2 cups all-purpose flour
2 cups cornmeal
1/2 cup sugar
7 teaspoons baking powder
2 teaspoons salt
4 large eggs, lightly beaten
3/4 cup whole milk
1/3 cup canola oil
2-2/3 cups mashed cooked sweet potatoes

Steps:

  • In a large bowl, combine the first five ingredients. In a small bowl, combine the eggs, milk, oil and sweet potatoes. Stir into dry ingredients just until moistened. Pour into a greased 13x9-in. baking pan. , Bake at 425° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cut into squares. Serve warm.

Cornbread is given an extra boost of fall flavors with roasted sweet potatoes. This Sweet Potato Cornbread is nutritious and tasty. Sweet potatoes can be roasted and mashed ahead of time, for ease of preparation.

2 medium-small sweet potatoes (yielding 1.5 cups mashed; roasting instructions below)
1 cup whole grain cornmeal
1/2 cup dry creamy wheat (i.e., Cream of Wheat)
1 cup all purpose flour
1/2 cup granulated sugar
1 TB baking powder
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp table salt
2 large eggs (room temp)
1/2 cup whole Greek yogurt (plain)
3/4 cup milk
2 TB olive oil
4-5 pats real butter

Steps:

  • Do ahead: Wrap sweet potato in heavy foil and roast 1.5 hours at 425F in oven or toaster oven. Once it can easily be pierced with fork, it's done. Carefully unwrap (it's hot!) and let cool enough to handle. Mash sweet potato. Measure out 1.5 cups for use in this recipe.
  • Spray a 10 inch cast iron skillet with oil and set in oven on lower middle rack. Preheat oven to 425F.
  • In a large bowl, whisk together the cornmeal, dry creamy wheat, flour, sugar, baking powder, cinnamon, nutmeg, and salt. In a separate bowl, combine mashed roasted sweet potato, eggs, yogurt, milk, and olive oil. whisk to combine well. Mixture should be smooth and thick.
  • Using a rubber spatula, gently fold sweet potato mixture with the cornmeal mixture just until no dry streaks of flour remain. Do not over-mix.
  • Place preheated/greased skillet on a heat-safe surface. Scrape batter into skillet, evening out the top into the edges. Bake 25-30 minutes or until top is puffy and golden brown. There should be cracks visible around edges of cornbread. Place cornbread on wire rack. Immediately place 4-5 pats of butter on top, letting butter melt into the cornbread. slice and serve with additional butter, if desired. Cornbread is best when served hot and fresh, while top is slightly crisp and butter has just melted into it!

  • Toss cranberries with 1 tablespoon all-purpose flour; set aside. 1-1/2 cups all-purpose flour
1 cup cornmeal

The cooking time includes the time to bake the sweet potatoes as well as the time to bake the cornbread. Leftover baked sweet potatoes would be fine for this. I think toasted, chopped pecans would be a nice addition to this.

It's quite good but very rich. As a rule, I will usually be serving this cornbread with a meal- thus saving the maple butter spread for special occasions. 4 tablespoons unsalted butter
2/3 cup yellow cornmeal
2/3 cup unbleached flour
1 1/2 tablespoons powdered sugar (okay to use granulated sugar)
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon freshly grated nutmeg (my addition)
1 cup buttermilk
1 large egg, beaten
1/2 cup dried cranberries (*I used orange flavored dried cranberries from Trader Joes)
1/2 cup maple syrup
scant 1/3 cup butter
1/2 teaspoon vanilla extract (I added this)

Steps:

  • *Note: you can mimic the flavor of Trader Joes' brand of orange flavored dried cranberries by stirring about 1/4 teaspoon of orange extract into the batter.
  • CORNBREAD: Preheat oven to 375 degrees (190 degree C).
  • In a small saucepan over medium low heat, melt [2 tablespoons] of butter and set aside. Cut up the remaining 2 tablespoons butter into an 8-inch cast iron skillet.
  • Place pan in oven until it is hot and the butter is melted and sizzling, about 1-2 minutes (Watch carefully!) Using oven mitts, rotate the pan as need to coat bottom evenly with melted butter. Remove from oven.
  • In large bowl, whisk together cornmeal, flour, sugar, baking soda, salt and nutmeg. Make a well in the center. Whisk together the buttermilk, melted butter and beaten egg and pour it into the cornmeal mixture.
  • Using a wooden spoon, mix the batter just until it comes together, okay to have some lumps. DO NOT overmix the batter.
  • Coarsely chop the cranberries and stir them into the batter. Tip: to make chopping the cranberries easier, wet the knife on both sides. Spread batter evenly into the hot pan.
  • Bake at 375 degrees until the top springs back when pressed gently in the center, about 20 to 25 minutes.
  • Let cool on wire rack for 5 minutes. Best served warm.
  • If desired, spread some of the maple butter onto each slice of cornbread.
  • MAPLE BUTTER: Using a heavy-bottomed saucepan over low heat, heat maple syrup until 235 degrees Fahrenheit (soft ball stage on a candy thermometer).
  • Stir in butter.
  • Pour mixture into a [deep] bowl (use a *deep* bowl to avoid splattering yourself with the hot liquid!), stir in the vanilla extract and beat with electric mixer until thick and creamy, about 4 minutes.
  • Keep stored in glass container in the refrigerator.

This is an easy and surprisingly delicious way to get a dramatic-looking sweet-potato dish on the table with little fuss. The heat of the jalapeños in the chutney, mixed with aromatic vegetables and the sweetness of the dried fruit, gives the cranberries depth. A dollop of sour cream goes on the halved sweet potato, followed by a generous spoonful of chutney. Make the chutney up to two weeks ahead and keep it in the refrigerator. It also freezes well. Assembly on Thanksgiving is an easy last-minute task.

1 fresh jalapeño, seeded and minced
1 teaspoon allspice
1/2 teaspoon powdered ginger
6 sweet potatoes

Steps:

  • Slowly melt the butter in a large saucepan over medium heat. Add red onion and red and green peppers. Sauté for 1 minute. Add vinegar, brown sugar, currants, raisins and cranberries. Cook over medium heat for 20 minutes. Add jalapeño, allspice and ginger. Cook, stirring occasionally, for another 10 minutes.
