whey protein powder
1 dash pumpkin pie spice

Steps:

  • The night before you want to make the smoothie, cook the sweet potato. I find the easiest way to do one potato is wash it well, prick it with a fork and microwave for 8-10 minutes, flipping over once. Let cool and store in the refrigerator over night.
  • When ready to make your smoothie, pull off the potato peel.
  • Blend all ingredients together until the mixture is smooth.
  • Enjoy!

Steps:

  • In a blender, combine the banana, oats, peanut butter, cocoa powder, shredded coconut, maple syrup, vanilla, and milk. Blend on high speed for 3 minutes, or until completely smooth.
  • Transfer the chocolate coconut mixture to a small saucepan and heat over medium-low heat until just warmed through. Do not boil.
  • Pour into a mug and serve immediately.
